Virtual Brunch Date

If we were having brunch…

…I would sit down with wild hair, out of breath, and slightly overwhelmed. But look at all this brunch! Megan and I have adopted a tradition of eating brunch in town after Sunday Mass. It’s always a heart-healthy affair highlight of the week!

img_5544

two weekends ago at Herbstreet: “breakfast of champions” cassava rosti with smoked salmon, spinach, avocado, a poached egg, and capers — top notch.

img_5597

yesterday at San Lorenzo’s: crab cakes with poached eggs and hollandaise + char-grilled asparagus, tomato, arugula, and home fries

img_5600

sorry and you’re welcome for this photo

…I would tell you that I cleaned my plate both weeks.

…I would tell you that our good friend from Boston, Briana, who is studying abroad in Spain, visited us in Dublin a couple weeks ago! Of course, we had to get some bread and butter pudding with her 🙂

img_5340img_5341

…I would tell you how pleasantly surprised I am with the Dublin Zoo. A few of us went two Fridays ago, and we had so much fun! It was pretty cold, but a lot of the animals were out to say hello. But we were reminded very easily that zoos are mainly an attraction for people ages 5-13.

“Moooom! MOM. Mooooooooom, look!!! It’s a TIGER!”

I was just as intrigued by the tykes as I was by the animals, tbh.

img_5376img_5385

ostriches are the most fabulous/terrifying creatures

img_5394img_5396img_5401

…I would tell you that, although I didn’t miss peanut butter too much in Switzerland and Italy, it was good to be reunited with my fave when I got back to Ireland.

img_5551img_5356

…I would tell you that the weekends are not just about brunch. Dessert is also our idea of a good time.

img_5404

post-zoo, pre-dinner crepe with banana and salted caramel + vanilla ice cream

img_5550

spiced pear ginger cake a la mode on some random night

…I would tell you that I’ve also been cookin’ up some colorful, more nutritious foods. I basically cook one thing to eat for lunch/dinner the entire week. Some say it’s sad and boring to eat the same thing every day for five days straight, but I don’t mind at all.

img_5346

beet and goat cheese salad with balsamic

img_5355

two weeks ago: whole wheat rotini with sundried tomatoes, basil, chicken, and garlic (best thing I’ve cooked here in Dublin!)

img_5554

last week: white jasmine rice with chicken, peppers, and Jalfrezi sauce

img_5553

img_5591

salmon salad (greek yogurt, spicy mustard, cracked black pepper, and raisins— don’t judge, it was good!)

A lot of eggs also.

img_5405

goat cheese, spinach, eggs, ketchup on toast

img_5552

avocado, goat cheese, mustard, spinach, egg sandwich

img_5564

classic avocado toast with eggs

Would it be more economical to invest in an actual hen at this point?

…I would tell you that I am enjoying my internship at a physiotherapy clinic so far! Some of the highs:

  • I get to observe some of the sessions and compare physiotherapy in Ireland to physical therapy in the States.
  • The people at work are super kind and fun.
  • They play Boyce Avenue all day at the office.
  • I get to wear long athletic pants and sneakers (BLESS).
  • They dry needle and massage me for educational purposes.
  • I get to participate in the Pilates classes.
  • I can take the bus (and read Harry Potter on the ride) OR walk if I’m feelin’ it.
  • The owner of the clinic bought me a superb doughnut one day last week.

img_5557

I don’t even like chocolate, but this was amazing

Some of the lows:

  • Sometimes the desk part of the job involves more sitting than my butt prefers.
  • I made an extremely poor choice of footwear one day last week…

img_5556

they were squelching with water by the time I arrived at work — completely saturated

…I would tell you that dry needling is not common in the US, but it is in Ireland, and I kinda love it. It’s like aggressive acupuncture? A super thin needle is inserted into your myofascial trigger points (your muscle “knots”) repeatedly, and the muscle grabs onto the needle and releases, causing it to “break up” the trigger point. It’s a sore process during and afterward for a day or so, but it works!! She did my traps and calves. Yeeeeeeeesh.

“Your calf reaction is pretty intense.”

Yeah, I felt it.

