Less Salad, More Bacon

Now, now. I still love vegetables.

But bacon has made its way into my heart (figuratively, maybe literally too, it’s all okay). It has helped fuel life lately, and life has been a blast! A busy blast and not always an easy one, but c’est la vie.

I used to eat salads every single day. If you’ve followed me for a long time, you might remember that a typical meal might be a huge bowl of spinach with leftover meat/pasta/stew just thrown on top (Rachel thinks that’s so weird, BTW).

For example:

Green, leafy (edible, non-smokable) things are obviously great for you, and I highly recommend them. However, I don’t recommend stressing over eating a salad a day. There are other ways you can reach your veggie intake each day, such as…

…rainbow colored carrots (how fun! from Trader Joe’s!)…

…arugula in an avocado, egg, BACON, sriracha sandwich…

…OR with tomatoes (actually a fruit, but for all intents and purposes a veggie) in a homemade BACON cheeseburger…

…frozen brussels sprouts heated up in a pan with some spices…

with leftover Annie’s mac and cheese, some rice, and turkey meatloaf

…OR you could eat almost-dead arugula as a side salad, just to compliment your avocado, BACON, egg toast.

If you’re wondering, I get the uncured apple smoked bacon from Trader Joe’s!

Bacon has honestly helped me recognize that adding flavorful (often fatty/dense) foods to my meals makes me 10x more satisfied, so I’m less likely to think about food in the hour or two after I’m finished eating. I do love food, but it is so nice to not think about it all the time.

All this to say: Tune into what will truly satisfy your body at the moment. Is it really a salad? Or is it really something more dense like a bacon cheeseburger? It can be either one (I do still crave salads sometimes), but try to be honest with yourself. 🙂

…and I got to meet Nancy from Approaching Paleo (@approachingpaleo)! I’ve “known” her through social media and Fit University for so long now, but I finally got to hug this wonderful woman in person on Sunday.

Sunday evening involved the usual (yet always extraordinary) Mass and “ice cream Sunday” tradition! We went to Cold Stone.

We finished the night off with The Game of Things (NOT Game of Thrones), which never fails to make me double over in laughter.

I developed a pesky and painful blister under my second left toe that caused me to limp a lot earlier this week, so I bought some moleskin and got to work on taping that baby up.

It’s not a gigantic blister, but the location was awkward and I had to make the taping biomechanically sound.

Lastly, one of the best parts of my week was last night when Ben, Rachel and I went boxing at The Ring.

After LOVING boxing at Everybody Fights via ClassPass last week, I found a Groupon for The Ring last week and recruited friends to join me. We went to our free trial class last night!

It was a doooooozy but so. freaking. fun. I am seriously such a big fan of boxing (haven’t sparred in my life, though, so don’t let me get too far ahead of myself), and the HIIT workout these gyms do to train are right up my alley.

So now we get to box for free for a week and then get 5 extra classes with our Groupon on top of that. I’m SO STOKED. We even got our own wraps and gloves to keep!

Oh! One more thing that is long overdue. I was a guest on Emily’s podcast from Beauty in Christ a few weeks ago. We talked about intuitive exercise. Check out the podcast here if you’re interested! Burning, Sweating, Smiling

I genuinely wonder how many gallons of sweat have been excreted from my body in this past week.

Summer is in full force, which is 75% of the reason why it’s been so long since I’ve posted. The other 25% is school. Those numbers are definitely supposed to be switched, but alas, this weekend definitely involved more summer fun than schoolwork.

There has been a lot of burnin’, sweatin’, and smilin’ happening here!

Wednesday

Yes, I’m starting all the way from last Wednesday, but I promise these are just the highlights.

After a full day of class, Colby, my friend/classmate Elayne and I used our ClassPass trial on a TRAINx360 class at a place called Everybody Fights in Boston’s financial district.

The gym looks pretty trendy and is packed with all kinds of equipment. Our energetic instructor took us through several stations, including four different boxing stations, air dyne bike, battle ropes, KB burpees, jump squats, rowing, med ball high knees, and suspension trainer pikes. We did 6 rounds of 20 seconds work, 10 seconds active rest at each station, and we were beat by the end of it.

Oh, and the instructor ended it with a squat finisher that burned my quads.

I freaking LOVED it though! The atmosphere, the group effort, the workout format, the movements. Highly recommend this gym if you’re in the Boston area!

Thursday

The most exciting news from Thursday was seeing a turtle on the way to campus…

…and using another one of my ClassPass trials on Happy Hour Yoga at BurnFit. This was both a relaxing and challenging class with some groovy tunes playing in the background.

