Ice Cream Sundays + Start of Grad School

Two very different yet equally important things.

I’ve been meaning to post this for the past two days, but here we are on a Wednesday. Now that I have to fill my days and nights with studying, blogging will probably be reduced to once a week again. C’est la vie.

It’s been a blessed past five days though!

Friday

Friday was my last day of work as a gross anatomy teaching assistant, and I must say that I had a great time working that job. (Definitely a better time than the students were having. What troopers.)

I kicked off the weekend with Colby! We picked up our pottery that we painted last weekend, and they turned out so well.

Afterwards we walked over to Shawarma King for some Mediterranean goods.

I got the falafel wrap, which totally hit the spot.

Then we went to Paris Creperie for dessert, necessarily. I got the petite sized bear claw crepe (cinnamon and cookie butter), which was not really worth the price (I was hoping they’d have vanilla ice cream to top it with – negative) but tasty nonetheless.

Later in the night, I joined some friends at Rachel’s place for a Princess Diaries movie night. If it were any other movie, I would have gone to bed instead, but the original Princess Diaries is so worth it.

Saturday

I was suuuuuper tired getting up early Saturday morning, but I was still so happy to go to a 7:30am “Cardio Core Fusion” class at Exhale Back Bay with my friend Elayne!

She had told me that ClassPass (a membership that gives you discounted prices for fitness classes throughout the city) was having a 4 classes for $4 deal for their 4th anniversary, so we jumped on it. This Cardio Core Fusion was a great, involving lots of planks and punches and fun beats, but my body was NOT having it after a week of less-than-ideal amounts of sleep.

But any opportunity to move and groove with friends is a good time!

I made sure not to book anything else for Saturday so that I could nap (for 2.5 hours thankyouverymuch), clean the apartment, do laundry, pray, cook, FaceTime with the fam, and go to sleep early-ish. I hadn’t forced myself to have a (nearly) commitment-free day in a long time, but after Saturday, I was reminded of how valuable those kinds of days are.

Sunday

…started off with THE BEST smoothie ever. On Saturday night I threw together in a bowl:

  • 1/2 c. milk
  • 1/3 c. greek yogurt
  • 1/2 c. oats
  • 1 tbsp. chia seeds
  • sprinkle of cinnamon
  • dash of nutmeg
  • pinch of salt
  • big spoonful of peanut butter

On Sunday morning, I poured the whole mixture into a blender with a little more milk and about 2/3-3/4 of a frozen banana. And voila! The thickest, most luscious pb banana smoothie of all time.

I walked to a church downtown for confession afterwards and then met up with Ben for a workout on the esplanade. It was a hot and beautiful day, so it seemed like all of Boston’s humans and domestic and wild animals were playing outside.

We utilized the equipment and came up with this fun workout that also made me feel like I was working out on top of a stove. The rubber flooring of this thing is a heat sponge.

3 rounds:

  • 20 tricep dips
  • 15 goblet squats (with a random cement block we found there)
  • 20 decline situps
  • 10 burpee bench jumpovers
  • 10 step up hops each leg
  • 10 side to side uneven pushups
  • 10 lateral hopover burpees
  • 25 double unders
  • 20 reverse rows

We drank oh so much agua afterwards and walked over to a different park to hang out with more friends!

After playing outside for a few hours, I walked back home while FaceTiming my friend Briana. Then I showered, ate meatloaf and veggies in record speed, and rushed back out the door for Mass back on campus.

My friends and I have unofficially decided that we now have a post-Sunday-Mass ice cream ritual. I really just kept bugging people about ice cream all day, but who was gonna say no? We went to White Mountain Creamery last Sunday, so it seems like it’s “ice cream Sundays” should be a thing now.

This week we went to Emack and Bolio’s, which has been known to just be “meh,” and for me it was still just that, but it was ice cream. It was also my fault for ordering too chocolatey of a flavor for my taste.

Rachel invited us over to her place to hang out/watch the Cardinals v. Pirates baseball game, but I was there for the hanging out, popcorn and beer. The baseball was nice white noise.

Monday

I’ve been having overnight oats 5/7 days per week probably, and I am never mad about it.

I worked through the morning at my side job and then headed to the gym for a very short but efficient workout (read: my legs were jello by the end).

Supersets (3x)

  • 10 pistols each leg + 20 KB swings (12kg)
  • 15 weighted jump squats (10#) + 20 hamstring ball curls + 20 jump lunges

I warmed up before and stretched afterwards, but this was IT.