…I would tell you that I laid low this weekend and loved it. I barely did anything on Friday after class. I wasted time on my phone, ate pizza and gelato with friends, and watched Harry Potter and the Philosopher’s Stone with Megan and Cristen (I’m such a fan now. A whole new world has been opened unto me.)

img_5570

dinner at Milano: dough balls with garlic butter to start (yeah, it’s everything you want)

img_5571

Roman-style thin crust pizza with goat cheese, caramelized onions, red onion, spinach + a salad in the middle — divine.

img_5572

I sense the holidays 🙂

img_5574

mint chip gelato at Gino’s!

img_5573

a bite of Megan’s pistachio gelato cannoli — so pretty!

…I would tell you that Megan and I wanted to WALK on Saturday, so walk we did! Almost 10 miles just around Dublin city centre. We learned that TJMaxx here is called TKMaxx and that Burger King’s chicken fries are actually delicious.

img_5579

Comes to Ireland. Goes to Burger King for chicken fries.

And God bless Megan. As we walked back home after several hours of semi-aimless window shopping, she said, “Let’s make scones tonight!”

So we did! We picked up the ingredients for less than €5 and got 12 scones out of this recipe. This is dangerous, friends. DANGEROUS.

img_5594

we made a few cinnamon swirl, a couple plain, a couple chocolate chip, and a couple cinnamon raisin

img_5595

These were freaking fantastic (on their own OR with butter OR with butter and jam), not gonna lie. Comparable to, or even better than, all the other scones we’ve had here in Ireland!

We also made Irish flapjacks, which are not pancakes. They’re oat bars with golden syrup, brown sugar, and butter.

img_5592

“It’s like really unhealthy granola.” -Megan. AKA your dream that you try to suppress.

Shhh. Let it happen.

…I would tell you that moves and grooves have been happening as they may. Recently I’ve felt pretty tired and sore overall (probably lack of sleep for no good reason), but that just means that workouts are even more fun and appreciated when I feel up to them!

img_5352

…I would apologize for this being so long and for being bad about blogging recently. I am always so appreciative of the loving comments and support!

…I would also thank all those who shared their thoughts and feelings with me regarding my random vlog yesterday, “Why Am I Catholic?”

…I would ask you:

What are you eating for breakfast/brunch this morning?

Tell me two things about your life lately!

Have you ever tried dry needling or acupuncture?

Bread, Butter, Cheese and Sugar

The diet of champions.

I did something spontaneous, and it worked out tremendously! I had been wanting to have a wine and cheese night for the longest time this semester, so I finally reached out to my peers, asking if they were down for such an event this weekend.

screen-shot-2016-10-17-at-9-05-54-am

Long story short: They were down, and we all pulled together for a fabulous wine and cheese night!

img_4443

A few of us picked up some artisan cheeses from Sheridan’s Cheesemonger in city centre, and it was surprisingly so inexpensive! Other people picked up some cheeses from the local grocery store too, which were just as delicious. The selection included gouda, some aged cheddars, blue, goat, brie (so much brie), and chive + onion cheddar.

img_4444 img_4445

What you don’t see here is the baked brie in puff pastry that a couple girls made. *drool* You can see at the top right of my plate below that I got a nice hunk of it though!

img_4446

I went back for the equivalent of, like, five more plates. I also learned that I hate wine. I almost choked every time I swallowed it.

We played Heads Up and Sardines afterward, because we’re quasi-adults. Such a fun night!

Other eats recently have involved a load of carbs, butter, and sugar. All the things that are demonized by our culture, but hey, when in Ireland…

img_4438

afternoon scones with butter and jam are my favorite

I’m aware of the general amount of carbs and fat I’m consuming here, and sometimes I’m tempted to be bothered by the fact, but I never feel overloaded or gross with the treats I’m eating. Granted, I don’t always feel like a spring chicken after a heavy meal (i.e. wine and cheese night), but I also don’t feel deprived or restricted, which is good for the mind AND body.

img_4458

img_4436

I still love green things

If we’re being 100% honest, sometimes I still look at my stomach and think, “I know I could do better with my diet.” But then I remember, “What would that do for me? Would I really be happier with a little less fat? Is that where my worth is?”

