Hole-y Weekend

You know there are donuts and bagels involved in this post.

But first, can we talk about how it is absolutely frigid outside? Two weeks ago, the northeast was blessed with gorgeous weather, and now there’s this.

But thank God for warm sunshine, warm clothes, warm radiators, and warm hearts.

There’s supposed to a blizzard tomorrow, and this is the one time I am praying there is NOT a snow day, because I have a huge lab practical exam for gross anatomy that I would like to get over with ASAP. Please and thank you. The world revolves around me.

Before leaving home in New York on Friday morning, I made French toast for Madre, Brother Sam, and myself. It was some of the best French toast I’ve ever made! I think the keys were:

  • drying out the bread on a cooling rack overnight
  • adding more milk to the egg mixture (allows the inside of the toast to be more fluffy!)
  • sprinkling cinnamon over the bread after soaking it in the egg mixture, rather than adding cinnamon to the egg mixture (the latter causes clumps of cinnamon to form on the French toast)
  • using medium heat for the skillet
  • using a healthy dose of real butter for the skillet

Now that I’m back in the apartment, my food photo effort has decreased significantly, but the food has still been tasty.

On Saturday night (after a 1.5-hour nap at 5pm + this Fitness Blender workout) I cooked one of the best meals in my apartment this year. I bought this Korean BBQ marinade from Thrive Market and used it to marinate chicken thighs (soooo much more flavorful and moist than chicken breast—just do it) for a few hours before grilling them.

Besides cooking and working, the rest of my weekend has involved lots of studying for that lab practical. Since I took a 1.5-hour nap on Saturday night, I ended up going to bed at 2am, which was actually 3am thanks to DST. Haha.

Sunday involved a lot of fun shenanigans though! First was my attempt at Crossfit Open Workout 17.1.

The movements and equipment are accessible to me, so I thought I’d just go for it, but I definitely had to scale it. I used a 25-lb. dumbbell instead of a 35, and my gym only had an 18-in. or 24-in. box, so I used the 18-in.

And I still DIED. I had 7 burpee box jump-overs left by the 20 minute time cap. Womp womp. It was a “fun” workout though! Perhaps I will try it again later.

After I was annihilated, I showered and went to lab to study for a bit before meeting with Fiona, Rachel, and Austin for food bucket listing! On our list for the afternoon was Bagelsaurus for a sea salt bagel and Union Square Donuts for the PB&J donut (I gave up pb for Lent, but since it was Sunday, Rachel and I agreed that it would okay for me to have at least a bite of the donut).

Situation: Both places closed at 3pm, we were getting an Uber at around 2pm, and the walk between the two places was 28 minutes. Rachel and I thought we should divide and conquer, but Austin (the marathon runner) and Fiona (the army gal) convinced us that all of us could book it and make it to both places (because one of our rules for food bucket listing is that we go with each other to the actual store and buy the food together). Friends motivating friends for love of food.

I’m glad they pushed us, because we made it!

Sadly, Union Square Donuts did not have the PB&J donut that day, but we decided to still cross it off the bucket list. Instead, we ordered six donuts to split between the four of us (omg so much donut).

Let’s talk about donuts. These were delicious. But since donuts aren’t my dessert of choice (I feel like it’s difficult to get really good flavor into a donut), none of them blew me away. The raspberry basil was probably my favorite though, because the basil packed a surprising punch. We were all super excited for the sea salted bourbon caramel, but it was kinda disappointing. Too much bourbon, not enough caramel. Like I said though, these were all delicious still! Good quality donuts for sure.

We bought the donuts first but ate them after our bagel sandwiches at Bagelsaurus.

I got the “Eggspañola” on a sea salt bagel, which was an over medium egg, pimento aioli, feta cheese, parsley gremolata, and I added avocado.

This was also fantastic! I loved the flavors of the pimento aioli and parsley gremolata + the saltiness of the feta + creaminess of the avocado + richness of the egg. The bagel was really chewy though, so with every bite, everything slid out of the sandwich. ‘Twas a blissfully messy situation.

