Soaking Up the Slumber

I have goosebumps.

It’s been a little bit chilly here in Boston this week! But man, is it lovely. We have been blessed with sunshine and ~perfect~ temperatures.

Classes start again in just 4 days, so I have given myself guilt-free permission to soak up as much slumber and relaxation as I can before all hell breaks loose (← drama queen).

For example, on Monday I set my alarm for 8 am, but I closed my eyes for two seconds… and the next thing I know, it’s 10 am. LOL. It’s still been a productive week of getting some errands done, catching up with friends, praying, and (yes) even a little bit of studying to prepare for classes.

Here are some random thoughts and things from the noggin on this Friday:

1) What is your all-time favorite fudgy brownie recipe? I made some for my friends and myself last weekend using this recipe from I Am Baker, and they were delicious, but I’m open to recommendations!

2) The Super Premium French Vanilla ice cream from Trader Joe’s is RIDICULOUS. It is the most luxuriously creamy and dreamy ice cream I have ever purchased from a store.

3) Shoutout to my friend Evan for poaching eggs for avocado toast. We ran into each other at Mass on Sunday and decided to catch up over lunch. I offered to make us avocado toast instead of going out to eat (yo girl has been spending so much $$ recently), and we both appreciated the decision.

4) I had some random determination to make a vegetarian meal for this week’s dinners, so I made this chickpea and spinach curry. The full-fat coconut milk in it warms my heart and clogs my heart all at the same time, and I love it. This was also my first time using garam masala! It only took me TWENTY MINUTES to find it at the grocery store.

5) The BEST thing I made this week was peach blueberry cobbler — a summer necessity in my book! I doubled this recipe and obviously added blueberries.

Undoubtedly had to eat it a la mode (hot out of the oven, might I add). More of that dreamy vanilla ice cream from TJs.

I got to share it with many friends the day I made it, which made me very happy.

6) I ate out for three meals in a row, and although I felt a little “blah” from all the heavy food, it was so worth the company and conversation. The food was also fabulous.

Meal #1 was at Audubon with my dear friend Casey. We hadn’t caught up one-on-one in so long, so this was much needed.

We shared the polpette (meatballs that they made with venison and beef) with asiago, tomato sauce and the most delicious charred hunk o’ bread.

And then I had the roasted vegetable salad, which had delicious things like sweet potatoes, beets, fennel (did not realize how much I liked fennel ’til that night!), brussels sprouts, fennel, arugula, and pine nuts. Look how pretty this stack is!

It does’t look like much in this photo, but there were SO MANY vegetables in there. I had to take some home.

Meal #2 and #3 do not have photo documentation because I didn’t feel like whipping out my phone in the middle of conversation. Yesterday afternoon, Fr. Barnes (our Catholic Center chaplain) kindly treated me to a burger and a beer at the Sunset Grill and Tap as a belated birthday gift to me. Both the burger and the beer (I got the Great Divide “Roadie” Grapefruit Radler) were superb.

Late at night, my friend Elayne and her parents generously treated me to dinner at Barcelona Wine and Tapas, since I helped Elayne move earlier in the day. We shared four bomb tapas + seafood paella + crepes and ice cream. Oh my goodness.

Full of many good things indeed.

7) I am convinced that my current training goals include move-in and move-out. I work out so that I can move furniture and boxes up and down stairs efficiently and safely. #FunctionalFitness.

8) This burpee box jump workout is killer if you ever need something to get the heart rate up. I subbed 12 heavy over-the-shoulder slam ball throws for the wall balls. Your soleus might be extremely sore the next day, to the point of wanting to strangle a small animal when foam rolling them.

This is also a short and sweet 16- minute workout that will make your butt sore for days.

4 rounds, 30 seconds on, 10 seconds off:

  • goblet squats (35# KB)
  • dive bomber pushups
  • box jumps (25 in)
  • side jump lunges
  • pushup burpees
  • KB swings (35#)

9) I just enjoyed a very green smoothie, because my veggie intake yesterday included lettuce on my burger and a couple mushrooms smothered in goat cheese. And many many potatoes.

10) I hope my American/Canadian friends have wonderful Labor/Labour Day weekends! And good luck to all my fellow college students starting the new semester. If you’re anxious…

I Eat With Gusto

Friday

My train commute to Boston was smooth and swift, thanks be to God. Mom even packed me a bag full of pomegranate arils because she is sweeter than the pomegranate itself.

Ben was also kind enough to help me take my bags from the train station to my dorm since I’m a chronic over-packer and had about twice the bag/weight limit. I took him out to lunch afterwards at one of our favorite spots— Mei Mei’s!

We both ordered “The Double Awesome” scallion pancake sandwich (Mei Mei’s special), which has local greens pesto, Vermont white cheddar, and two oozy eggs. Sounds like heaven, tastes like heaven. Ben also shared a bite of his fried pork dumplings and sriracha rice with me. Mmmm.

That orange is not cheese. It’s yolky deliciousness that I got on my face, on my sweater, and in my hair. It’s all or nothing with this kind of food. Ben and I were sitting at the window barstools, so the world could see us grappling with our sandwiches and fighting to catch every drop of egg yolk.

Ben wants to try to make this at home, but he said, “I need to perfect the art of the egg. Like, how do you make it watery?”

Me: “You mean…runny?”