And then the rational side of Alison comes back. Of course my worth is not in my body. I’m feeling energetic, lively, and grateful, and it is my duty to radiate that outwards, not to focus it inwards for some construction of “perfection”.

img_4419

Irish oat “flapjacks” (aka oats, butter, golden syrup, and brown sugar — DELICIOUS)

img_4430

Megan shared some of her garlic bread with me, and it was so satisfying

This isn’t anything we haven’t heard before (from myself or from the rest of social media), but reminders are always needed.

img_4431

I baked something! Some banana bread baked oatmeal for easy breakfasts this week.

img_4453

still going strong with the pb banana for breakfast #forever

Another sign that recovery is always subtly ongoing: I used to love having pasta for dinner in middle school, but then disordered eating shut that down in high school, and even in college to an extent. A bowl of pasta for any meal was subconsciously ingrained in my mind as “too many carbs” for so long that I generally avoided it, with or without deliberate thought about my carb intake. It’s not that I wouldn’t eat a bowl of pasta (trust me), I just wouldn’t consider it first on a menu or cook it for myself, even if I was craving it.

Silliness!!!

It had been a long time, but I bought a bag of pasta and cooked it up with some beef and spicy tomato sauce on Saturday night. Plus some unpictured roasted broccoli!

img_4460

*punches the air because it was so good*

Similar sentiments about white bagels, actually, now that I think about it. Again, I have no actual “fears” of these foods anymore, but I just recently realized that I don’t often get them for myself, and for no good reason. ‘Cause I really love pasta and bagels!!

(I’m saying all this not because I’m struggling, but because honesty is the best policy. I want to reassure others that having these thoughts/realizations, even after recovery, is still normal. We can kick ’em to the curb though 🙂 )

img_4464

brunch after Mass at Metro Cafe yesterday: toasted bagel with smoked salmon, guacamole, and rocket salad

img_4466

Speaking of Mass, the church we went to yesterday was gorgeous, and the choir was phenomenal! It was the best Mass experience I’ve had in Ireland so far. The church was St. Teresa of Avila on Clarendon St.

img_4463

After brunch, we were walking back home when I spotted Murphy’s Ice Cream. I squealed.

img_4470

It was €5 for this tiny cup, but it was a special tiny cup of ice cream. I mean, butterscotch whipped cream? C’mon. Definitely a better deal than a €5 shot.

Two last spontaneous things I did:

I RAN. 4.5 miles! I haven’t run that far in…a year? Two years? It was beautiful outside, and I was too sore to do any strength/HIIT stuff, so running was the perfect way to move and groove on Friday.

img_4455

Second spontaneous thing was cooking this weird rice dish last night with leftover white rice, tikka masala sauce, spinach, and two eggs.

img_4472

it was alright

Hope you all have a wonderful week! We have a couple finals and then a 10-day mid-semester break!!

So tell me:

Do you like wine?

What did you do this weekend?

How are we feeling about carbs, butter, and sugar these days?

Operation “Say Yes”

…”to the dress.” I’m getting married!

Just kidding. This is about how I am the flakiest, most indecisive person ever.

“Hey, Alison, do you wanna go out tonight?”

“Oh!…maybe. I’ll let you know. I want to, but I need to do ‘stuff’ tonight.”

“Okay let me know!”

(Two hours later) “I think I’ll come!”

“Yay!”

(20 minutes later) “Actually…I think I should stay in….”

“Aw. Okay.”

(5 minutes later) “But should I just go out?”

“Yeah if you can!”

(2 minutes later) “Maybe not…”

“Alison… Do whatever you want.”

I’m indecisive because I spend too much time thinking about whether I should go somewhere or not, and then I end up procrastinating anyway, when I could have gone out, come back, and done what I needed to do.

So this past week was Operation: “Say Yes”

Yes to going out on Thursday night.

Because Thursdays are the new Friday, right? We actually don’t have classes on Friday, so Thursday really is the start of our weekends for the first half of our semester.

97% of the time, I’m not one to say, “I wanna go out tonight!” I’m usually more like, “let’s go get dessert and be in our PJs early tonight!” But I felt like celebrating the submission of our first big paper on Thursday, so I went out to a pub with some friends that night. It was my first night really “going out” in regards to drinking and such.

