Remember Those Life Lessons You Learned When You Were 5 Years Old?

…Well we still out here learning ’em!

My heart is so happy to be picking up the pen again typing as I always do, except this time on my blog and not on my class notes! I honestly am smiling as I type this. How have the first three months of 2019 been for you? We’re already almost 25% of the way through the year; HOW ABOUT THAT!?

MOLDIV-001

I am currently eating a freshly fried clam cake (like a crab cake except made with clam meat) with one hand as I type this, so you know ya girl is home eating mom’s delicious home-cooked food. Boston University is thankfully on spring break right now, so I am taking advantage of the extra time to sleep, spend time with the family, and eat something other than overnight oats in the morning (as much as I love my oats).

I’ve been limiting my social media time as well for Lent, which has allowed a lot of extra time to think, reflect, and pray in that scary, mindful silence. This semester has been filled with many good lessons, as every semester is, but I feel like God has particularly brought me back to some timeless lessons that are likely on every elementary school poster in the nation.

Lessons such as…

Sleep is good for you.

OHHHHH, WHO KNEW!? I used to naively think, “What’s 7 hours vs. 6 hours of sleep? I still function just fine either way.”

Answer: The difference between getting 100% of my work done vs. getting 75% of my work done. The difference between remembering what I studied vs. not remembering what I studied. The difference between having the energy to be a kind and compassionate person vs. brushing past anyone who is in my way because I just want to get done what I need to get done. The difference between needing tea (I’ve been on that black/green tea train for the purpose of caffeine lately. Haven’t made it to coffee yet, but the drive for caffeine has commenced) vs. feeling spritely in my natural state.

I’m sure you get the point, because you likely have discovered the power of sleep early on in your life.

Think before you speak.

One of my greatest weaknesses is being impulsive when I say things. I’m not an impulsively angry person, but sometimes I say things out loud before thinking just to smooth over an awkward moment, to protect myself from contempt, or to avoid conflict. I do not desire to do these things, but the problem is… I end up doing them anyway because I don’t always shut up and THINK before I speak. I hate discomfort, and saying any words, even thoughtlessly, can help remediate that discomfort for a time. But we all know that can bite ya in the butt real hard, kids.

Silence and discomfort have been good for me in this respect. Not always having an answer has proven to be better than me opening my big mouth.

Love your neighbor as yourself.

Yeah, yeah, yeah, this is a lifelong lesson that everyone needs hearing all the time. This one, however, hits me on a more personal and sensitive level currently, because I have been slowly but surely realizing that I have let down several people in my life who I love very much. I’ve been that gal who has taken advantage of others’ kindness, of the good things others provide for me, and of the time and care that others share with me so that I can be at peace. And those people keep giving to me and loving me, which is what makes it all the more painful.

Without going into the gory details (I say that as a colloquialism; there has been no actual gore involved), I have reflected that I need to be less selfish and more focused on how others feel. So it’s time for less talking, more listening, less “can you,” and more “how about you.”

As for the moves and grooves — they’ve been happening almost daily still, thankfully! These past few days have been rough because I’ve been eating a lot of junk food whilst spending time with friends and family, but c’est la vie, ya know? Some days when I’m in school, I only have time to do 100 burpees for time in my apartment; other days I get to do long strength workouts; other days I feel like running outside and up a b r u t a l hill near my home. And many days, I just walk, and that’s my workout for the day. I am grateful for the ability, knowledge, and time to move. Makes me happy.

And YOU make me happy for being here! Thanks for sticking with me and reading along. I hope you all have a wonderful Wednesday.

So tell me:

What are some basic life lessons you are still learning today?

What is the best thing you’ve eaten in the past week? I think the winner for me is the massive burger (wiiiiith bacon, cheese, guacamole, BBQ sauce, and coleslaw….) from Mr. Bartley’s Burger Cottage in Cambridge 😀

Tea or coffee?

Hole-y Weekend

You know there are donuts and bagels involved in this post.

But first, can we talk about how it is absolutely frigid outside? Two weeks ago, the northeast was blessed with gorgeous weather, and now there’s this.

IMG_7485

#springbreak

And the temperature makes you hate everything when you’re outside.

But thank God for warm sunshine, warm clothes, warm radiators, and warm hearts.

FullSizeRender

thanks for the pic, Fiona!

There’s supposed to a blizzard tomorrow, and this is the one time I am praying there is NOT a snow day, because I have a huge lab practical exam for gross anatomy that I would like to get over with ASAP. Please and thank you. The world revolves around me.

