25 Things You Probably Don’t Know About Me

You know what hurts a lot?

Stubbing your toes. I get bruises, cuts, bumps, and scrapes all the time, but nothing hurts quite like when your poor little piggies get assaulted by a coffee table’s leg.

I bring that up because I just collapsed on the couch wailing at the world after stubbing my toe, while my brother and dad were watching the Democratic National Convention. They didn’t pay any attention to me, so I’m pleading for belated consolation.

On a happier note, today I’m doing a light-hearted survey that I found on Hayley’s blog a while ago. I’ve had deep thoughts for the past few posts, so this is a little break for me (and you). And who doesn’t love a good survey!?

25 Things You Probably Don’t Know About Me

Emphasis on “probably”, because Lord knows that I share about 90% of my life and thoughts on this blog.

1. I’m happiest when I’m praying in front of the Blessed Sacrament…

 2. especially if it’s on retreat. Truly a glimpse of Heaven.

3. I’ve always wanted to lay outside somewhere quiet and dark and stare at the stars with someone I love. Also to see the Northern Lights.

4. My family and I have a tradition of “the family hug”, in which we say “one, two, three, SQUEEZE”, subsequently squeezing each other in a four-way hug. Repeat for a total of three squeezes and then kiss one another on the cheek.

5. I was a terrible thrower. Still can’t really aim/follow through with any sort of projectile object.

6. My first job was searching and entering addresses into a spreadsheet for my dad.

7. I could probably eat (besides peanut butter and bananas) a sandwich every day.

8. I wish I could bring all my Boston friends to Dublin with me this fall. </3

9. I was born on the same day as Brooke Shields.

10. My all time favorite films are Anne of Green Gables, The Help, and The Princess Diaries.

11. I do a pretty mean British accent (but not on the spot, so don’t ask me to do it if you see me in person).

12. I’m still mad that I didn’t keep up my rigorous stretching after figure skating and high school dance.

13. I met my husband…  Did I!?

14. I always knew I wanted to pursue a job related to human movement. I wanted to be a dance choreographer (among other things) before gaining interest in physical therapy.

15. I’m not afraid to be vulnerable. I wasn’t always unafraid of vulnerability though! I credit a lot of good people at college for changing me.

16. I make the best overnight oats, yogurt bowls, and avocado egg toast (because I can’t actually come up with my own recipes for much).

17. I have absolutely no patience for rudeness toward anyone who is genuinely trying his/her best to provide good customer service.

18. I always cry when there is a sky full of stars (cue Coldplay).

19. I’m overwhelmed by the possible ways by which I can finish this sentence.

20. I spent 2 years playing lead roles in my middle school musicals. I was Molly in Annie, Jr. in 7th grade and Jasmine in Aladdin, Jr in 8th grade.

too small to fill out the scandalous “belly shirt” = wrinkly Jasmine

 21. I wish that every person had sufficient and convenient access to fresh water. (Ya know what, I’ll say what Hayley said: “I wish…everyone in the world had enough food, water, and shelter. And love.”)

22. At age 5, I was deeply in love with my Sailor Moon CD. I would sing and dance to the songs in my parents’ gigantic bathroom in Kansas, and Ben would film me. Video evidence is strictly confidential.

23. I believe if people took time to learn the complete truth before making judgements, the world would be a better place. Seeking truth will lead to Truth (aka God), and there would be a greater sense of understanding and peace in the world.

24. I can’t stand port-a-potties. I choose the woods over a port-a-potty any day.

25. Whenever “Can’t Stop the Feeling” by JT or “Let It Go” by James Bay is on the radio, I listen (changed this one, because I don’t really watch TV, but I listen to music like it’s my job).

WIAW: The Best Bite

Hi there!

Tuesday’s are always my days of sheer exhaustion. I skipped ballet class last night because I desperately needed a nap after an awards ceremony I attended, and I ended up sleeping until ballet class actually started. Whoops. I called in and told them I couldn’t make it because a) I would have been late; b) I was still exhausted. I’ll make up classes next week! If I didn’t have to eat dinner and do homework, I would have tried to sleep until the morning.

Other than my sleepiness, yesterday was lovely. And today is also lovely because I’m joining Jenn’s WIAW party!

WIAWbutton

I don’t know about you, but I eat my food sort of meticulously. Not in a pick-apart-my-food way, but in an I-wanna-get-that-perfect-bite way. I’ve talked about food ratio problems before, and this WIAW digs into similar details. There are always those bites that just have the perfect amount of everything and the perfect textures. Anyone else agree??

Thus, here are some of my recent eats + descriptions of the perfect bite from each!

Breakfasts

DSC_8092

Hot banana oats and Greek yogurt with sunflower seed butter

Best bite: The end of the bowl when there is a lot of sunflower seed butter left (since I save the best for last), a little bit of yogurt, and the oats are cooled and doughy.

DSC_8077

Oatmeal cookie dough smoothie (with spinach added) + Greek yogurt for dipping {recycled photo}

Best bite: The first one when the smoothie and Greek yogurt are still cold.

DSC_8101

Corn English muffin with sunflower seed butter and pepita sunseed butter + Greek yogurt with banana and honey

Best bite: Spoonful of yogurt with a banana slice, followed by a bite of the spot on the crispy English muffin that has an unusually thick layer of nut butter.

Snacks

photo 2

Green Machine Naked juice….I guess you can’t bite this.

DSC_8102

Romaine leaves + spiced (paprika?) brown rice crackers + hummus

Best bite: The crispy, cold romaine stem with hummus, followed by a bite of a cracker.