I drank more than I ever have that night, but I was still totally sober throughout, haha.

fullsizerender-2

“Baby Guinness” (Kahlua and a touch of Bailey’s— looks like a Guinness but tastes like chocolate!)

I only had one of these. I’m not that tolerant (or wealthy).

fullsizerender-3

arguably the most pointless €5 purchase of my life

Not even tipsy, but not mad about it. Watching all the other wild kids around me was fun enough.

My favorite part was coming back past midnight and sharing a big bowl of popcorn with my friend.

fullsizerender-4

Yes to napping.

Because I went to bed at 2:30 am after a night out and woke up naturally at 8:50-ish on Friday morning.

I was thinking of doing a longer workout later that day rather than napping, but napping gave me energy to PR my 100 burpee time! 6:16!
fullsizerender-7

I was on the ground panting two minutes before this photo was taken

Yes to walking somewhere solely for dessert.

My friend Brenna and I went to Bread & Butter to pick up dessert on Friday night, which was a freaking fantastic decision. I bought bread and butter pudding for €2.95, and the portion was HUGE. Megan was kind enough to have half, and she shared her vanilla ice cream with me to go with it 🙂

fullsizerender-8

this is only one half of the whole portion they gave me

10x better than alcohol. 100x happier. (Half the price too, holla.)

Yes to the Bray Cliff Walk with three friends.

I could have spent the whole day working on my ethics essay, but I decided to go to another cliff walk for the first half of the day. So worth the fresh air, exercise, and company!

fullsizerender-10 fullsizerender-12 fullsizerender-14

fullsizerender-16 fullsizerender-27

selfie with a banana, because I am a banana

The walk took approximately 2 hours, since we stopped for a bunch of photo sessions.

fullsizerender-29

unnamed-16

thank you to Brigid and Caroline for this photo!

For lunch, we chose The Happy Pear, a super cute vegetarian market/cafe/restaurant.

fullsizerender-21

I got this bomb Buddha bowl, which had brown rice, pickled cabbage, “kimchi” (wasn’t actually kimchi, but that’s what they called it), lentil dahl, garlic kale, avocado, and sweet potato fries!

fullsizerender-22

Hiking and buddha bowls, are we in LA!?

Yes to FaceTiming four people over the weekend.

I miss my friends a lot, and although it can take a couple hours to FaceTime a couple people, it is always worth it to talk with such beautiful souls. I laughed and cried.

Yes to Sunday brunch.

After Mass on Sunday, I met up with my friend Cassandra for brunch at a fabulous little place called Herbstreet.

unnamed-7 unnamed-6

unnamed-11

This was one of those restaurants where you think, “I could honestly order any of this.” Cassandra and I both went for savory + sweet.

Cassandra got the “Eggos Mexicalos” for her main, which was spicy and satisfying (and GUACAMOLE). I got a strange combo— smoked salmon with capers and dill creme fraiche + small stack of blueberry pancakes with orange butter. I ate them separately, don’t worry.

unnamed-9unnamed-8 unnamed-12

I was totally craving pancakes, and MAN did these deliver. I love blueberry pancakes, but the zesty orange butter really put it over the top.

The best of the meal was Cassandra’s sweet pick: the French toast with caramelized bananas, pecans, and clotted. cream.

unnamed-13

Be still my heart (but not literally, please, I know this is a lot of cholesterol, sry). We already decided that we have to go back.

unnamed-14

Yes to working out outside.

I usually work out in my room these days, because a) that’s all I have time for; b) it’s dewy and cold outside in the morning. But on Sunday, I took a nap and just went outside with my jump rope. It was glorious to move and groove outside!!!

img_4402

5 rounds:

  • 50 double unders
  • 2 laps (~1/3 of a mile)
  • 5 pistol squats each leg

Yes to walking.

It can be time-consuming to walk to city centre from our campus, and sometimes I feel like I should save time and take the bus, but it’s [almost] always a good idea to walk.

I say [almost], because yesterday we walked to Parliament for a field trip, and it was down pouring. I was soaked and freezing throughout the rest of the field trip, but Megan reminded me to be grateful that I can go home and be warm, whereas some people cannot.