Before leaving home in New York on Friday morning, I made French toast for Madre, Brother Sam, and myself. It was some of the best French toast I’ve ever made! I think the keys were:

  • drying out the bread on a cooling rack overnight
  • adding more milk to the egg mixture (allows the inside of the toast to be more fluffy!)
  • sprinkling cinnamon over the bread after soaking it in the egg mixture, rather than adding cinnamon to the egg mixture (the latter causes clumps of cinnamon to form on the French toast)
  • using medium heat for the skillet
  • using a healthy dose of real butter for the skillet

IMG_7483

Also, real maple syrup!

Now that I’m back in the apartment, my food photo effort has decreased significantly, but the food has still been tasty.

IMG_7496

smoked trout deviled eggs that my boss asked me to make from her South Beach cookbook, and dang that egg mixture (that I tasted for #qualitycontrol) was delicious

On Saturday night (after a 1.5-hour nap at 5pm + this Fitness Blender workout) I cooked one of the best meals in my apartment this year. I bought this Korean BBQ marinade from Thrive Market and used it to marinate chicken thighs (soooo much more flavorful and moist than chicken breast—just do it) for a few hours before grilling them.

IMG_7499

and a substantial swirl of Sriracha post-photo 🙂

YUM.

Besides cooking and working, the rest of my weekend has involved lots of studying for that lab practical. Since I took a 1.5-hour nap on Saturday night, I ended up going to bed at 2am, which was actually 3am thanks to DST. Haha.

Sunday involved a lot of fun shenanigans though! First was my attempt at Crossfit Open Workout 17.1.

Screen Shot 2017-03-13 at 10.25.30 AM

[source]

The movements and equipment are accessible to me, so I thought I’d just go for it, but I definitely had to scale it. I used a 25-lb. dumbbell instead of a 35, and my gym only had an 18-in. or 24-in. box, so I used the 18-in.

And I still DIED. I had 7 burpee box jump-overs left by the 20 minute time cap. Womp womp. It was a “fun” workout though! Perhaps I will try it again later.

After I was annihilated, I showered and went to lab to study for a bit before meeting with Fiona, Rachel, and Austin for food bucket listing! On our list for the afternoon was Bagelsaurus for a sea salt bagel and Union Square Donuts for the PB&J donut (I gave up pb for Lent, but since it was Sunday, Rachel and I agreed that it would okay for me to have at least a bite of the donut).

Situation: Both places closed at 3pm, we were getting an Uber at around 2pm, and the walk between the two places was 28 minutes. Rachel and I thought we should divide and conquer, but Austin (the marathon runner) and Fiona (the army gal) convinced us that all of us could book it and make it to both places (because one of our rules for food bucket listing is that we go with each other to the actual store and buy the food together). Friends motivating friends for love of food.

I’m glad they pushed us, because we made it!

IMG_8417IMG_7507

Sadly, Union Square Donuts did not have the PB&J donut that day, but we decided to still cross it off the bucket list. Instead, we ordered six donuts to split between the four of us (omg so much donut).

IMG_7506

(left to right) top row: toasted coconut + maple bacon // middle row: Vietnamese coffee + orange cardamom poppy seed // bottom row: sea salted bourbon caramel + raspberry basil

Let’s talk about donuts. These were delicious. But since donuts aren’t my dessert of choice (I feel like it’s difficult to get really good flavor into a donut), none of them blew me away. The raspberry basil was probably my favorite though, because the basil packed a surprising punch. We were all super excited for the sea salted bourbon caramel, but it was kinda disappointing. Too much bourbon, not enough caramel. Like I said though, these were all delicious still! Good quality donuts for sure.

We bought the donuts first but ate them after our bagel sandwiches at Bagelsaurus.

IMG_7505

I got the “Eggspañola” on a sea salt bagel, which was an over medium egg, pimento aioli, feta cheese, parsley gremolata, and I added avocado.

IMG_7511

This was also fantastic! I loved the flavors of the pimento aioli and parsley gremolata + the saltiness of the feta + creaminess of the avocado + richness of the egg. The bagel was really chewy though, so with every bite, everything slid out of the sandwich. ‘Twas a blissfully messy situation.

(I still liked my NY bagel from last week better. I’ve had one NY bagel and now I know everything about bagels.)

Eating bagels and donuts in one afternoon… You could call it a “hole-y” Sunday (creds to all my friends for coming up with great donut/bagel puns).

