Boston to New York to Boulder

Good morning, sunshine (from Boulder, Colorado)!

Before I give you the lowdown on how I got to Boulder, I want to wish all the mamas in the world a {belated} Happy Mother’s Day! Y’all are real life superheroes— ones who are beautiful, strong, and loving. Of course, I am especially thankful for my own mother. I love you so much, Madre!

Alrighty. What the heck is up!?

I finished my freshman year of college!!! All I can think is: “That just happened” and “IT’S BLOWING MY MIND.” I’ll expand more on my feels tomorrow.

Final exams came and went, and so far they went well, despite organic chemistry being a sweaty and sniffly experience. While I was taking my last final on Friday, Madre helped me move out all my stuff from the dorm (I’m telling you— superwoman), and then we departed from Boston.

I had a heavy heart saying goodbye to my friends and to the city of Boston, especially when my roommate threw this sap bomb on me:

jordan surprise

the cutest way to ask me to be her roomie again // love you, girl!

Also, Rachel wrote me the most heartfelt note that triggered some waterworks. But I’ll be back in Boston a couple times this summer to visit some friends, so it won’t be long until I return!

Upon arriving at home in New York (which almost feels like my secondary home now— whoa), I was craving my favorite oatmeal cookie dough smoothie, so that’s what I ate for dinner.

with plain Greek yogurt for dipping, like old times

I also picked up some tapioca pudding at the grocery store. I’d say I got it because it’s my childhood favorite, but I probably got it mostly because I was feeling emotional/moody/tired. No regrets.

Saturday was pretty busy, but I made sure to start it off right by “makin’ banana pancakes…” (I used this recipe from Cookin’ Canuck.)

eaten with plain Greek yogurt, Nuttzo power fuel, and maple syrup // these were fat and fluffy pancakes! 🙂

And lunch was mama’s home cooking, which is always a win.

After a long day of unpacking from Boston, packing for Colorado, working on a top secret Mother’s Day project for Madre, and Mass, my family and I went out for dinner at an upscale Laotian restaurant in the city called Khe-Yo.

We ordered the special tasting menu, hence the epic amount of food (which we almost totally finished). So much delicious fish and so much sticky rice— Laotian food done right.

Our 4:45 AM wakeup on Sunday came much too quickly after I stayed up late packing, but I was still pumped to be en route to Colorado with my mom and brother. We’re here to explore Boulder for a few days, and then I’m going to Blend at the end of this week!

I very much appreciated this treadmill desk // found in the Minneapolis airport during our layover

We traveled all yesterday morning, and then the rest of our day in Boulder involved lunch at Whole Foods, shopping, a workout, dinner, and blogging!

Today we’re going to Red Rocks Park & Amphitheater! I am so excited for our Colorado adventures. I love seeing the mountains and breathing in the fresh air. The only thing that is throwing me for a loop is the SNOW that’s on the ground. Cue flashbacks to our snow-tastic Boston winter that lasted a little too long.

I hope you all have a lovely day!

So tell me:

What food were you craving this weekend?

Have you ever been to Denver or Boulder, CO? What do you love to do there!?

If you went away for college, did you feel like college became your home?

Secrets of the Weekend

Good morning!

It’s gettin’ hot up in here!!!….

…Because our AC isn’t working and it finally hit 80F in our area this weekend. I mean, I guess I’ve been wishing for heat since the black hole of winter seemed to take forever to leave us, but I’m not a fan. I just WANT a fan. (I’m over-exaggerating. It’s really not that bad at all— I get to sleep without a blanket and I don’t have to dry my hair!)

Besides that, my weekend was pretty darn marvelous!

MiMM

Check out all the marvelousness of Monday over on Katie‘s blog!

For this weekend recap, I’m gonna tell you all the fun stuff that happened as usual, but I’m also going to let you in on a few secrets about each thing. Consider it a trip inside my noggin (remember when I was pondering calling my Thursday thoughts posts “Loggin’ the Noggin?“). That is, if you even want to go into that weird place that is my brain.

Friday

Dance company auditions for the 2014-2015 company were on Friday, and even though current company members do not have to re-audition (and senior company members are leaving for college), we all still attend and do the audition class to set an example for the potential incomers. I think it went well for everyone!

Secret about the audition: A lot of girls dancing together in a stuffy studio = STINKY. It was a little tough to breathe in there sometimes, not gonna lie.

In the evening, I went to go get ice cream with my friend Michael (my super cool prom date)! We had a nice time chatting about college and such. We also went to the grocery store next door so I could buy bananas, because I need more spotty bananas in my life.

Secret about this ice cream: It’s “almond cream” Italian ice, and I was kinda disappointed because I really wanted creamy gelato instead.

Secret about when I got home: I ate a spoonful of peanut butter.

Saturday

On Saturday morning, company had a quick and low-key dance rehearsal for a show coming up in June.