#HUMBLED.

Yes to cooking for real.

I bit the bullet and bought a tikka masala simmer sauce for some chicken, plus bell peppers and real rice (I refuse to buy microwave or “boil in a bag” rice).

img_4414

Prior to this, I had just been seasoning things with salt and pepper because I wanted to be cheap and minimalist, but variety is the spice of life. Or spice is the variety of life?

This delicious lunch salad also happened a couple days ago:

img_4415

beets, roasted sweet potatoes, avocado, two fried eggs, salt and pepper

Yes to saying no to blogging.

It’s been a busy week with essay writing and such, so the blog has been on the back burner. I wanted to type this post for Monday…then Tuesday…then Wednesday…then Thursday…and now it’s finally typed. Life happens, and I’m always learning how to prioritize.

Yes to a free online yoga inversions class on the CodyApp.

It was on Tuesday night right after my healthcare policy class ended, plus it was free, so I just signed up and did it! I highly recommend CodyApp, guys. I mean, I’ve only tried the free classes so far, but even those are great. This inversions class really did help me learn more about handstand alignment!

img_4291

not in the inversions class, but wanted to see how titibasana was coming along

I hope you guys have an awesome weekend! I’m organizing a wine and cheese night for the group tonight, and I AM PUMPED. Finals are next week already, LOL (we start internships in November!).

So tell me:

Are you indecisive?

Is it hard for you to say yes to things?

Two beautiful things that you did/happened to you this week!

Goodness Gracious, Galway

Is there a place on this island that won’t steal my heart!?

My goodness, Ireland might be one of the most underrated beautiful nations in the world. Then again, I haven’t been around too much of the world yet, but I can appreciate this little country for what it is!

Friday

I did some chores and work in the morning before a few of us headed to St. Patrick’s Cathedral in Dublin city centre.

img_3294

img_3301 img_3315 img_3319 img_3322 img_3327 img_3330

This place is truly a masterpiece. Arches, carvings, stained-glass window, stairways, tombs— like a fantasy novel setting! It’s also Anglican, not Catholic, which I did not know!

Then I did homework on Friday night. Lame award of the year. But it was for good reason because I was also packing for a weekend trip to Galway. Even though it was a two day trip, I was more nervous for this weekend jaunt than leaving the US for Ireland. I think it was because this is the first trip I planned completely without my parents’ intervention at all. Just Megan, me, and the good ol’ Internet (← in other words, we had infinite resources at our fingertips).

Saturday

I woke up at around 5:50 to get in a super quick workout before we hit the road. I did a warmup + 12 minute workout before gathering my things, eating some pb+j banana oats, and walking to bus #1.

img_3362 img_3367

We successfully made it to the airport, where bus #2 departed. But we used the airport restroom and found this dispenser, which was…handy?

img_3368

Megan: “Why can you get toffee from the same machine as your tampons?”

So we ran away to Galway. It was about a 2.5 hour bus ride, and we emerged in the new city (SUCCESS) without a plan until dinner time. First stop: lunch at The Dough Bros.

img_3376 img_3377

They had free crunchy chocolate chip cookies at the order counter, so that was our appetizer 😀

img_3378

And then we shared the “Hey Pesto” pizza, which had homemade basil pesto, goat cheese, smoked semi-sundried tomatoes, balsamic red onions, and fresh rocket (arugula).

img_3380

BOMB.

With happy bellies, we walked around the streets of Galway city, which were just charming. Our secret mission was to find dessert (I had scones on my mind for whatever reason), so we circled around before finding a little strip of street vendors.

img_3393 img_3394

I sampled four different kinds of bread from The Happy Loaf, and then I finally bought a white chocolate blueberry spelt muffin (that he baked right there in some outdoor oven contraption!).

Megan bought a caramel slice from a different vendor, and we brought our desserts to the River Corrib, where we blissfully enjoyed our treats with a view.

img_3397

the muffin could have used more blueberries, but it was still delicious!

img_3396 img_3410

img_3399

“the garbage swan” ➔ Megan’s unofficial name for this thing

We walked up to the ocean area called Salthill, which offered a delightful sea breeze and a peaceful atmosphere.

img_3437 img_3430

img_3435

img_3497

We couldn’t stay too long, because we had to catch a bus to Kinvara for dinner. However, in our haste, Megan twisted her (semi-recently sprained) ankle 😦 Darn cobblestone.