We did also go to Mass at night, making it a truly holy Sunday 🙂

Lastly, we rang in the new week with my friend Lauren’s 21st!!

IMG_7533IMG_7535

Woohoo!! Happy birthday, Lauren, my dear ♥︎

Hope you all have a warm and productive Monday!

So tell me:

How do you feel about donuts?

Two fun things you did this weekend!

What is the best thing you’ve cooked recently?

Have you ever done a Crossfit Open workout?

29 Questions

Look at this pretty salad that I made for my brother and Pop!

DSC_3061

spinach, cherry tomatoes, pears, avocado, homemade honey dijon vinaigrette

I don’t even make salads this pretty for myself. I just throw a leftover chicken drumstick on a pile of spinach and call it a day.

DSC_3056

I’m an expert at making pretty avocado egg toast now though

Other colorful eats from yesterday included caprese salad (a classic fave) and fresh mango with Greek yogurt and sunflower seeds.

DSC_3059

yes, all those were mine

DSC_3060

Plus a million other snacks and eats because yesterday was one of those “bottomless pit” kinda days. I also napped for a long time in the afternoon after a couple hours of gross anatomy studying. My body is taking all this rest and running with it (oxymoronic sentence?).

Madre and I also went to a free yoga class yesterday morning! A woman in our neighborhood is offering free classes once a week since she’s practicing for yoga teacher training. It was a great 55-minute ashtanga/vinyasa class! Madre was my paparazzi apparently, because I swear I didn’t ask her to take these photos for me. But alas, they exist.

IMG_6944IMG_6947

felt as uncomfortable as it looks because my right hip flexor was SO tight yesterday

IMG_6949

I also got my heart rate up after yoga with the 100 burpee challenge! Here’s a video of it because a) I’m home, so I have few better things to do with my life; b) I appreciate when other people show themselves dying (not literally) during a workout, because it’s very #human.

(NOT that you have to die during every workout. Au contraire. Rest is so important! I take an average of two rest days + two walking/yoga days per week. Going “all out” every day doesn’t work for me, mentally or physically.)

And now for some lightheartedness around these parts! I feel like my posts have been pretty serious recently. I came across this “29 Questions” blog survey on Tina’s blog yesterday and thought it would be fun to do here!

1. Who are you named after? I think I’m named after a TV character that my mom really liked. I was almost named Stephanie though.

2. Last time you cried? Sunday when I was talking to my dad about faith and relationships. Just young adult things.

3. Do you like your handwriting? Yes. It’s gotten messier as I’ve gotten older and less type A about neatness, but I can deal with it.DSC_3063

4. What is your favorite lunch meat? Roast beef!

IMG_9044

ohhh Cutty’s roast beef 1000 ♥︎

5. Do you still have your tonsils? Yep. This is the most random question ever.

6. Would you bungee jump? I would if I was with other friends/family who would do it with me.

7. What is your favorite kind of cereal? Peanut butter Puffins!

8. Do you untie your shoes when you take them off? Only when I have to.

9. Do you think you’re strong? Yes.

10. Favorite ice cream? Cookies ‘n’ cream. (Or the carrot cake ice cream from Salt & Straw if we’re getting specific.)

Processed with Moldiv

it had carrot cake CHUNKS in it

11. What is the first thing you notice about a person? I’m not sure, but Tina said a person’s smile, so I’m going to agree with that.

12. Football or baseball? Is it un-American if I abstain from this question?

13. What color pants are you wearing? Gray.

14. Last thing you ate? Some Indian snack mix that my mom put on the coffee table.

15. What are you listening to? “I Got” by Young the Giant.

16. If you were a crayon, what color would you be? Yellow. (Haha, I wasn’t even thinking about my Asian-ness at first, but hey.)

17. Favorite smell? Freshly baked pumpkin bread or cookies.

18. Who was the last person you spoke to on the phone? My aunt and cousins from California.

19. Married? Nope.

20. Hair color? Black/super dark brown. I’m not picky about what you call it.

21. Eye color? Black. These are most definitely black holes. It’s so hard to see my pupils!

22. Favorite food to eat? Guess.

23. Scary movies or happy endings? Happy endings all the way. I’m still scared of that Disney movie Hocus Pocus for crying out loud.