Friday

After classes, I headed to the gym and completed this workout:

5 rounds:

  • 500m row (2:18 pace)
  • 10 burpees

12 minute abs:

Then I met up with some friends at Le’s Vietnamese Restaurant for some bomb pho. Rachel and I shared a bowl of pork/shrimp/egg roll vermicelli and a large bowl of meatball pho. It was everything we needed.

Fun fact: it has always been a rainy day when I’ve gone to Le’s. Pho weather is a thing.

Afterwards, we headed to Ben’s place to watch John Mulaney comedy on Netflix while eating ice cream right out of the carton. Casey, Lauren and I were sharing four different pints at once, and it was bliss.

Casey bought the birthday cake flavor of Halo Top, which everyone raves about, and for good reason because it was so good!!

Saturday

The sun was out and burning bright. Perfect for kayaking (given that you have loads of sunscreen)!

My Boston friends + Colby (honorary Boston friend now 🙂 ) and I headed to Cambridge to rent some kayaks and explore the city by water for a couple hours. ‘Twas glorious.

Colby was my kayak buddy, but we made the mistake of putting her in the front. The stronger person is supposed to go in the back, so I think her mighty strength at the front of the boat (and my less mighty strength in the back) caused us to have some steering issues at the start, but we figured it out (sorta) by the end.

I didn’t have shorts to wear that day though, so I was wearing capris. This was the result.

After kayaking, we were more than ready for nourishment, so we took our kayaking receipts to Za for 10% off pizza! Lauren and I split a portobello/roasted red pepper/roasted garlic/goat cheese pizza + garlic scape/tomato/feta pizza.

Both were fantastic. The crust was perfectly doughy and crispy all at once.

For the rest of the day, I stayed home and got some schoolwork done. That time in the intense sun also wiped us all out.

Sunday

I woke up early-ish to meet Ben for a quick workout before BEACH DAY! We ran a little less than 2 miles in the very muggy heat and then did a mini circuit of tricep dips and split squats before we needed to down a million gallons of water.

Rachel kindly drove us to the beach because she’s an adult and has a car now. We were headed for one beach, but parking was full when we got there at around 11, so we went a few miles farther to Singing Beach, which worked out well!

The sun was hot but the water was NOT. I was literally kneeling in it so I could ice my injured knee. I couldn’t even keep my feet in the water for more than 30 seconds.

I was just trying to read some functional anatomy while not getting a weird textbook tan over my legs or anything.

We all packed our own sandwiches for lunch, and Rachel and I packed the same sandwich (except for the bread we used): pepperjack, turkey, arugula, bacon. I also had berry preserves and mustard on mine because I’m greedy for flavor.

Speaking of greedy, Lauren and I just listened to Ariana Grande’s song “Greedy” for the first time this weekend and are obsessed with it. That KEY CHANGE after the bridge!!

After we frolicked at the beach all afternoon, we headed back home for showers and a quick turnaround to get to Mass at 6pm. Following Mass, we wanted fooooood. More importantly, we wanted to continue our ice cream Sunday tradition by going to J.P. Licks, so we planned around that. Yelp told me that Chilacates was cheap and delicious Mexican food, so we chose that for dinner.

I got three tacos that hit the spot. So much flavor!

Monday

I had planned on hiking and going to brunch with the gang, but my knee was hurting from my short run with Ben on Sunday (the same pain I felt after the Spartan Race…I think it’s IT band syndrome), so I decided to stay home and rest. My moves and grooves of the day was Blogilates’ Extreme Abs 3, which never fails to annihilate my core.

Studying, laundry, a trip to the library, getting more quarters for laundry and cooking also needed to be done! Lunch intermission was an avocado, arugula, bacon, egg, sriracha sandwich. 😀

I made these spicy peanut chicken soba noodles for dinner, which I hadn’t made since Rachel’s birthday five months ago. These are THE BEST. I made so much of it, so I have leftovers for dayyyyyzzzz.

Tuesday – Fourth of July!

God bless America!!! This day was so wonderful.

I started off with some banana pudding for breakfast, followed by some studying and a 16 minute workout.

#BoozeAndGrooves was also in full swing. Ben brought some Jell-O shots, and I choked down this red one, which tasted exactly like cough syrup. The blue one was a little better. Lauren also made lovely prosecco grapes!

Alcohol doesn’t amaze me, but I appreciate fun and festive alcohol “snacks”(?).