Secret about the rehearsal: I was practically falling asleep because those dance studios are like saunas.

When I got home, I ate lunch and made these “Carrot Spice Scones” from a box mix my mom bought from Bed, Bath, and Beyond for $1.50.

DSC_8072

Secret about this “scone”: The package falsely advertised these as scones, because they were WAY too fluffy to be scones. These were more like muffin tops, which isn’t a bad thing at all. 🙂

Mother’s Day Sunday

Breakfast in bed for my beloved mother! She is obsessed with all things coconut, so I was basically obliged to make her something coconutty. I decided on coconut-crusted cinnamon raisin French toast for the queen.

DSC_8074

Secret behind this breakfast: I only made one thing on this plate— the French toast. My dad cooked the turkey sausage and my mom had cut that fruit a few days before. Heh.

I made some French toast for myself as well while we were at it. I topped mine with Greek yogurt, peanut butter, seared banana slices, and maple syrup. Glass o’ soy milk on the side.

DSC_8076

So awesome.

Then, since I went to bed super late on Saturday night and woke up early to make breakfast, I took a super long nap on the couch. It was gloooorious and it got me energized for some outdoor moves. I was really in the mood to jump rope, so I completed Julie’s Jump Rope + Lower Body Workout with just bodyweight.

Secret about working out outside: Since I was using my phone as a timer, I left it out on the mat under the sun, which resulted in my iPhone getting a short fever.

photo 1

I also practiced double unders (which I showed off on Instagram)! They’re my new favorite thing to do now (behind burpees of course).

Secret behind the double unders: I got lucky with this shot because this is probably the most I got in a row all day yesterday. I’m still happy I can do them though!

Hot weather means SMOOTHIES, so I had one of the green (and very nut-buttery) variety for lunch:

  • ½ c. soy milk
  • half banana
  • handful of frozen strawberries
  • big handful of spinach
  • ¼ c. oats
  • ½ scoop vanilla protein powder
  • 1 heaping tbsp. peanut butter
  • 1 heaping tbsp. almond butter

DSC_8077

With Greek yogurt on the side of course!

Secret behind this smoothie: This plus a ton of water and a bunch of crackers with hummus gave me a food baby.

After a few more hours of homework and procrastinating in the form of Instagram stalking, we headed out to dinner at a Korean/Japanese restaurant! Guess what. No Groupon this time. :-O

Complimentary cold cinnamon ginger tea as a palate cleanser/dessert

Secret about dinner: I made the mistake of wearing pants that are getting too small for me. You can probably guess why that was a problem.

Secret about what I’m doing right now: Watching Fantastic Mr. Fox — one of my favorite animated movies ever.

And those are the secrets of my life from this weekend! I hope you’re not too mind-blown by my exhilarating life.

Hope you all have a lovely Monday!

So tell me:

Did you go outside this weekend?

Italian ice or gelato?

What did you do yesterday?

Any secrets you’d like to share!

Fascinating Friday Links #35 + Hunger Monster

Hiya!

(HIGH-ya, not hi-YAH! Although, I am a ninja, so I guess the latter would be appropriate too.)

I really wanted to have Amanda’s oatmeal cookie dough smoothie this morning, but since our AP Calc class is having a celebratory breakfast party today (seriously, that class is just about food from here on out), I decided to have the smoothie for dinner last night. Satisfied the craving. 🙂

DSC_8065

Using Amanda’s no-fail recipe with added spinach, ⅓ c. oats instead of ¼ c., and peanut butter instead of almond butter. With Greek yogurt on the side for dipping, of course.

*Adding this at 5:30 in the morning: Apparently, as filling as this smoothie was, I guess it was not calorically sufficient for me, considering I just woke up STARVING at 5 AM. That hasn’t happened in a long time! (Don’t fret—I’m not revisiting any old habits. I just wanted the smoothie last night, and I’m paying the price for such a light dinner.)

DSC_8066

The typical snack. Plus another spoonful of peanut butter after I finished this. The hunger monster attacked me.

{Alright, back to sleep…hopefully}*

Oh and here are this week’s moves!

Monday: 5 min. stair master + 3 rounds of: 10 pistol squats each leg, 15 bulgarian split squats each leg, 1 min. wall sit, 25 hamstring ball roll-ins + 8 minute ab tabata

Tuesday: Ballet

Wednesday: 5 min. row + arm workout (that involved TRX tricep extensions➔ soreness!) + 8 minute ab tabata

Thursday: Modern {dance}

Friday: Dance company auditions for next year. Current company members do not have to re-audition, but we still have to go to lead my example! So sad that this is the last one for seniors though… *Tear*

My mom cancelled my gym membership this week, so I have one more month left to attend. It works out well because dance will be ending by the beginning of next month too, so after that, I can truly just focus on REST!

Anyway, onto the link love. Enjoy this week’s Fascinating Friday Links!