DSC_8103

Greek yogurt + half banana + peanut butter

Best bite: Small spoonful of yogurt, smidge of peanut butter, and one banana slice.

Lunches

(From the weekend)

DSC_8093

Purple sticky rice (no coconut milk in this batch), Laotian sausage, scrambled eggs + green beans. Eaten the Laotian way: with your fingers 🙂

Best bite: Little bit o’ rice with a bite of that fatty, amazing sausage, followed by a crunchy green bean.

DSC_8096

Almond butter and jelly on an English muffin + spinach salad with a HB egg (x2) and a simple dressing (olive oil, S+P, honey— my new favorite dressing!)

Best bite: A spot on the AB&J that had a lot of AB and a lot jelly.

Dinners

DSC_8087

Barley and curry chicken + spinach salad with the same dressing

Best bite: A piece of creamy curry chicken with a spoonful of the fluffy barley.

DSC_8091

Smoked salmon on toast with this honey mustard yogurt dill sauce + same salad

Best bite: Bite of the salmon toast followed by a bite of the salad. There’s not much else to this meal.

DSC_8104

Some kind of fish my mom got from a Chinese buffet + a crapton of spinach (I had other things along with this)

Best bite: Small pice of the fish (it was so salty!) with a LOT of spinach.

Desserts

DSC_8097

Mom’s coconut sticky rice with mango

Best bite: Perfect ratio of the creamy rice with the sweet mango.

DSC_8095

Peanut butter banana soft serve with cereal for crunch

Best bite: ….The whole dang thing. Except the last bite.

DSC_8085

Dried figs with Greek yogurt {recycled photo}

Best bite: What you see above— lots of Greek yogurt and a nibble of the dried fig.

Describing all these perfect bites is making my mouth water.

Happy Wednesday!

So tell me:

What is your perfect bite?

How do you feel about Tuesday’s?

So Many Emotions

Hello there!

Sorry for disappearing on Friday— I had my fascinating links and everything, and I was trying to type up a post in school, but there just wasn’t enough time. Thursday night was also a whirlwind, which you’ll see in a moment.

I’ve cried {good tears} THREE times in the past four days, so I’ve just been on an emotional roller coaster this weekend. Maybe I’m just hormonal??

MiMM

Linking up with Katie’s MIMM, because being emotional is marvelous 😉

Thursday

Feeling sad yet thankful at our last school concert. I’ve been involved in the music program at my school for 6 years now, so I’ve developed a great relationship with not only my peers in the music program, but my teachers as well. They’re some of the coolest people I know.

photo 1

Annual concert selfie with Daliza

My friend Daliza was bawling on stage (love you, lady), and the rest of us teared up a little bit too for our last song, “I Will” by the Beatles. Nope, this doesn’t usually happen to seniors at their last concert. We’re just a special breed.

We ate our feelings at the diner with our music teachers and all the seniors that performed.

Shared banana pancakes with Daliza

“Banana pancakes” just like Jack Johnson!

Friday

Feeling stunned that my friend Michael bought me not one, but TWO jars of no-salt, organic peanut butter. As if his prom-posal wasn’t awesome enough!! He says it’s a gift for all the times I’ve given him a ride and the one time I made him a strawberry banana smoothie, but uh…other than that, I didn’t do anything for these!

DSC_8088

Kid knows what he’s doing. Thanks so much, Michael! I’m set for a month now. Maybe. 😉

Feeling just pain emotional while listening to this heart-tugging original song:

Like, sobbing in my bedroom by myself.

Feeling disappointed that the avocado for which I had been patiently waiting to ripen turned out to be a dud. I cut it as usual, and when I twisted it open, the skin just came off by itself…

DSC_8090

I tried to salvage the avocado by cutting around the pit, but it was actually still really hard despite being on the counter to ripen for several days. When I tasted it, I could tell that there was something funky about it, so I chucked it. *sigh*

Saturday

Feeling blessed to see some of my third grade religion students receive their First Communion on such a glorious day!

photo 3

Little angels

Feeling like a bro driving with my window down and sun roof open. Heh.

Feeling energized after a nap and some awesome moves outside. I’m gettin’ a little better at those double unders! The most I strung together was 20. I also got some unassisted pistol squats in there! (I guess eating more helps you become stronger or something ;))

Feeling blissful eating peanut butter banana soft serve again (aka the most ingenious dessert known to mankind).

DSC_8095

Feeling inspired while watching the Crossfit Games Regionals online. They are all INSANE athletes. (<— Feeling guilty because I totally used this as procrastination from my economics paper…whoops.)

Sunday

Feeling touched by the support and love for our pastor at church who is retiring this year. I teared up when one of the other priests sang a song for our departing pastor at the end of our big thanksgiving Mass for him.

Feeling proud that I am Asian…Because I have a mother that can make things like coconut sticky rice with sweet, ripe mangoes.

DSC_8097

Mom: “It’s like a five-star restaurant!”

Indeed, ma!

Feeling confused because our power went out for about 15 minutes, even though the weather was perfect yesterday.

Feeling in awe of my superhero dad. He was serving others non-stop yesterday—giving out report cards at Sunday School, serving Mass, talking to people in the church, going to a pro-life rally, doing political campaigning, and mowing the lawn. Not a peep of a complaint came out of him.

Feeling triumphant finishing my economics paper and presentation!!! I deserve a superman cape too.

And that, my friends, is the palette of my colorful emotions this weekend. Hope you all have a great Monday!

So tell me:

________ made you happy/sad/excited/disappointed/confused this weekend.

What is your favorite ethnic dessert?

Have you ever had an avocado that did what mine did?!
