I Need to Focus + Energy Balls Recipe

Thinking-Out-Loud

Pretty sure Amanda came up with thinking out loud before Ed Sheeran

1) I’m so glad you all enjoyed yesterday’s vlog! Your comments totally made my day. Thank you! The terms “cute” and “adorable” were big themes in the comments though…

2) Shoutout to my friend Fiona for reminding me to change my age in my side bio. In the meantime, I also edited my About page and Blogroll. Check it!

3) I made balls yesterday! (<— balls jokes won’t get old.) They’re stereotypical energy balls, and they count as a recipe towards my summer bucket list! It’s kind of a cop-out, since this recipe didn’t take much thought or effort, but I’ll count it for now until my creative juices start flowing.

Into a food processor:

  • 1+1/3 c. quick oats
  • 1.5 c. roughly chopped dried figs
  • 1/4 c. peanut butter (any nut butter will work!)
  • 2 scoops (1/3-1/2 c.) vanilla protein powder
  • 2 tbsp. chia seeds
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/3 c. almond milk (just enough to get the mixture to bind)

Pulse until the ingredients are well combined and wet enough to bind. Wet your hands with water and roll into 1.5 tbsp-sized balls. Makes ~20!

Confession: I did not measure most of the ingredients. Those are just estimates. Luckily, recipes like these are very customizable and flexible!

4) I need to focus. I get way too distracted with technology and social media these days, and it eats up a lot of my time. I accomplish the tasks that need to be done, but I still find myself scrambling because I spent just a little too much time reading blogs or watching Youtube videos.

5) New goal (please keep me accountable): No casual perusing on social media/technology after I get home from my internship (anywhere from 5-6pm). If I go on to blog or do something with a specific goal, that’s cool, but otherwise I will spend my time reading or doing something productive around the house. This will hopefully help me get into bed earlier and feel more relaxed at night!

6) I also need to read more books— read things that are not pixelated. Basically, I need to be my own parent this summer: “No technology close to bedtime. Eat more to grow bigger. Do your reading.”

7) I liked this song when I heard it on the radio, but once I found out that it was a tribute to Paul Walker, I loved it.

Paul Walker was (and still is) my biggest celeb crush. What a beautiful man.

8) I am enjoying my physical therapy internship more and more every day. I’m learning bucketloads of information and practices on how to take care of the human body through movement. The best part is the people though. I love the interpersonal patient interactions and the one-on-one environment of this particular outpatient clinic. Can I just stay at my internship and not go to college?

…LOL. Dreaming.

9) If you ever make Gina’s cookie dough cereal (which you should, it’s delicious), make it with at least 1.5 tablespoons of nut butter. If not, two tablespoons. You won’t regret it.

10) Happy birthday to the humblest, gentlest, grooviest, most hardworking and pious man I know— Pop! I love you ♥

That’s it for today, friends! Hope you have a fantastic day. Eat more nut butter and unplug a little bit.

So tell me:

Who is your biggest celebrity crush?

Are you called cute often? Or another adjective?

Do you ever have trouble “unplugging”?

Spill It Sunday #3: All About Movies

I am currently soaking up some wonderful family time by the fire on this snowy Saturday evening. We had some comforting chili and cornbread, dessert, and are now watching Baby’s Day Out. It’s a pretty old movie (1994), but it never fails to make us laugh because it’s one of those unrealistic, ridiculous family comedies. The baby is so dang adorable too, so that’s an automatic plus.

Speaking of movies, this week’s Spill It Sunday is all about them! I’ve never been a huge movie person— I’m usually too antsy to sit for more than 2 hours. Like, how do some people just casually pop in a movie every night? Watching a movie has always been its own little special occasion in my mind, so I need to set aside a time for doing so. I also don’t have an interest in anything that is intensely confusing, scary, or vulgar. That covers about 85% of the films that are usually out in theaters, right? (Considering I get scared watching Harry Potter.)

Anyway, as I’ve said before, I really love typing up these posts. Arman is brilliant. Go check out his blog to see what other bloggers are spillin’!

The Big Man's World

Favorite genre: As you’ll be able to tell, my movie preferences are not very profound. My favorite genre would have to be comedy because I like to leave my movie experience on a high note, rather than thinking, “Wow, I’m kind of questioning life right now.” I guess it’s obvious then that I also tend to like movies with happy endings and a little bit of romance.

Favorite movies of all time:
1. Anne of Green Gables — Such a heartwarming classic. My mom and I love to watch the whole series around this time of year because it gives us major fuzzies. 🙂

2. Eight Below — It miiiight be because Paul Walker was in it (*sniff*), but I’ve loved this movie ever since I first watched it in fifth grade. I’m not even the biggest dog person, but I really enjoy the film’s lovely combo of action, romance, comedy, and drama, without being over the top with any of those.

3. The Hunger Games — Because I’m a stereotypical teenager, alright? 😉 And once I finish reading Catching Fire, I plan on watching that and hopefully loving it too.

Honorable Mention: FireproofLes Miserables (the old version), The Blind Side

Guilty Pleasure Movies:

1. The Princess Diaries — Both the first and the second movie! I’m pretty sure every girl my age has seen these movies at least once. It’s Anne Hathaway in her prime.

2. Rush Hour — It’s my home boy Jackie Chan and the hilarious Chris Tucker! How could you not laugh when watching them fight crazy assassins together??

3. Surf’s Up — This is probably one of the funniest cartoons I’ve ever seen. My mom even loves it because the sarcasm and mannerisms of the animal characters are unexpected and hilarious!

Worst movie ever:

I’ve disliked plenty of movies in the past, but the one that sticks out in my mind is Cloud Atlas.

Seriously, what the heck is happening in that movie? I think I went to go see it in theaters last year with my dad, and I closed my eyes half of the time because of the violence and subtle horror. My dad also had enough of it about an hour and a half into the movie, so we left. I’m sure a lot of people understood the meaning of this movie and loved it. It was just SO confusing to me because the plot jumped back and forth between different time periods of the past, present, and future. Yet there was some sort of underlying secret of time and life that intertwined all of the people and why they were all dying…. or something. I have no idea.

If I made a movie…

It would probably be about my grandparents’ generation. I think the drama and struggles of Asian families just a few generations ago is extremely fascinating and surprising in many instances. I’m blown away by some of the stories I hear from my parents, aunts, uncles, and grandparents either through oral storytelling or memoirs that my relatives have written. The movie would give insight into family tensions and betrayals, discipline in Asian families, duties of the children, life during wars, conversion stories, and other juicy details. Can I get a filmmaker to help me make this happen?  Daliza?! (<— my friend who wants to study film!)

Movies I Want to Watch:

  • Silver Linings Playbook
  • Catching Fire
  • The Help
  • Bridesmaids

Well, that’s about as deep as my movie background goes! Just call me a movie guru. 😉

So tell me: What’s YOUR favorite movie? Least favorite? Guilty pleasure movie? Any suggestions on which ones I should watch??