After several hours of grazing, dancing, more grazing, and chatting, we cleaned up and headed out towards the river to get ready for the fireworks show. The fireworks weren’t until 10:30 pm, so we killed our time with some walking, playing “Contact” (← also a fun game!), and…

…smoking cigars (NOT cigarettes, Madre and Pop!). I learned that you do not inhale the smoke from cigars, but you’re supposed to swirl it in your mouth to taste it and then puff it out. “For conversations about philosophy.”

You can see that I was just utterly pleased with the experience. I probably wouldn’t do it again because it doesn’t taste great, I still don’t like smoke that close to my lungs, and I don’t love that I’m emitting smoke around others. BUT I’m glad I tried it once, and to my friends’ pleasure, I didn’t absolutely hate it.

Weather-wise, it was a perfect night to celebrate our nation.

Wednesday

Back to reality. I had class all day and then went back to Everybody Fights with Elayne for our last ClassPass trial. This time we did the BAGSxBODY class, which involved a lot more punching of heavy bags. It was A BLAST. I need to box more!

I Don’t Know How to Exist in a Pub, But I Do Know How to Pour a Guinness

This is the most beer that has ever surrounded me in my life.

You can tell I’m cut out for the Irish lifestyle.

This past week was fun! Since my long day of work last Monday, work has involved massaging a couple butts (honestly though, I’m loving the massage experience) and Christmas dinner at a teppanyaki place! It was a lot of fun going out with the staff members after hours. They even made me take home the bottle of white wine, which is currently sitting on my desk, since we’re not allowed to keep alcohol in the dorm kitchens. *shrugs*

‘Twas a super savory selection of meats and fried rice. It was just a lot of oil and soy sauce, but I still appreciated the Asian flavors. I hadn’t eaten Asian food since New York!

The music was very international as well. They played “La Bamba” and “Brown Eyed Girl”, which were random but also two of my favorites, so I can’t complain!

On Friday night, a few of my friends here invited me to join them for the Etihad Skyline tour at Croke Park, which was a tour of the Dublin skyline at dusk from the top of the biggest stadium in Ireland. It was such a unique experience!

The tour guide took us to the top of the stadium, which has a walkway all along its border, and then she pointed out all the landmarks around Dublin from there as the sun was setting.

We lucked out with relatively warm weather and no wind!

She gave us harnesses for one point on the tour when we were standing on a slightly precarious balcony that looked straight down to the stadium.

As long as you’re a competent walker, you don’t need the harness, but it adds an element of danger and fun 17 stories up, ya know?

The tour ended with a complimentary tea/coffee/hot chocolate, and we of course all chose the hot chocolate.

I hadn’t had hot chocolate in forever, and this Cadbury one was the bomb. The marshmallows were the best part.

Highly recommend the Etihad Skyline tour for something different in Dublin! We loved the view, the experience, our tour guide, and the hot chocolate 🙂

Saturday was pretty productive (WHOA!). I studied a bit, worked out, did some homework, did laundry, FaceTimed Madre, and went grocery shopping. In the evening, Megan and I did a mini mobile soup kitchen inspired by our friends back in Boston, who give out sandwiches, socks, blankets, and other goods to people who are homeless every. single. week. They are so full of love; we had to bring the love to Dublin too, even if on a smaller scale!

Then we headed to Mass at our favorite church and dinner. We had a pub called P.Mac’s in mind, but when we arrived, our plans slowly changed.

We got to P.Mac’s at around 7, and they were serving food until 7:45. Not a problem, except the atmosphere was definitely more bar than restaurant at that point. No one was eating food, and when we tried to find a table, people gave us weird looks. I asked a waitress if we could eat…then how we should go about eating…and where we should get a table. Basically, HELP US DO PUBS.

After probably only two minutes of walking around cluelessly, we decided that we weren’t cool enough for P.Mac’s after dark and left for a different restaurant. *sad trombone*

It’s okay though, we found American BBQ.

Pitt Bro’s BBQ was bustling (and had good reviews on Yelp, to be honest), so we waited for a table and dug into some satisfying pulled pork!

Megan got the pulled pork bun meal with mac and cheese, and I got the pulled pork meat meal with salad and mac and cheese.

The pulled pork was awesome, but the sides were just meh. The mac and cheese wasn’t cheesy enough, but nothing some pulled pork can’t fix up.

We ate prettttty quickly because we were hungry hippos by the time our food arrived, but we had room for the complimentary, swirl-your-own vanilla soft serve!!

CLASSIC. It was so good. What a way to increase my itch for America.