(I still liked my NY bagel from last week better. I’ve had one NY bagel and now I know everything about bagels.)

Eating bagels and donuts in one afternoon… You could call it a “hole-y” Sunday (creds to all my friends for coming up with great donut/bagel puns).

We did also go to Mass at night, making it a truly holy Sunday 🙂

Lastly, we rang in the new week with my friend Lauren’s 21st!!

Big Kids in the Big City

I just finished one of the best smoothie bowls I’ve ever made!

How I made it: Last night I mixed together 1/3 c. milk, 1/4 c. Greek yogurt, 1/4 c. [dry] quick cooking steel cut oats, 1 tbsp. chia seeds in a bowl. I also sliced and froze a whole ripe banana and half a mango. This morning I added to a blender another 1/2 c. milk, the oat mixture, a lot of mixed greens, a pinch of salt, a drizzle of honey, and the frozen fruit. Then I blended ’til the cows came home (probably also ’til I woke up Madre, sorry :/ ).

This was the thickest and coldest smoothie ever, thanks to the overnight chia mixture + the frozen fruit. Topped with sunflower seeds, Honey Bunches of Oats, and sweetened shredded coconut.

All I need is a tropical beach.

On Wednesday I had the privilege of hanging out with some of my beautiful friends from Boston University in NYC! Casey, Connor, Louis, Adrienne, and Fiona ♥︎

We met up in Times Square and walked almost 4 miles down to The World Trade Center from there. We lucked out with some gorgeous weather!

It’s called Best Bagel and Coffee, which is the most gimmicky name ever, but over 1,000 people on Yelp loved it, so I went. In Yelp I trust.

I went for bacon, egg, and cheese on a whole wheat everything bagel.

Indeed, this was whole and everything.

Confession: This was my first NY bagel in my entire life. Like, I’ve eaten bagels in the state of New York, but I’ve never had a quality NY bagel until this day. I’ve only lived here for 12 years. I’m a slow person in many regards.

My bagel sandwich was absolutely delicious and great walking fuel while the rest of my friends built up a “hangry” appetite for lunch by the time we arrived at the World Trade Center. It’s so interesting being the only nourished one in the group. You just watch everyone else get angry and/or delirious.

After they were all fed at a gastropub called Suspenders, we walked around to the 9/11 Memorial.

A delightful amount of food, a crap ton of walking, and countless laughs with some of my favorite people (I kind of hate myself for the cheesiness of that last one…but it’s true).

When I got home, my body wasn’t sore and had a lot of energy for the first time this whole week, so I did a quick 16 minute workout in the basement (30 seconds work/10 seconds rest/4 rounds):

Yesterday started with that smoothie up there + a manicure and pedicure with Madre early in the morning, because I had to take a train right back into the city for lunch with Pop, my brother, and Christine from Boutiquefull (also my good friend from BU)! Christine met my brother and dad in NYC, since they all work down there, so Pop asked to take us out to lunch one day.

I wouldn’t usually take a 40 minute train + 20 minute subway ride just to eat lunch in NYC, but I’d do it for these folks 🙂

After lunch, I headed uptown to meet with a couple of the Sisters of Life. I signed up to be a co-worker for them, which is essentially a volunteer to help women in crisis pregnancies (with resources, babysitting, material donations, praying, just being a friend, etc.), so we just chatted about that and all about life (duh).

All the Sisters of Life are just pure JOY. Ugh. Love ’em.

I’m Happier Without Instagram

SNOW DAY!!!

It’s been two years since our last snow day here at BU. The last time this happened, we were experiencing snowpocalypse and had 5 snow days on almost every Monday of the week from January-February.

Yesterday it was sunny and warm, except for the morning when I got to ice skate to dance class. This is actual footage of me walking  perilously penguin shuffling across the frozen-over bridge.

I have never more greatly appreciated the function of salt on the sidewalks.

