WIAW: A Poem

Every Wednesday there’s this fun party

About bloggers’ eats, both junk and healthy.

It’s hosted by a cool chick named Jenn,

Whose spunk will never run out ’til God knows when.

Some people call it WIAW (wee-aw), because it’s “What I Ate Wednesday,”

But since I’m such a huge a rebel, I’m showing what I ate on Monday.

Just like Maria, we’ll start from the very beginning, a very good place to start.

Cookie dough cereal with bananas and sunflower seed butter; adding blueberries was also quite smart.

I believe I also had half a nectarine,

But the photo is nowhere to be seen.

My midday meal happened late in the afternoon,

Since I woke up super late and a normal lunchtime would be too soon.

So after some yoga and chores, I ate a delicious meal,

With simple ingredients, supah fresh, and supah real.

{Except the ketchup I added to the eggs afterwards.}

A monster spring mix salad, in a bowl the size of my head,

And a toasty wheat roll with avocado and perfect scrambled eggs.

Since I always need cheese in life, I also had some brie

Atop my favorite crackers, Wheat Thins, slightly sweet and so crispy.

I had quite a few— too many to count

Later on, the same thing happened with these peanuts

I had three times this amount.

I took a walk and visited Daliza

Because I always like to see her (say that in a British accent so it rhymes with Daliza).

Despite a late lunch and lots of snacking,

I was hungry for dinner pretty early, and my food’s flavor was not lacking.

I had leftover pasta salad with extra parmesan cheese

Plus a couple ravioli Mom cooked up, which made me quite pleased.

I used to be afraid of all these carbohydrates. I thought it would make me fat in my sleep.

How foolish that conception was, for without pasta today, I would weep.

Some veggies were thrown in there for nutrients and fun

After going on a lovely evening walk with mom and dad,

I was ready for a sweet treat that’s tasty and rad

It was peanut butter banana soft serve, cool and creamy.

It’s incredibly easy to make, and it always tastes so dreamy.

I ate it with a side of Greek yogurt, because would you expect anything else?

It added a lovely tanginess, plus some extra protein for myself.

Since I’m basically nocturnal and I stay up pretty late,

I needed a little something to satisfy and satiate.

Of course, I turned to a trusty ol’ classic that never fails me:

Dried figs and Greek yogurt, the best snack that ever could be.

Fun fact: I won a national pro-life poetry contest in 8th grade (those skills were not reflected here today…), so I got to go to Washington D.C. to be honored for it. I met Dr. Alveda King, who is Martin Luther King Jr.’s niece!

WIAW: Blogger-Inspired Meals

Yesterday was a solid day of eats. You know that feeling you get when you just finished a great workout? I felt like that except with my meals. I know you like that analogy.

Once upon a WIAW, I showed you some blogger-inspired breakfasts that I was loving, but yesterday’s meals were all inspired by some recent foods I’ve seen from other blogs lately. I’m kind of obsessed with looking at everyone else’s delicious food ideas on blogs and, of course, Instagram. To be honest, I’d say more than half of the photos I see on my Insta feed at any given time are of food. I post food pictures, I look at food pictures. Then I eat!

Today I’m actually playing by the rules and showing what I ate in just one day! Reminder: I’m on winter break, so all my meals were eaten at home. I’m not playing hooky until 4th quarter 😉 (Kidding.)

Breakfast

My leisurely morning started with a comforting, satisfying breakfast inspired by Amanda‘s classic oatmeal with Greek yogurt.

Snack

After finishing some biology homework, I needed a pick-me-up before {finally} doing some exercise. My legs wanted to MOVE after two straight days of road trips. Homemade granola bars from Amanda, Julie, and Jen inspired this one!

Lunch

After moving and grooving a bit (I did this workout from Lori and Michelle), I was hungry for lunch. More specifically, I wanted eggs. When I crave eggs, I will go “hangry” for them. I used to not know how to cook eggs, but luckily those sad days are over. Jen’s fabulous-looking omelet inspired this beauty.

Two-egg omelet with dried basil, dried thyme, Mexican cheese blend, spinach, and ground turkey + ketchup on top + coconut oil brussels sprouts (made by mom this time!) + sesame seed toast

This hit the spot like no other. Like I said on Instagram, if college doesn’t have good food, I’ll just live off of eggs (and yogurt, oats, banana, and pb of course).

Snack

My afternoon consisted of blog-reading, AP calc homework, Food Network-watching, and Instagram-stalking. So a whole lot of nothing much. By the late afternoon though, I was feeling snacky. This one isn’t really inspired by anyone in particular, but almost every HL blogger eats veggies with hummus, right?

Dinner

This one doesn’t look like anything new, but I added a little something extra thanks to Davida’s Thai Salmon Salad recipe yesterday.

Quinoa + brussels + salmon + Thai basil + sriracha

The Thai basil added an Asian flare to an otherwise normal schnormal dish for me. I was about to add a peanut dressing of sorts, but I got lazy. Sriracha to the rescue!

I also had a handful of pistachios (my favorite nut) and a vanilla frozen Greek yogurt cup for a sweet end to my night.