We actually went back to church after dinner, because they had a prayer service with Adoration, confessions, and music going on. Better yet, it was hosted by young people our age! There have not been many people under the age of 60 at Mass in Ireland. It was a beautiful and unexpected night.

On Sunday, we brunched per usual 🙂

My friend Cassandra invited a few of us to White Moose Cafe, which was so cute and HILARIOUS. They had a “breastfeeding corking fee” (because they allow breastfeeding there, and they are known for their satire).

My food was delicious too! I had their spinoff of huevos rancheros, which was two baked eggs in a spicy sauce with chorizo, peppers, and kidney beans, served with homemade tortilla crisps.

Megan and I also split an order of silver dollar pancakes with berry compote and mascarpone cream. They were denser pancakes, but I enjoyed them.

Afterwards, Cassandra and I headed to the famous Guinness Storehouse! I don’t even like Guinness, but it’s an Ireland staple, so why not?

The museum itself was amazing. It’s self-guided, but the layout is seamless as you ascend the museum’s seven stories.

I didn’t see what that had to do with anything, but Guinness has a giant fish riding a bike.

Of course, the tour includes Guinness itself. We first learned HOW to taste Guinness. I had been doing it wrong (the two times I ever sipped Guinness).

At the end, we learned how to pour the perfect pint of Guinness and left as certified pourers. BOOM. Someone sign me up to be a bartender.

Lastly, we drank our perfectly-poured pints up at the Gravity Bar, which overlooks all of Dublin.

Like I said, I don’t love Guinness, but this Guinness was a lot better than the previous ones I’ve tasted. Something to do with the freshness (and my pouring skills), I’m sure! I could still only drink 1/4 of my pint. It’s a lot.

I’m glad I went though, because if there’s anything I learned in Ireland, it’s how to pour a Guinness. And that hops are plants.

Two Museums, Two Desserts, Two Blistered Feet

I did something this weekend other than “oh ya know, just layin’ low…” !!!

Not that there’s anything wrong with laying low (after all, I love kicking up my feet after work these days). But it’s nice to exit the abode and live a little, especially when the weather is as gorgeous as it was this weekend!

Friday

There’s nothing really to share about Friday except that I worked, ate my favorite dinner of the week, and went to bed at 9.

Also, BEN CAME HOME FROM SPAIN! He completed El Camino de Santiago, which is historically a Christian walking pilgrimage. There are many routes, but Ben did a super long one that totaled 890 km (553 miles) within 32 days. Casual.

He actually came home at 2 AM Saturday morning, but I snuck into his room later in the morning to say hi to him before I left for NYC.

Saturday

Since I went to bed so darn early, I woke up at around 6 AM for some sunrise moves and grooves!

  • 10 alternating side burpees (this one actually hurt my shoulder a bit because the pushup becomes kinda awkward, so I would not recommend this variation)

First of all, I saw an extraordinary number of dads with their kids on the train/in the city that day, and it made my heart explode.

Secondly, Park Ave looks so clean and luxurious, but it honestly just smells like manure. #overrated

First stop of the day was the Metropolitan Museum of Art. Can you believe I’ve lived in NY for 11 years, and this was my first time going there?

I guess if you don’t live in NY, you don’t really see the big deal. But this is one of those “must see” attractions in the city.

Our waiter was Australian, which really added to the experience. Arman, I could not stop thinking about you.
We made it our mission to find both ice cream and Levain Bakery for dessert, so we took the scenic route and walked around the Central Park reservoir. It was the absolute perfect day to do it! Hot, but not unbearable, and bluuuuuue skies.

We didn’t know where to get ice cream, but we happened upon Amorino Gelato, which is famous for making roses out of their gelato! That stuff is expensive, but it is undeniably pretty and delicious.

Christine got fruity flavors + I got pistachio, black cherry, and a cookie butter flavor!
That cone was tiny and that gelato was melting wicked fast. You would think I was a magician, that’s how quickly I made it disappear.
We continued walking and found the legendary Levain Bakery. I had been hearing about their incredible chocolate chip cookies since I moved to New York, basically. This was THE DAY.
But first, a short wait on a line that spanned half the block. Expected.

You have no idea how long I had been waiting to take that money shot. Ladies and gents, this was one of the best things that my taste buds have ever encountered. I’m not even a big fan of chocolate.
Warm.
Crispy on the outside.
Slightly under-baked and gooey on the inside.