From salt and snow to INSTAGRAM. (#NoSegueNoProblem #BloggerLife)

I’ve been on a break from (what used to be) my favorite social media platform for over a month now. I miss it sometimes as I’m not “in the loop” with health living bloggers and friends as much anymore, but I can’t say that I truly miss it. In fact, I dare say that I am much happier without Instagram.

The main reason for which I am happier is that Instagram was a comparison trap for me, whether I liked to admit it or not, and now I’ve finally cut it out of my life. This mostly applies to fitness. I am much more content with my workouts (vs. thinking about the workout that someone else posted on Instagram today), and I’m less concerned about what my body looks like on a day to day basis.

The temptation to obsess over comments, likes, followers and notifications is gone.

I feel incredibly liberated in not having any social media icons on my phone. I don’t mindlessly pick up my phone to check notifications anymore. My right thumb also feels less fatigued due to less scrolling (true story).

My attention span has probably improved.

I don’t crave noise as much anymore. In fact, I find myself craving silence, which never used to happen.

I take fewer photos, which might be more of an advantage for my friends/family than it is for me.

I just have more brain space without Instagram.

Disclaimers: I do still have Facebook, because it’s a practical way to stay in touch with people and organize school events. Plus, the temptation to scroll on FB isn’t as great as it is on Instagram. Also, I’m not at all saying that everyone will be happier without Instagram. I just know for myself that Instagram has more negative than positive effects on my life.

I’m only a little bit sad to be admitting all of this. I did enjoy sharing workouts and tidbits of life, but I don’t need it, and others don’t need my Instagram presence. I’d say a personal blog is enough of me in the world wide web.

And Just Like That, I Got Busy

Leave it to me to make a 12-credit schedule feel like a 20-credit schedule.

I feel like the busyness dial went from 1 to 100 in the past week, but I cannot complain. I don’t have that much time to write this (sleep is calling), but I thought I’d share some of the things that are filling up my days this spring semester!

I bought a 5-class pass for a modern dance class in Cambridge, since the dance class I usually take on campus was under-enrolled this semester. I don’t care that I have to pay extra and walk 35 minutes to and from the dance class, because this girl wants to DANCE.

Last week, a couple of my dear friends were sick up the wazoo, so they needed a lot of TLC. My friend Sarah and I made Rachel loads of chicken noodle soup. And then poor Sarah needed some Gatorade and crackers a few days later… 😦

Megan is a fantastic roommate for many reasons. She cleans things when I’m not around, helps me study for gross anatomy, and teaches me how to properly use chopsticks, because I’m the worst Asian and have never actually used chopsticks correctly (I cross them when I use them).

I went to the dining hall for the first time in eight months last week, and it was fun being in the world of endless buffet again.

I am working again, which involves cooking up a HURRICANE for my bosses. Last week I made them meatloaf, salmon, baked chicken parm, tuna salad, barley risotto, and roasted veggies. Yes, it did take forever. Yes, I did taste every single one of them.

I will be killing more trees this semester than I ever have in a single semester. Gross anatomy requires all the printing of notes and all the flashcards.

Megan and I had a Dublin reunion with our lovely friend Cristen this weekend! She goes to a different school, so we met up in Boston for an Italian lunch. (Megan and I miss Italy so much.)

Megan and I were pretty darn hungry, so we split a meatball panini + side salad…

…and ordered our own pasta dishes. I got the spaghetti all’amatriciana (tomato sauce with pork cheek, onions, and pecorino cheese HOLY MOLY).

Other reasons why I fail as an Asian: I had no dim sum on Chinese New Year. Instead, I ate pasta, meatballs, and pizza. #identitycrisis?

National peanut butter day was last week, and I didn’t even know until Cristen texted me to remind me. Every day is national peanut butter day to me, so it all melds together.

I’ve gotten a couple great gym workouts in this past week + some much-needed yoga/walking days. Check out this intention wall in our gym!