Before I say goodbye for today, I’ll update you on my Blend Retreat decision dilemma. My friend Veronica texted me yesterday that I should totally go ahead and buy the tickets since we probably won’t even have finals the following week (most final exams should be done before then). After deliberating and realizing that she was probably right, I got super excited that I might just be able to register for the retreat! However, after talking with my mom about it a little more, she sorta convinced me that the weekend might still end up being stressful for me. Friday, June 6th (the start of the retreat) is my last official day of high school, and I would miss that if I went to the retreat. Even though there are still several other senior events in the following weeks, I wouldn’t be able to spend that last day of school with my friends and teachers. Also, it’s not a short trip to and from Utah, so I’d probably be jet-lagged on the Monday we get back. If I do end up having a final early that morning, I’d be a zombie.

MOREOVER, I don’t think I’ll be going this year. I really hope to go next year though! My mom and I would probably want to stay and enjoy Utah even after the retreat ends too. It’s so gorgeous over there, and we want to be able to enjoy our time without the worries of school in the back of my mind.

WIAW: Something Old, Something New

Howdy!

I want to thank you all for your support and advice yesterday. It’s assuring to hear that a lot of other people are going through similar experiences— it just goes to show how hard it really is to rest more and eat more!

Unlike last week’s WIAW, which was all about recurring food themes, I’m going to attempt to bring a little more variety to the table with some new foods and some foods that I’m bringin’ back from the past. If you follow me on Instagram, you’ll know that I’ve been posting meals like it’s my job. Maybe one of these days I’ll actually post a picture of something other than food… But food is usually more interesting than, say, my face? Or the generic sunset/fresh snow/cat-all-up-in-my-grill picture? Not that those aren’t fun to look at though! I don’t know where I’m going with this. I’m done. Food pictures.

New-ish: Greek yogurt with sliced banana, a strawberry banana muffin, chia seeds, hemp hearts, and a big spoonful of pepita sun seed butter. This was so good that I had it again the next morning…and again yesterday morning.

New: Sushi date with a couple girl friends! Eel cucumber roll and Fantastic Roll (tuna, salmon, yellowtail, avocado, and marbled seaweed with a special dipping sauce). YUMFREAKINGTASTIC.

Bringin’ it back: Kylie’s Whole Grain Crust Pizza Quiche! I made this once before, and I thought it was due time to make it again. I don’t make a recipe more than once very often!

New: Homemade whole wheat crust margarita pizza! I was ridiculously close to tossing the dough when I made it, but I’m glad I stuck with it. It turned out quite tasty!

Bringin’ it back: PEANUT BUTTER BANANA SOFT SERVE!!! With some Greek yogurt for added creaminess and protein. I’ll be adding the Greek yogurt from now on— so good!

I also want to add that my “little sister” from dance company, Lilly, tried overnight oats for the first time and LOVED them! I was a little too excited.

It was certainly nice to add some more fun flavors to my palate this week. Although, I could probably live off of just bananas, yogurt, avocado, brown rice, and grilled chicken.

Happy Wednesday! Yesterday was a half day because of the snow storm, and today may or may not be a two-hour delay…(I’m typing this on Tuesday night). Either way, stay safe and warm wherever you are!

Marvelous is…

Ben’s 20th Birthday! I could barely grasp that he was an adult on his 18th…and now he’s two decades old. But he’s still my British-speaking “Mr. Penguin” brother to me 😉

One of Ben’s favorite desserts is cheesecake, so I surprised him last night with homemade banana cheesecake! I was so glad that he liked it. I accidentally decided to give it to him right before his run, so he just shared his slice with me. Works for me!

Marvelous is…

TWO sushi nights! I’m so spoiled. On Friday night, a few of my closest school friends and I went for a girls’ night at my favorite Japanese restaurant upon my recommendation. I ordered my classic favorites: tuna roll and eel avocado. Afterwards, despite the chilly weather, we walked over to Cold Stone for some delicious ice cream. It’s never too cold for ice cream, right?! I ordered a mix two of my favorite flavors— sweet cream and mint— with graham cracker crumbs. My two favorite foods with some of my favorite people = a perfect night!

On Saturday night, my family went out to a different Japanese restaurant with none other than….a Groupon. Yep. Still going strong with those. I’m tellin’ ya, “Extreme Grouponers” is looking better and better as a TLC show at this rate.

My mom and I shared a maki combo (tuna, salmon, and yellowtail rolls) and a “Beach Boy” Roll, which had eel and tempura flakes on the inside, and tuna and yellowtail on top. It was fabulous. The sushi quality was amazing, and I would definitely go back there even without the Groupon!

Ashley’s BBQ Pumpkin Turkey Meatballs! My mom took out a package of ground turkey from the fridge and I asked her what she was going to do with it. She answered, “Just sauté it to have with other things.” But I had been wanting to make Ashley’s meatballs for a while, so I jumped on the opportunity to use the turkey for the recipe. We had leftover pumpkin and some really good BBQ sauce, so we were all set. My mom was cool with that!

This recipe was super easy and oh soooo delicious, guys. I definitely recommend trying it out! Thanks for the awesome recipe again, Ashley! Everyone in the house loved it.

Marvelous is…

The Jack O’ Lantern Blaze! I mentioned last week that Ben and I would be going to this event where there would be some amazing Jack o’ lantern displays (even though it’s after Halloween). It was spectacular! However, there was a little secret that we found out there: almost half of the pumpkins were styrofoam. Oooo…….I know, it bursted my bubble too. It was still impressive nonetheless because everything was still hand carved and super detailed!