Luckily there was an ambulance literally right there where she twisted her ankle, so I asked the EMTs for an ice pack. One guy, Tom, kindly ran around the corner (to who knows where) to get one, while another guy, Eoin (pronounced “own”) came to chat with us and check on Megan.

Not only were these two gentlemen very helpful in Megan’s plight, but Megan and I agreed that Eoin was a darn good-looking and friendly man, who made the situation slightly less stressful. He even recommended a good fish & chips place.

God provides.

Tom came with the ice (and even an ACE wrap), so Megan was able to elevate and ice her ankle on the 40 minute bus ride to Kinvara (couldn’t have been a better situation, given the circumstances!).

img_3438

She had to buy a brace once we arrived, but she’s a trooper. We walked a few minutes over to Dunguaire Castle, where we were scheduled for a medieval banquet!

img_3441

First, we toured. This thing is over 500 years old!

img_3445 img_3448 img_3449 img_3451 img_3462

location of the banquet we would enjoy in the evening

img_3464 img_3495

super narrow at the top

Then I got antsy and did some weird things on the lawn, which definitely got in the way of some people’s photos from afar.

img_3496 img_3502

Megan: “I took a picture of you doing your weird squats over there.”

I was stretching my hips!

At 5:30, our banquet commenced. They served us mead at the beginning, which is honeyed wine. It was meh. I didn’t have much of it, but it was fun to sip it while listening to harp music.

img_3470 img_3471

We made a toast and headed upstairs to the banquet! Sorry for the bad quality pics to come; medieval times aren’t generous with the lighting, ya know?

Each dinner course was announced, and our meal/social time was interlaced with lovely singing pieces. The singers were so talented!

img_3480

smoked salmon + capers and veggies

img_3481 img_3482

soda bread with butter (Megan’s favorite food of the whole banquet. It was really good bread.)

img_3483

potato leek soup from a pitcher (my favorite food of the night, especially with the bread dipped in)

img_3494

no spoons!

img_3484

chicken in mushroom sauce + veggies and fried potatoes

img_3485

apple slice with fresh cream

img_3486

I had a single sip of red wine. I just don’t like alcohol apparently.

There was a longer performance after our meal was complete. Overall, Megan and I had a fun experience and were glad we did it. We were definitely the youngest ones there, but the couple sitting next to us was super friendly, and we loved talking with them!

img_3488

So stuffed and so happy.

Our first Airbnb experience was GREAT! Our host, Valerie, was phenomenal. She even picked us up from the castle after I told her that Megan was injured. Her room for us was so clean and cozy, and the bathroom was AMAZING (because any step up from a dorm bathroom is amazing). Also, her dog is the happiest dog on earth.

img_3493 img_3490

she left us tea, water, and “buns”!!!

We slept well that night.

Sunday

Valerie prepared a nice breakfast for us, consisting of brown bread (can’t get enough) with butter and jam + tea + cereal.

img_3512 img_3513

‘Twas hearty and filling for the journey back to Galway city. Valerie is the best; if you ever stay in Kinvara, go to her!!

Megan and I meandered around Galway city again once we got back there. We wanted to go to Mass at the Galway Cathedral at 12:30, but we had some time to kill. We visited the Spanish Arch, which was kinda underwhelming, but it’s old and historical!

img_3527

What we really got excited for was this playground.

img_3595 img_3597 img_3598 img_3544

“living her best life”

Then we paid 50 cents to use the cathedral washroom before doing our church thing. Prayer, confession, photos, and Mass. The Galway Cathedral is just stunning!

img_3536 img_3554

After Mass, we walked to Brasserie on the Corner for lunch. There was a two-course meal deal for €18.95, which was fantastic. Especially because of…

THE SODA BREAD.

img_3558

we’re slightly obsessed and vow to not eat anymore unless we are served it

I ordered the salmon with pea and bacon cream for my entree. The entrees came with potatoes two ways + steamed vegetables. Everything was so tasty!

img_3559 img_3560

I had to eat very slowly, because this stuff was rich. But the dessert compartment stayed open for this peanut butter parfait (not the kind of parfait we’re used to back home…parfait is more of a frozen mousse here, kinda like a semifreddo) with vanilla ice cream and honeycomb.

img_3562

This meal kept us full until almost 10 pm!