24. Last movie you watched? The Shack this past weekend.

25. What color shirt are you wearing? Turquoise (the workout shirt pictured above).

26. Favorite Holiday? Christmas! Easter is a close second. Thanksgiving a close third.

27. Beer or Wine? It depends. I’ll let you know for sure when I’m 21.

28. Night owl or morning person? Night owl (as I type this at 12:48am).

29. Favorite day of the week? Sunday. I love Mass and Sunday brunch 🙂

So tell me:

Your answers to any of these 29 questions!

Do you throw leftovers on top of salad greens and call it a salad?

Two things you did yesterday.

Let Me Brag About My Friends Again

I’m currently sitting outside on this last day of spring break, and I’m feeling all kinds of emotions.

Sad that spring break is over, overjoyed that the weather has been beautiful, grateful for amazing friends, anxious for the second half of the semester, and excited for what’s to come.

But can I brag about these people in my life who I call my friends (I think they call me their friend too, but who really knows)? These last few days of spring break have been wonderful in every way, but mostly in how down-to-earth, fun, and faithful my friends are. I’ve said this so many times before, but they constantly inspire me to be better and grow closer to God.

Friday

Friday started with some homework, maybe? I don’t remember. Regardless, the important part of the day was Mass and lunch with my friend Katie!

IMG_0029

perfect weather

IMG_0028

We chatted about the very depths of our souls over some bomb salads from Sweetgreen. I forgot to take picture with her, so my type-A-blogger self is sad.

The rest of the day involved Kan-Jam, a trip to the gym (too many heavy squats ➔ sore for DAYS), homework, and early bedtime.

IMG_0030

Saturday

I worked from 10-3 before playing outside in the perfect weather (again). I also stopped by Whole Foods to buy a box of salad greens, Fage Greek yogurt (that was on sale!), fresh strawberries (also on sale) and Nature’s Path mixed berry buckwheat freezer waffles (also on sale #collegebudget). Those four things were my sustenance for the weekend.

IMG_0046

crumbs everywhere on my bed

IMG_0048

Yogurt, nut butter, waffles, berries, and leaves— nothing out of the ordinary for me anyway.

Saturday night brought some fun festivities! My friends and I went out for drinks…

IMG_0051

…and I was the only one in our group under 21, which explains my Shirley Temple pictured above.

*waitress taking orders*

Friend 1: Guinness, please.

Friend 2: I’ll also have a Guinness.

Friend 3: Guinness.

Friend 4: Guinness for me too.

Me: …Can I get a Shirley Temple?

Honestly, that’ll probably be me when I’m 21 anyway.

Nevertheless, ’twas a grand ol’ night, complete with live Irish music and dancing. I’m grateful for my older friends who let me have fun with them despite me being an infant.

IMG_0053 IMG_0063

They went to another bar at 11, at which time I actually needed to go home. #NoFakeID

Sunday

That one hour loss, guys. IT GOT ME.

Nothing a good breakfast can’t fix though!

IMG_0065

Better yet— Mass with friends… and more perfect weather!

After Mass, I knew that I had to move and groove outside. It seemed like all of Boston was saying hello to the blue skies!

IMG_0068

I ran into more friends, who were willing to put up with my selfie shenanigans in the middle of their workout.

IMG_0070

We all burpee’d a lot.

Lunch was the rest of my salad greens, Snap Pea Crisps, and an almond butter Perfect Bar.

IMG_0072

I was planning on doing some more studying, but I didn’t need to do any work… So I went back outside 😀

IMG_0073

As soon as I whipped out my phone, this squirrel that was stuffing its face stared me down and looked like it was about to kill me.

More frisbee!

IMG_0076 IMG_0078 IMG_0080

It was also my friend Lauren’s birthday!!!

IMG_1636

four-eyed friends ♥︎

The dining halls opened last night (praaaaaise), so a few of us chowed down.

IMG_0084 IMG_0085

Then I joined my saintly friends for Back Bay Mobile Soup Kitchen for a little while before coming back to do some work attempt to do work while waiting for RACHEL TO COME HOME!

She was on a mission trip in Guyana for spring break, so I had not talked to her/seen her/contacted her/known every detail of her life for what seemed like FOREVER. She shared her experiences from the mission trip, and I almost cried. God worked through her in such profound and incredible ways.

She also saw a lot of stars 🙂

Back to the grind today. Sophomore year will come to a close in just six weeks, help.

Hope you all have a kick-butt week! I’m going to need a couple kicks in the butt just to get out of bed.

So tell me:

Something you loved about this weekend.

Something you love about your friends.

Have you ever been “that” person under 21?

Have you ever been on a service or mission trip?