Christine and I split the mega cookie, and we had a few bites of the scone, which was fantastic as well. Not too sweet at all, but BUTTERY. The bag smelled like buttered popcorn. Mmmmm.
Afterwards, we walked back around the reservoir to where we started, and continued with some more girl talk until Christine had to leave. Next museum of the day was Cooper Hewitt Museum of Design with one of my high school dance company mates, Susie!

This is probably my favorite museum of all time. It’s so interactive, and the vibe is an intersection between classical architecture and modern technology.

They give you this high tech pen that acts as a memory stick. The pen has a “+” sign on the back that synchronizes to the “+” sign on each description panel on the exhibits. When you go home, you go onto their website and enter your unique code that they gave you, and you can see pictures of all the exhibits you saved via the pen. MAGICAL.

This immersion room is your childhood dream. You basically design your own wallpaper with the pen, and watch it come to life in front of your eyes.

We worked up a good appetite playing around in the museum. Susie chose an excellent Greek restaurant called Korali for dinner.

Ben picked me up at the train station, and I was all excited to tell him that I walked 11 miles that day (according to the Apple Health app), but then I remembered that he had been walking an average of 20 miles per day for the past month. Overachiever.
I still gave myself a foot massage before bed.
Sunday
I got up a little past 7 to get ready for Mass and say goodbye (already!) to Ben and Madre. Not for long though. Pop and I will meet them in Florida soon for our big family vacation next week!

I also had leftover roasted broccoli while cooking this. Cravings, man.
I watched some gymnastics, read some blogs, and napped before getting up and eating again. Sundays, man.

Then I started this blog post and FaceTimed with my beautiful friend, Briana, from college. Followed by some killer moves and grooves in the basement (which I have deemed to be my “pain cave”).

We picked up some groceries afterwards, and now I’m finishing typing this while watching sports on TV (← yay for Olympic season coming up!). ‘Twas a fabulous weekend filled with good food, great conversation, and even better people.

Nothing Like A Little Friendly Competition

Everything huuuuurts.

This weekend was packed with good and fun things (at the expense of sleep and my safety at times), which explains why I’m posting this today instead of yesterday. What’s been happenin’!?

Friday

‘Twas a pretty standard day— class, bible study, gym (two rounds of this workout— another one of my faves @Jo), work, “trying” to do homework in my dorm on a Friday night.

Saturday

Are you ever up in the middle of the night and tired enough that you can’t read a book but “on” enough that your brain can’t shut up? That was me this day.

I must keep telling myself that I am indeed thankful for functioning kidneys.

Saturday was a big day because some folks at the Catholic Center (myself included) participated in a fun, athletic competition called the “St. Sebastian Cup”. My friend Lauren sent me a snapchat of herself that morning making a protein shake with the caption: “Are you scared?”

I had overnight oats, so no, I was not scared.

The competition consisted of three games of Ultimate Frisbee…

My team didn’t score a single point in all three games… but we had HEART. Unfortunately, heart doesn’t get you points.

But then there was this banana relay race. We all had to jump across a field and back with a banana between our knees, then run with the banana between partners without using our hands, and finally eat the banana.

EXPERT. But only good enough for second place.

Next came the painful part. We played two games of capture the flag, and I may or may not have been plowed over by one of my teammates when we were both sprinting to tag the same person. It all happened in slow motion, and before I knew it, we were both eating dirt and my right hip was talkin’ to me.

But as any elite athlete would, we carried on with the competition.

Lastly, we had tug o’ war with a thin, slippery nylon strap. Safe? Not at all. Blood was shed. Maybe it helps that St. Sebastian is a martyr? (Too dark?)

Anyway, my team got fourth (aka last), and Rachel’s team got first.

It was a mighty fun time though, and we all went to the dining hall to feast on good food, including some bomb bread pudding.

At night, I attended a Women’s Retreat about being uniquely made. It was a lovely, heartwarming way to end a hard day of “friendly” competition (things got pretty spicy at some points!).

The lovely ladies running the retreat made us vegan sweet potato chili! I un-veganized it with cheese and sour cream 🙂

I did some reading for class back at home afterwards, and I kept falling asleep. Rachel kept waking me up and motivating me to finish my homework like a good friend. But I wanted to sleep.

Sunday

I think it’s safe to say that everyone who participated in the St. Sebastian Cup woke up moaning in pain on Sunday morning. Convo with my girl, Lauren:

The pain was even worse two days later.

But Sunday was a beautiful day for productivity, Mass, and National Siblings Day!

And then there was Monday, which was a solid day all around. We had stretch and massage day in dance class, so that was GREAT.