Sidenote: I was fueled by this bomb sandwich I packed with me.

After the gym, I went to the bookstore to pick up a textbook for my class and then headed home to cook, eat and FaceTime with my dear friend Emma for THREE hours! There was apparently a lot on our hearts that needed to be said. Praise God for wonderful friends.

I ate this dinner and snack kind of early (finished at 6pm) but ate a chicken drumstick at around 9pm after FaceTiming Emma. So I was full going to bed, but for some odd reason, I woke up starving at 3:30am. I hesitate to use the word starving for fear of overdramatizing my hunger, but I really was hungry to the bone and felt like I could have eaten a large burger with fries and milkshake in the middle of the night.

Of course, I got up and ate bread with pb&j. But when I went back to bed, I was still so hungry and ate half a frozen banana with yogurt. And then third times the charm, I got up again and ate several handfuls of sunflower seeds.

It was a very odd occurrence that I did not like at all, but I just honestly, inadvertently didn’t eat enough before going to bed. Happens…but I’d prefer if it didn’t.

Tuesday

First day of PT school!!!

We had orientation at 8am, followed by class from 9-12 and 1-3. Five hours of classes in one day is not my cuppa tea, but alas, summer school is here.

After our long first day of Functional Anatomy, our program directors kindly set up a fun social event for all of the post-bacs and continuing undergraduates (like me) to mingle and meet one another. We bonded over bowling and lots of delicious food (praaaaaaise)!IMG_9250

I helped myself to half a ham sandwich, chips, salsa, egg rolls, chicken wings, fried mac and cheese(!!!!), lemonade, and, like, a couple veggies.

Today I’m celebrating 21 years of life,¬†legal consumption of¬†alcohol in the United States, aaaaand the Visitation of the Blessed Virgin Mary!

Besides my first legal drink in the US though, this weekend has been filled with many firsts.

First time…

…listening to Harry Styles’ new album. I love his song,¬†“Sweet Creature”!

…being seriously concerned that I could need hip surgery. When I was walking in pain yesterday, I thought I could very well have a labral tear (which would be pretty bad), but the more I moved, the more I ruled that out. I’m going to¬†guess that I just strained some inner thigh muscles, but I’ll report back after a few more days of rest.

…doing a workout in my summer apartment. I made it low impact for my legs + for the downstairs neighbors.

…watching John Mulaney standup comedy and¬†Zootopia.¬†I really liked both!

…showering in the gym. I’ve been going to the campus gym for three years now, and I’ve never showered in the locker rooms. Since I live kinda far from campus now, I can’t just go home and shower in a snap, so I packed a huge duffel bag to carry around all day and finally showered at the gym.

…handling cadavers. For our first gross anatomy teaching assistant meeting yesterday, we had to take care of the cadavers a little bit, and it was quite an adventure! Fluids. Fluids everywhere.

…eating tapas in Boston. For my birthday celebration, my friends joined me at Barcelona (the restaurant, not the Spanish city) for tapas and¬†sangria. The tapas were ON POINT. Perfect for sharing with a big group!

My favorites were the beef empanadas, croquetas (fried balls of ham and melty cheese WOW), and spiced spinach and chickpeas.

…drinking [almost] legally! Ben apparently told the waitress to bring me a celebratory drink at midnight, but she brought it at 11pm without carding me, soooo I just drank it before my official birthday. Thus, turning 21 at midnight¬†was rather anticlimactic, but it was still fun!

I drank ~1/3 of the sparkling wine. Me: “Alcohol makes me too full. I’d rather just have room for more tapas.”

…drinking white sangria. We ordered a pitcher for the table after we finished our tapas, and holy smokes this was the best alcoholic beverage I’ve ever consumed (I’ve drunk legally in Canada and Ireland before)! I don’t love alcohol in most forms, but this was delicious. The hint of pineapple perhaps?

I’m happy to report that I remember absolutely everything that happened last night. Thank you so much to my friends who came out late on a Tuesday night to celebrate with me! ‚ô•Ôłé

…making a smoothie in a Ninja blender. This morning (read: a couple hours ago at 11 am), I blended an overnight oat smoothie in Christie’s huge Ninja blender. What a powerful machine!

I told you I’ve been listening to High School Musical.

Technically, my summer vacation started two weeks ago, but I haven’t really talked about my summer plans yet.