And so we just strolled some more until our bus ride back home. We saw a few churches and revisited Salthill to walk down the whole bar and feel the wind in our hair. A very Titanic moment.

img_3585

img_3584 img_3603

what a precarious moment lol

img_3583

We barely talked, except for the few times we starting singing “Unwritten” by Natasha Bedingfield. We just wanted to soak in the views and the breeze.

Megan and I also had a weird obsession with the award plaques on restaurant fronts. We just wanted to touch all of them.

img_3591

We’re adults. We travel on our own.

And now I’m back at the dorm, gearing up for our second week of classes. It’s funny, because finals are in less than a month. YAY.

But seriously, I am so grateful for this weekend in Galway with Megan and for the experiences I’ve had here in Ireland so far. God is good.

(All the time!)

So tell me:

Have you ever been to Galway?

Do you like Irish soda bread?

Have you ever used Airbnb?

Have you ever had an unfortunate experience, but somehow all the circumstances to deal with it were in place?

What did you do this weekend?

Food Over Booze

My professor asked us to journal or blog for homework!!!

So now I won’t feel bad “productive procrastinating” when I blog. It is purely schoolwork 🙂

Friday

I started the morning with Lori and Michelle’s 18 minute plank workout. It is always killer.

Breakfast was my first overnight oats in Ireland! I hope I freaked people out with this.

img_3016

lots of peanut butter, banana, and raspberry preserves

This + a KIND bar on the bus fueled me well for our class field trip to Glendalough. Of course, it was the rainiest day of the entire week.

img_3023

I think I fell in love with Ireland on this trip. So much green and so many sheeeeeep!

img_3038 img_3064 img_3050 img_3054 img_3057 img_3070

We made it through a couple of landmarks and a short hike before our tour guide gave us the option to either continue for another 1.5 hours or chicken out. I’m proud of our resilient group, because we were all down to keep hiking. Our tour guide saying, “It’s a Harry Potter-esque trail,” may have instigated the enthusiasm.

img_3075

I would have been miserable in the rain if the walk wasn’t so gorgeous. In fact, I have never used the word “gorgeous” so many times in a one hour period before.

img_3083

“This trail is gorgeous.”

img_3086

“These trees are gorgeous.”

img_3087

“This house is gorgeous.”

img_3092

“This waterfall is gorgeous.”

img_3094

“We are gorgeous.” (lol)

The word has lost all meaning.

But…this was GORGEOUS, guys.

img_3103

Totally worth the soaking discomfort and soggy chicken sandwich that I downed in the rain at the top of the mountain.

img_3104

bus snack feat. soaked wallet

Breakfast for dinner was the quick and lazy menu option of the night.

img_3107

I did manage to caramelize some onions and roast broccoli though.

img_3109

I went out to a bar that night with the rest of my classmates, and I was fully planning on buying a Ginger Jameson…but I was 100% NOT in the mood for a drink, so I didn’t get it. *sad trombone*

Instead, Megan and I got our share of booze by having sips of everyone else’s drinks. I discovered that I like mojitos!

I’ll buy my own drink one day, I promise.

Saturday

Money that I could have spent on booze was spent on food on Saturday. Food >>> booze.

8 minute abs followed by a leisurely breakfast of hot banana oats cooked on the stovetop.

img_3113

A few of my friends and I walked to city centre since it was a gorgeous beautiful day. It was my ideal kinda day— lots of walking, exploring a new city, and eating good food with good people.

“Hapenny” Bridge (Halfpenny Bridge)

img_3138

Temple Bar, which is an area and not an actual bar…

img_3141 img_3145

I found a bakery called Queen of Tarts on Yelp when I was researching good bakeries back in the States, so I was stoked to visit while we were in city centre.

img_3154

img_3158

I bought a huge blueberry scone and a slice of carrot cake, both to go. But look at this thing!!

img_3159

The kind lady asked, “Would you like that with butter and jam?” My heart.

