Facts About My Recent Eats

I now firmly believe that spring is on its way.

Boston has been gracing us with some gorgeous weather these past few days (after snowing twice over the weekend), and I can’t help but smile as I walk down the streets, breathing in the urban smoke and bus fumes fresh air. It’s not quite warm yet, but as long as I don’t have to wear my marshmallow jacket, I’m good to go.

I really don’t have time for blogging this week, but I’m blogging anyway. As I said on Monday, blogging is therapeutic, especially since my posts are typically lighthearted. So today I’m sharing you some of my recent eats, along with some fun facts about each!

Thinking-Out-Loud

1) Pepper shakers don’t dispense the pepper fast enough for me.

I only add pepper to my eggs nowadays, but when I do, it’s like a Boston blizzard of pepper. I douse my omelets with it. Sometimes I take the top of the pepper shaker off if it’s not coming out fast enough.

2) The dining hall does not know what curry is.

This was sweet and sour chicken that they called “red curry chicken.” Delicious, but so incorrect. #offendedAsian

3) I didn’t finish off my almond butter jar just so I could have oatmeal in a jar.

These weren’t overnight oats, but it still hit the spot. I microwaved some quick oats with cinnamon, a pinch of salt, and water. Then I stirred in vanilla protein powder and a sliced banana before letting it cool and dumping it into the almost empty almond butter jar. Perfect.

4) Some days, I unintentionally go pescetarian.

Which is why I give up meat and peanut butter on Fridays during Lent, because giving up meat isn’t quite a huge sacrifice for me…

5) This Moroccan chicken and couscous dish had dried figs in it and I FREAKED OUT.

I freaked out because I ♥ dried figs and this made me very happy.

6) This was the sandwich of my dreams.

This was a whole wheat roll with roast beef, pepper jack cheese, lettuce, tomato, roasted vegetables, and honey mustard, all toasted until the cheese was melted. Yes, it was messy. Yes, it was bomb.

7) When the dining hall has Sargent Choice (all healthy options) night, I ironically become very stuffed because I want to try everything…because it’s all healthy, right?

8) Hi, my name is Alison, and I am a bananaholic.

I won’t deny that it’s a problem, but listen, I could be hoarding much worse things in my dorm.

The real reasons why I take so many bananas from the dining hall are the following:

  • I freeze some for snacks.
  • The bananas are usually greenish when I take them from the dining hall, so I let them ripen in the dorm for a little bit so that I can take them down to the dining hall to eat with my breakfast on a later day. I like my bananas slightly spotted when I’m eating them with toast, oatmeal, pancakes, etc. because they’re sweeter (and healthier!).

9) I’m on the brink of an emergency because I’m almost finished with my second jumbo Costco-sized jar of peanut butter of the semester.

Virtual Breakfast Date

…We would give thanks to God for having food to keep us nourished 🙂

…You would see that my breakfast has peanut butter and banana in it, and you’d roll your eyes at me because what else is new? If you have peanut butter and banana in your breakfast too, consider us best friends. If you don’t, consider us frienemies (just kidding, still best friends).

…I would tell you that Boston University has not had a full week of school yet this semester, and we will not have a full week of school until at least the week of February 23. Why? Because we have another snow day today (CRAZY!) and it’s President’s Day next Monday, so we have the day off.

…I would tell you that this is a sign to just adopt the four day work week.

…I would tell you that I’ve been eating bacon for breakfast sometimes, and I don’t hate it.

…I would tell you that I’m a flippin’ DOOFUS. Exhibit A: I almost wore socks and sandals outside on two occasions (and apparently with the same pair of jeans). I wear socks with sandals inside my dorm because it’s convenient and so Gucci, but I’m not willing to share that kind of style with the rest of the world.

Exhibit B: I was trying to do a little oats-in-a-jar action in the dining hall with my almost empty sunflower seed butter jar, but I didn’t wait long enough for the hot oatmeal to cool down before I put it into the plastic jar. I took a few bites of the oats and immediately noticed a plastic-y taste. I reasoned that consuming carcinogenic material was not worth the sunflower seed butter goodness, so I chucked it and ate French toast instead. Goooooo me!

…I would tell you that Tori Kelly’s new single, “Nobody Love”, came out yesterday and it’s perfect.

WIAW: Something Old, Something New

Howdy!

I want to thank you all for your support and advice yesterday. It’s assuring to hear that a lot of other people are going through similar experiences— it just goes to show how hard it really is to rest more and eat more!