These first few weeks have been the “vacation” portion of my summer, during which I’ve had minimal responsibilities and plenty of time to hang out with friends and family, soak up some sun, and watch people graduate.

I’m currently living with my friend Christie¬†for June and July before my apartment lease starts August 1. I’ve unpacked only as much as I need, and I’m trying not to invade her space too much. This means my¬†food supply is doubling as a window display.

This week has been about errands, a little bit of work and adjusting to being farther from campus. I still hang out on campus during these days off, but now I’m about a one-hour walk or a 30 minute bus ride away. The walk isn’t too shabby in the mornings though!

You might have noticed that the dishes in my food photos look a lot nicer. That’s because Christie has exceptional taste in¬†home/fashion/beauty, which makes¬†my food photos look¬†just a little bit more aesthetically pleasing.

So I’m here in Boston doing my thang until June 1, which is when I go home to New York for a week for Pop’s 50th birthday celebration plus some bonafide family time.

Following that, I’ll be working back at BU as a gross anatomy teaching assistant for two weeks! I need to re-study.

After¬†that, I start PT school! We start grad classes at the end of June through mid-August. This early start is what helps us get done in 6 years instead of 7 years (total). I’m excited to start the graduate studies and become closer with the other people in my program!

Hole-y Weekend

You know there are donuts and bagels involved in this post.

But first, can we talk about how it is absolutely¬†frigid¬†outside? Two weeks ago, the northeast was blessed with gorgeous weather, and now there’s this.

But thank God for warm sunshine, warm clothes, warm radiators, and warm hearts.

There’s supposed to a blizzard tomorrow, and this is the one time I am praying there is NOT a snow day, because I have a huge lab practical exam for gross anatomy that I would like to get over with ASAP. Please and thank you. The world revolves around me.

Before leaving home in New York on Friday morning, I made French toast for Madre, Brother Sam, and myself. It was some of the best French toast I’ve ever made!¬†I think the keys were:

  • drying out the bread on a cooling rack overnight
  • adding more milk to the egg mixture (allows the inside of the toast to be more fluffy!)
  • sprinkling cinnamon over the bread¬†after soaking it in the egg mixture, rather than adding cinnamon to the egg mixture (the latter causes clumps of cinnamon to form on the French toast)
  • using medium heat for the skillet
  • using a healthy dose of real butter for the skillet

On Saturday night (after a 1.5-hour nap at 5pm + this Fitness Blender workout) I cooked one of the best meals in my apartment this year. I bought this Korean BBQ marinade from Thrive Market and used it to marinate chicken thighs (soooo much more flavorful and moist than chicken breast‚ÄĒjust do it) for a few hours before grilling them.

Besides cooking and working, the rest of my weekend has involved lots of studying for that lab practical. Since I took a 1.5-hour nap on Saturday night, I ended up going to bed at 2am, which was actually 3am thanks to DST. Haha.

Sunday involved a lot of fun shenanigans though! First was my attempt at Crossfit Open Workout 17.1.

The movements and equipment are accessible to me, so I thought I’d just go for it, but I definitely had to scale it. I used a 25-lb. dumbbell instead of a 35, and my gym only had an 18-in. or 24-in. box, so I used the 18-in.

And I still DIED. I had 7 burpee box jump-overs left by the 20 minute time cap. Womp womp. It was a “fun” workout though! Perhaps I will try it again later.

After I was annihilated, I showered and went to lab to study for a bit before meeting with Fiona, Rachel, and Austin for food bucket listing! On our list for the afternoon was Bagelsaurus for a sea salt bagel and Union Square Donuts for the PB&J donut (I gave up pb for Lent, but since it was Sunday, Rachel and I agreed that it would okay for me to have at least a bite of the donut).

Situation: Both places closed at 3pm, we were getting an Uber at around 2pm, and the walk between the two places was 28 minutes. Rachel and I thought we should divide and conquer, but Austin (the marathon runner) and Fiona (the army gal) convinced us that all of us could book it and make it to both places (because one of our rules for food bucket listing is that we go with each other to the actual store and buy the food together). Friends motivating friends for love of food.

I’m glad they pushed us, because we made it!

Sadly, Union Square Donuts did not have the PB&J donut that day, but we decided to still cross it off the bucket list. Instead, we ordered six donuts to split between the four of us (omg so much donut).

