American Version of Ireland

It’s 12:15am and I’m eating frozen bananas while standing in front of my radiator.

But I wanted to blog! My brain can only organize things into an incoherent list right now though, so that’s what we’ll work with today.

This past week:

1) We had a snow day on Tuesday and it ruined everything.

My gross anatomy lab practical that was supposed to be last Tuesday is now tomorrow, the same day as the gross anatomy lecture exam. #ILoveEverything.

2) I can’t complain about sleeping in and having warm Slytherin socks though (thanks, Fiona ♥︎).

3) Megan and I also made a mini snowman after Mass that day.

3) Megan, Briana and I were craving a taste of Ireland on our snow day, so we baked Irish brown bread (one of our favorite foods when we were abroad) using this recipe. It ROCKED fresh out of the oven with butter and jam/honey. *Irish jig*

4) Another low regarding the snow/ice was that I walked 30 minutes to dance on Wednesday morning (and royally wiped out on the ice on the way there) all to find out that class was cancelled. ‘Twas totally my fault for not checking the facebook page for an update after the large snow storm.

5) I forgot how much I liked getting sandwiches/wraps at the dining hall until I ordered this beauty last week.

6) Some of my favorite moves and grooves from last week:

Wednesday: 10-1 pistol squat/burpee ladder (10 of each, then 9, 8,7…1) + squat clean practice

Saturday: 5 rounds of this functional workout from Peanut Butter Fingers + overhead squat practice

Friday: alllll the dancing for St. Paddy’s day!

7) I tried making a healthy homemade shamrock shake with peppermint stevia drops that had been sitting in my pantry unopened for ages.

My friends hate me for making this.

It was tasty and creamy, but I should have just left out the stevia because it wasn’t that strong, so I kept adding more until it just left a nasty aftertaste.

At least it wasn’t as sickeningly sweet as the McDonald’s version? And it’s green!

8) I helped out with a high school confirmation retreat on Saturday and the church spoiled the volunteers by inviting us to their St. Patrick’s/St. Joseph’s potluck dinner!

9) Despite the complain train of this post, I am truly grateful for the many wonderful people and privileges I have in my life. And especially this week, I am grateful for the little trials and heartaches that God uses to teach me how to be better.

Weekend Confessions + Vlog with Rachel

Confession #1: I miss blogging more often, and I’m sorry that I haven’t been posting very much lately!

Confession #2: I also don’t feel that guilty for not posting, because school is happenin’ and so is friend time. I love blogging, but it can be hard to choose screen time over a night out with friends, ya know?

Confession #3: I wore shorts and a tank top on November 5th in Boston, Massachusetts. HAHA. I was wearing my marshmallow coat three weeks ago. What are seasons?

Confession #4: Rachel and I decided to have best friend day on Saturday and made sure the whole world knew about it on Snapchat.

Confession #5: We could not stop saying “mmm” and “WOW” and “I can’t even” while eating this sandwich from Cutty’s (on our food bucket list!).

It’s called the “Roast Beef 1000” (slow-roasted beef, thousand island sauce, frizzled onions, and sharp cheddar on a brioche bun). Yeah.

We also both ordered the vegetable of the day, which was hot ‘n’ sour brussels sprouts. Also “mmmmm”-worthy.

Confession #6: We were so inspired by the brussels sprouts from lunch that we bought two bags of brussels sprouts from the grocery store, roasted them in the communal kitchen after dinner, and ate a whole tray of them within 15 minutes of them coming out of the oven.

Confession #7: Before our brussels extravaganza, Rachel and I were workout buddies. Except that we didn’t work out together.

We ran to the workout pad that I always go to, and while she continued running, I stopped and did six rounds of this workout until she ran back.

Confession #8: I’ve finished 5 large (32+ ounce) jars of peanut butter this semester. It’s fine.

Facts About My Recent Eats

I now firmly believe that spring is on its way.

Boston has been gracing us with some gorgeous weather these past few days (after snowing twice over the weekend), and I can’t help but smile as I walk down the streets, breathing in the urban smoke and bus fumes fresh air. It’s not quite warm yet, but as long as I don’t have to wear my marshmallow jacket, I’m good to go.

I really don’t have time for blogging this week, but I’m blogging anyway. As I said on Monday, blogging is therapeutic, especially since my posts are typically lighthearted. So today I’m sharing you some of my recent eats, along with some fun facts about each!