Ben: “…yeah.”

Silly dude.

So, uh, college life. I do love it, but I was living off of naked salad and yogurt for the first couple of days when the dining halls were still closed. I went to Whole Foods and picked up a small box of spring mix with herbs and five Fage Greek yogurt cups that were on sale.

Behold, dinner.

I ate the salad with just salt and pepper because I didn’t want to spend money on dressing for just two days. It tasted…green. But honestly, these are some of my favorite foods anyway, so I’m not complaining. Protein, greens, and peanut butter. Got my food groups covered.

Saturday

How a proper lady would eat this: one bowl at a time.

How I eat this: dip my spoon back and forth between bowls to get some yogurt and some oats in every bite and licking my spoon clean of all the nut butter.

I worked for most of Saturday and ate more of my greens for lunch, plus two Wasa crackers with Laughing Cow cheese, curry powder, and black pepper. You need to try that combination!

I quite enthusiastically ate handfuls of pomegranate arils immediately after work because crackers and leaves aren’t a substantial lunch for me and I was hungryyyy. Then I came back to my dorm and ate yogurt #2 of the day.

Afterwards, I braved the cold and jogged to the gym for an upper body workout. When I jogged back, expecting to eat dinner in the dining hall, I was greeted with disappointment. Dinner was only from 5-7 pm Saturday night instead of the usual 5-9 pm.

To Subway I went!

Subway is so good. I followed this up with the rest of my greens, snap pea crisps, and yogurt cup #3.

I was FaceTiming with mom when I was eating dinner, and she remarked at my large mouthfuls of salad. It’s true— I can’t eat salad in a pretty manner. You either eat one leaf at a time or you look like a brontosaurus. I prefer the latter so that I can actually taste the salad.

Don’t get me wrong, I like to take my time when I eat, and I can eat like I’m with the Queen of England if I wanted. But sometimes (most of the time) I just eat with gusto.

Sunday

The dining hall was open all day yesterday, so I definitely hit that up for breakfast!

I went to Mass at the Catholic center and had a hug fest with all my dear friends again. Ugh, so happy. Then a couple of my friends and I made our wallets cry when we went to buy/rent books for classes. At least you get a reusable bag when you spend over $400.

I ate a super late lunch of veggies and chicken, and little later, moves were done with my pal Albert! We did abs and ran two miles on the treadmill.

Dinner was weird because I had a late lunch, but I wanted to eat before the dining halls closed. That being said, it was tasty!

Egg-Celent Weekend

I had to.

I know you’re cringing at the pun “egg-celent,” but it’s quite an accurate adjective to describe my weekend. Lots of great company, delicious food (including EGGS of course), and lots of my weird antics per usual.

Friday

I successfully did Susie’s prom makeup in the morning! It took a few tries, but she looked gorgeous, if I do say so myself.

We had our senior picnic on Thursday, and next up was our fancy shmancy senior luncheon. We ate good food and signed each other’s “Class of 2014” pennants (those flag thingies), which was fun just because you felt like a celebrity signing your autograph 100 times. There was also a chocolate fountain, so that was a hit…for the people that actually really like chocolate.

I wasn’t feelin’ that chocolate though. Except for the brownie.

Since my principal wanted my commencement speech draft sent to him by Saturday, I spent most of my afternoon and evening (after a nice, long nap) finishing that sucker. I grooved so hard when I practiced it and found that it was not too long and not too short. Hallelujah!

My moves were little bursts of 20 air squats, 20 pushups, 20 sit-ups, and 10 burpees (5 rounds total for the 100 challenge) every time I needed a mental break from speech-writing.

Saturday

Woke up late, moves were a ton of handstands, cleaned, went to church, and babysat all night!

I did have a killer lunch that day:

Not even because it got on my laptop (we already know that’s a usual occurrence), but because I wasn’t able to dip my bread in the yolky goodness since it didn’t land on my plate.

Oh, and when I babysat, one of the boys asked me to read this book to him twice:

It’s a Spanish dialect called Catalan. It’s like Latin + French + Spanish all in one. I did my best, but let’s just say it’s a good thing they were not harsh critics. I feel like I may have accidentally cursed in a different language, considering the way I was trying to pronounce some of those words.

Father’s Day!

I woke up bright and early to make dad a special breakfast: DSC_8592

I sorta winged it with the frittata, using some online recipes for guidelines, but it was super tasty! I’ll probably post the recipe later.

I totally scraped off and ate all the crispy, flavorful bits from the bottom of the cast iron skillet after mom put the rest of the frittata away. She asked me: “Are your eating the charcoal?” Yes, ma, I’m eating charcoal.

Moves: Jess’ Lean Legs workout. I haven’t done this in forever, but I remembered how much I love it. Love to hate it, that is.

Apparently my quads were starving afterwards, because I housed a Hugh Jass lunch (even with a big breakfast and pre-workout snack).

This was only ⅔ of it. I finished the other ⅓ when my plate wasn’t so full. I think I satisfied my protein intake for the next two days with this meal.

Then I had a lovely catch-up session with my good friend, Anushka! We chatted over some vanilla ice cream 🙂

Dad decided that he wanted to go to Bareburger for dinner, so we went there for a late dinner and final Father’s Day celebration. I got a lighter meal since my lunch consisted of a whole farm.