Let’s talk about donuts. These were delicious. But since donuts aren’t my dessert of choice (I feel like it’s difficult to get really good flavor into a donut), none of them blew me away. The raspberry basil was probably my favorite though, because the basil packed a surprising punch. We were all super excited for the sea salted bourbon caramel, but it was kinda disappointing. Too much bourbon, not enough caramel.¬†Like I said though, these were all delicious still! Good quality donuts for sure.

We bought the donuts first but ate them after our bagel sandwiches at Bagelsaurus.

I got the “Eggspa√Īola” on a sea salt bagel, which was an over medium egg, pimento aioli, feta cheese, parsley gremolata, and I added avocado.

This was also fantastic! I loved the flavors of the pimento aioli and parsley gremolata + the saltiness¬†of the feta + creaminess of the avocado + richness of the egg. The bagel was really chewy though, so with every bite, everything slid out of the sandwich. ‘Twas a blissfully messy situation.

(I still liked my NY bagel from last week better. I’ve had one NY bagel and now I know everything about bagels.)

Eating bagels and donuts in one afternoon… You could call it a “hole-y” Sunday (creds to all my friends for coming up with great donut/bagel puns).

We did also go to Mass at night, making it a truly holy Sunday ūüôā

Lastly, we rang in the new week with my friend Lauren’s 21st!!

Big Kids in the Big City

I just finished one of the best smoothie bowls I’ve ever made!

How I made it: Last night I mixed together 1/3 c. milk, 1/4 c. Greek yogurt, 1/4 c. [dry] quick cooking steel cut oats, 1 tbsp. chia seeds in a bowl. I also sliced and froze a whole ripe banana and half a mango. This morning I added to a blender another 1/2 c. milk, the oat mixture, a lot of mixed greens, a pinch of salt, a drizzle of honey, and the frozen fruit. Then I blended ’til the cows came home (probably also ’til I woke up Madre, sorry :/ ).

This was the thickest and coldest smoothie ever, thanks to the overnight chia mixture + the frozen fruit. Topped with sunflower seeds, Honey Bunches of Oats, and sweetened shredded coconut.

All I need is a tropical beach.

We met up in Times Square and walked almost 4 miles down to The World Trade Center from there. We lucked out with some gorgeous weather!

It’s called Best Bagel and Coffee, which is the most gimmicky name ever, but over 1,000 people on Yelp¬†loved it, so I went. In Yelp I trust.

I went for bacon, egg, and cheese on a whole wheat everything bagel.

Indeed, this was whole and everything.

Confession: This was my first NY bagel in my entire life. Like, I’ve eaten bagels in the state of New York, but I’ve never had a¬†quality¬†NY bagel until this day. I’ve only lived here for 12 years. I’m a slow person in many regards.

My bagel sandwich was absolutely delicious and great walking fuel while the rest of my friends built up a “hangry” appetite for lunch by the time we arrived at the World Trade Center. It’s so interesting being the only nourished one in the group. You just watch everyone else get angry and/or delirious.

After they were all fed at a gastropub called Suspenders, we walked around to the 9/11 Memorial.

A¬†delightful amount of food, a crap ton of walking, and countless laughs with¬†some of my favorite people¬†(I kind of hate myself for the cheesiness of that last one…but it’s true).

When I got home, my body wasn’t sore and had¬†a lot of energy for the first time this whole week, so I did a quick 16 minute workout in the basement (30 seconds work/10 seconds rest/4 rounds):

Yesterday started with that smoothie up there + a manicure and pedicure with Madre early in the morning, because I had to take a train right back into the city for lunch with Pop, my brother, and Christine from Boutiquefull (also my good friend from BU)! Christine met my brother and dad in NYC, since they all work down there, so Pop asked to take us out to lunch one day.

I wouldn’t usually take a 40 minute train + 20 minute subway ride just to eat lunch in NYC, but I’d do it for these folks ūüôā

It was so fun catching up with Christine and hanging out with Pop and bro Ben!

After lunch, I headed uptown to meet with a couple of the Sisters of Life. I signed up to be a co-worker for them, which is essentially a volunteer to help women in crisis pregnancies (with resources, babysitting, material donations, praying, just being a friend, etc.), so we just chatted about that and all about life (duh).

All the Sisters of Life¬†are just pure JOY. Ugh. Love ’em.

Last night we went to flavor town (as Guy Fieri would say) for dinner. In other words, I roasted/grilled a bunch of veggies, Madre made salmon and rice, and we dug in.