1) Pepper shakers don’t dispense the pepper fast enough for me.

I only add pepper to my eggs nowadays, but when I do, it’s like a Boston blizzard of pepper. I douse my omelets with it. Sometimes I take the top of the pepper shaker off if it’s not coming out fast enough.

2) The dining hall does not know what curry is.

This was sweet and sour chicken that they called “red curry chicken.” Delicious, but so incorrect. #offendedAsian

3) I didn’t finish off my almond butter jar just so I could have oatmeal in a jar.

These weren’t overnight oats, but it still hit the spot. I microwaved some quick oats with cinnamon, a pinch of salt, and water. Then I stirred in vanilla protein powder and a sliced banana before letting it cool and dumping it into the almost empty almond butter jar. Perfect.

4) Some days, I unintentionally go pescetarian.

Which is why I give up meat and peanut butter on Fridays during Lent, because giving up meat isn’t quite a huge sacrifice for me…

5) This Moroccan chicken and couscous dish had dried figs in it and I FREAKED OUT.

6) This was the sandwich of my dreams.

This was a whole wheat roll with roast beef, pepper jack cheese, lettuce, tomato, roasted vegetables, and honey mustard, all toasted until the cheese was melted. Yes, it was messy. Yes, it was bomb.

7) When the dining hall has Sargent Choice (all healthy options) night, I ironically become very stuffed because I want to try everything…because it’s all healthy, right?

8) Hi, my name is Alison, and I am a bananaholic.

I won’t deny that it’s a problem, but listen, I could be hoarding much worse things in my dorm.

The real reasons why I take so many bananas from the dining hall are the following:

  • I freeze some for snacks.
  • The bananas are usually greenish when I take them from the dining hall, so I let them ripen in the dorm for a little bit so that I can take them down to the dining hall to eat with my breakfast on a later day. I like my bananas slightly spotted when I’m eating them with toast, oatmeal, pancakes, etc. because they’re sweeter (and healthier!).

9) I’m on the brink of an emergency because I’m almost finished with my second jumbo Costco-sized jar of peanut butter of the semester.

Seven Things {+ I’m Going to Blend 2015!}

I’ve missed you!!!

Whether the feeling is mutual or not, I am sending you all e-hugs right now. It’s only been 5 days since I last blogged, but considering I had been blogging almost daily during my winter break, those 5 days felt like an eternity.

Now that we’ve e-hugged I’ve assaulted you with e-hugs, here are seven things that sum up my first week of second semester!

1) Lots of studying calls for ice cream.

When I realized how much studying will be required for anatomy and organic chemistry this semester, I made sure to decompress my brain with some delicious ice cream this weekend.

2) Snow!

We had our first snowfall of the semester on Saturday, and it was a cute prelude to the snowmageddon that’s supposed to hit the northeast tonight (stay safe and warm, friends!).

My roommate just informed me that a Boston University snow brawl is scheduled for Tuesday. DOWN.

3) Workout buddies make me happy.

I had three different workout buddies last week! Even if we’re not doing the same workout, the presence of another hard-working, sweaty pal definitely pushes me to work harder in the gym. Enough to make my hair look like it belongs in a forest/cage.

4) Morning workouts are quite enjoyable.

Now I see why healthy living bloggers are all about those AM endorphins! It feels great to wake up before the big rush of students and to get moving before sitting in class all day.

I will try to get up for morning workouts as often as my body and brain allow!

5) Sandwiches are my go-to.

There is an art to making a good sandwich, and although I appreciate every person who makes me a sandwich, there are certainly some people who know how to make better sandwiches. It’s all in the distribution of the ingredients.

6) I ♥ carbs.

My friend jokes around and says that I never eat any carbs, but that is a million miles from the truth. For instance, on Saturday I had tour guide training all day, during which they served us muffins, bagels, and pizza. I had all three, thankyouverymuch.

7) National Peanut Butter Day was celebrated ALL weekend.

Scratch that. National peanut butter day is celebrated all year round for me.

OH, BONUS TIDBIT: I’m going on the Blend 2015 Retreat! If you’re unfamiliar with what that is, Blend is a three day blogger/reader retreat (in Boulder, Colorado this year!) where you get to hang out, eat, move, and groove with fellow blog friends (“blends”). This will be my first time attending Blend, and I am STOKED.