We had a SEEK reunion on Saturday night, and one of the activities was eating pizza with RULES. We were all numbered off 1, 2, or 3. Ones couldn’t feed themselves their own pizza, twos couldn’t touch their own beverages, and threes couldn’t touch their own napkins. Everyone had to help each other. I was a one, so Fiona and Rachel kindly fed me my pizza (which made me slow down significantly and appreciate each bite).

Apartment living has been a little more time-consuming than dorm life, but I’m loving it.

Although I have to remember that I’m not grocery shopping for a family of four anymore. I may have bought a huge box of salad greens that could feed 10 people. Hence the green in every food I make these days.

Lastly, I’ve tried to make time for reflection, prayer, and good conversation in all my days. I could take the extra hour (or two) to study, but I know that I will not be well overall if I continuously go without filling my soul.

Before Going Back to Reality

I’m going back to Boston today!!!

As sad as I am to be leaving my family, I am very looking forward to being with my friends and doing all the learning and activities back at Boston University. It’s been almost 8 months after all!

I don’t know how I’ll do jumping back into reality after what feels like a five month vacation (with study abroad and winter break), but these last few days of break have been the perfect last hurrah.

Here are some things I’ve done before going back to reality:

1) Made my favorite green silver dollar banana pancakes from The Healthy Maven on Thursday morning.

2) Gone on long, contemplative walks around the neighborhood.

3) Had lots of solo dance parties in my room.

4) Tried a new fitness class for free with a voucher that came in the mail! It’s called Body Burn, and I think the concept is similar to that of Orange Theory Fitness. You wear a Polar heart rate monitor across your chest, and you try to keep up your HR elevated at around 80-90% of your max HR throughout the entire 45 minute circuit training class.

Since I went to the relatively new Friday 9AM class, I was the only one who showed up, so it was basically a 30 minute personal class with a swole Italian-American trainer. It was fun! Some treadmill, rowing, TRX, weights, resistance band work, and abs. It wasn’t the hardest thing ever, but I wasn’t pushing myself that hard (my quads were still sore from Wednesday + plantar fasciitis). Hopefully I can go again one day!

5) I’ve eaten a lot of cold roasted vegetables straight out of their container. Doesn’t take much to please me.

8) I saw Daliza and Michael on Friday night! It was lovely catching up with those two.

9) The fam and I attended a 6 hour defensive drivers’ course on Saturday. #weekendthings. It’s for insurance reduction. We went three years ago to a different company’s course, but this year’s by AAA was a lot more interactive and less boring 🙂

10) We went to Mass and a huge, fancy {Groupon} dinner at  Xaviars X2O on the Hudson on Saturday night!

We share everything when we eat out, but this was still SO MUCH FOOD (thanks to Groupon – three courses were included for EACH person!). And if what’s pictured above wasn’t enough, Pop had a pâté plate for his appetizer, Ben had pork chop for his entree, Madre had an incredible stuffed chicken for hers, and Pop had rabbit and egg noodles for his. They also had complimentary cheese biscuits to start, so you know we were on board for that.

The food and the company were just splendid 🙂

10) I ate some refreshing soluble fiber the next morning in the form of delicious chia egg white banana oats for the first time in a long time!

11) I’ve been movin’ and groovin’ in the good ol’ basement.

  • Saturday: Michelle and Lori’s 100 burpee workout (subbed full burpees for the side burpees) before the defensive drivers’ course
  • Sunday: 700 reps of Jess’ killer 1000 rep workout (subbed bent over rows for the T pushups)

My workouts were feeling just meh last week, which is totally fine, but it was nice to finally feel like I could attack Sunday’s workout and finish feeling totally spent!

14) I’ve indulged in watching Kyle Hanagami’s dance choreography on repeat.

I can’t wait to dance again (not this well, but I can try)!

15) Lastly, I’ve been blogging (obviously). I will miss the freedom to blog at a leisurely pace, but alas, schoolwork calls!