Then for real food (sort of).

img_3161 img_3162

The fries were subpar, but the fish with salt and vinegar and some tartar sauce was fabulous. We ate our lunch with this view.

img_3163 img_3166

Then it was time to walk through Dublin Castle…

img_3176 img_3179 img_3180

…and Trinity University. I plan on going back to Trinity to see the Book of Kells!

img_3208

After almost getting lost on the way home, Megan and I finally made it back to the dorms. I played outside for a bit on the lush grass. I tried doing a workout, but my body was like, “Nay to that.” So I practiced handstands, pistol squats, and one-handed cartwheels (aerials one day maybe!).

I wanted green in my dinner:

img_3213

Then Megan and I warmed up our blueberry scones and added Kerrygold butter…

img_3214

…and raspberry preserves.

img_3215

The Irish do scones so right.

Then Megan and I spent over two hours making travel plans. Someone please be our travel agent and plan everything for us. We’re both indecisive and inexperienced, so planning anything is a game of, “Which airline? What’s cheaper? Is that safe? How does an Airbnb work?”

Sunday

Sleep in, work out for 20 minutes, eat yogurt, head to Mass.

img_3217

Then we brunched! I looked up the church and brunch place, choosing The Lovely Food Co.

img_3226 img_3220

clipboard menus, much aesthetic

There was no question about what I wanted after skimming the menu. I went for the oak-smoked salmon and crab sandwich on their housemade soda bread.

img_3243

The soda bread was pretty dry, but it went perfectly with the flavorful crab and salty smoked salmon. UGH, so good. And it was less than 8€!

Madre was in town, since she’s taking a grand two week tour around Ireland, just ’cause {I’m here}. Megan and I visited her hotel for the afternoon and spent several more hours travel planning. So far, we have planned two weekend trips and three cities for our mid-semester Europe tour. Not too shabby, but it probably took way longer than necessary.

We had our second round of sweets from Queen of Tarts to fuel our travel planning 😉

img_3230

Someone teach us how to adult.

We decompressed with dinner at Sophie’s Bar and Restaurant. It was an early birthday celebration for Madre, but Madre also treated us. ♥︎ ♥︎ ♥︎ Thank you, Ma!!

img_3238 img_3239 img_3231

we loved how they labeled the source of the butter

img_3232

smoked haddock risotto with teardrop peppers (so sweet and good!) and smoked cream to share for appetizer

img_3233

my corn-fed chicken (so tender and flavorful) with broccoli puree, broccolini, purple sprouts, and merlot vinaigrette

img_3234

Madre’s 8 oz. filet (melt-in-your-mouth) with black pudding mash (← black pudding bits in mashed potatoes, we think. it was good!)

img_3235

Megans’ fettuccine dish that she enjoyed!

img_3237

Madre’s choice for dessert: coconut parfait (more like a semifreddo) with pistachio ice cream and lime dressing

img_3241

they had swings by the elevators!

We also locked ourselves in the fire exit stairwell after dinner, but that’s a long story. It was so wonderful getting to see Madre all the way over here in Ireland. I’ll see her again when she gets back to Dublin after her two week tour!

Monday

First day of classes! I did a 30 minute HIIT workout in my room using resistance bands (that Madre brought me from home ♥︎) before eating breakfast and going to 2.5 hours of Contemporary Irish Society. We had a one hour lunch break, and then I had another 2.5 hours of Ethics in Healthcare. I think I’ll enjoy both classes and be especially challenged in the ethics class.

As much as I love eggs, buttered toast, and salad, I need to mix things up and go grocery shopping. One of the girls was making fajitas last night!

img_3249

But look at how golden the yolks are here.

img_3250

We also had our first fire drill as I was eating this dinner, but that’s okay. Safety and stuff, I guess.

Hope you all have a great week! Eat something with really good butter on it.

So tell me:

Three gorgeous things you’ve seen recently.

Have you ever eaten scones with butter and jam? If you haven’t, you must. Kerrygold butter, preferably.

Are you good at making travel plans? Any tips for the rookies?