Unlike last week’s WIAW, which was all about recurring food themes, I’m going to attempt to bring a little more variety to the table with some new foods and some foods that I’m bringin’ back from the past. If you follow me on Instagram, you’ll know that I’ve been posting meals like it’s my job. Maybe one of these days I’ll actually post a picture of something other than food… But food is usually more interesting than, say, my face? Or the generic sunset/fresh snow/cat-all-up-in-my-grill picture? Not that those aren’t fun to look at though! I don’t know where I’m going with this. I’m done. Food pictures.

New-ish: Greek yogurt with sliced banana, a strawberry banana muffin, chia seeds, hemp hearts, and a big spoonful of pepita sun seed butter. This was so good that I had it again the next morning…and again yesterday morning.

New: Sushi date with a couple girl friends! Eel cucumber roll and Fantastic Roll (tuna, salmon, yellowtail, avocado, and marbled seaweed with a special dipping sauce). YUMFREAKINGTASTIC.

Bringin’ it back: Kylie’s Whole Grain Crust Pizza Quiche! I made this once before, and I thought it was due time to make it again. I don’t make a recipe more than once very often!

New: Homemade whole wheat crust margarita pizza! I was ridiculously close to tossing the dough when I made it, but I’m glad I stuck with it. It turned out quite tasty!

Bringin’ it back: PEANUT BUTTER BANANA SOFT SERVE!!! With some Greek yogurt for added creaminess and protein. I’ll be adding the Greek yogurt from now on— so good!

I also want to add that my “little sister” from dance company, Lilly, tried overnight oats for the first time and LOVED them! I was a little too excited.

It was certainly nice to add some more fun flavors to my palate this week. Although, I could probably live off of just bananas, yogurt, avocado, brown rice, and grilled chicken.

Happy Wednesday! Yesterday was a half day because of the snow storm, and today may or may not be a two-hour delay…(I’m typing this on Tuesday night). Either way, stay safe and warm wherever you are!

WIAW: One Week of Blogging

‘Tis another Wednesday, which means another WIAW! The super duper host Jenn is hangin’ in there with little chickpea in the womb!

It’s been one week since I started this li’l blog here. I can gush and say how it feels like I’ve been blogging for sooo long already and how I love love love it (the latter is true though), but then I’d sound like those silly middle schoolers (and high schoolers, let’s be real) who celebrate their first week-a-versaries with picture edits and kissy faces on every social media network.

But honestly, the blogging community has already made me feel welcome, and I’m so thankful for their support and the support of my family and friends.

So here is what I ate last Wednesday Tuesday:

Breakfast

Overnight oats in a sunflower seed butter jar! Topped with Special K strawberry cereal for crunch later. Kath was right–it is THE BEST.

It ain’t pretty, but it tastes amazing in my opinion. For those of you who are asking yourself why it looks like I ate baby barf for breakfast, do not fear! Overnight oats are a cold preparation of oatmeal in which you let rolled oats soak in either milk or a mix of milk and yogurt (how I like it), along with things like fruit, nut butter (absolute necessity for me), seeds/nuts, and whatever else you like. Mix it all together (Hannah Montana throwback whoa) in the morning and that’s your breakfast! It’s best in an almost empty nut butter jar as seen above. Just ask almost any healthy living blogger.

Overnight oats are probably not for everyone. I loved it from the first day I tried it about a year ago, and it has become my all-time favorite breakfast thanks to Kath (from Kath Eats Real Food). She makes her overnight oats look much more appealing than mine though. I’ll work on it.

Lunch

Snack

Dinner

Flatout wrap with spinach, salmon, tomatoes, salsa. Strawberries and crackers with more salsa on the side.

I definitely ate more strawberries. Three doesn’t cut it.

For a late night snack, I shared a piece of Georgia peach bread with my mom and had some plain yogurt with half an orange before bed.

It was a delicious day of eats, if I do say so myself! Looking back at this makes me SO excited to be cooking meals at home for ourselves again. Eating out has been nice, but I miss my own food too. ESPECIALLY breakfast…

…DID YOU KNOW that I didn’t have any nut/seed butter with my breakfast the past two days?! I think I broke a very long streak, because I have had some kind of nut/seed butter somewhere in my breakfast every single morning for the past, I dunno, year (more or less)? Surprisingly, I’m not as disappointed as I thought I’d be. There’s more to life than nut butter, Alison.
