How was the weekend!? Or how IS the weekend (for those who have today off!)?

This weekend (alright, this whole week), I’ve given myself permission to embrace this period of almost zero obligations. I had to get over the phase of discombobulation of having nothing to do, but it’s been a pleasant week of acclimating to living farther from campus and relaxing.

Friday

There have been some errands and work in there too (keeps me sane TBH), like on Friday. I gave a campus tour, since a lot of BU’s tour guides are out of town these next few weeks. In classic me fashion, I was running late and had to speed walk for 1 hour to make it right on time.

Luckily it was a beautiful day for rush-walking + touring!

Afterwards, I gave myself permission to do a quick 16-minute workout, even though I had all the time in the world and all the gym space in the world (three cheers for the summer lull!).

Then I nommed on the lunch I packed that morning (part of the reason I was running late). I gave myself permission to take my time to eat this. I’m sure some of you understand that weekday lunch is often more or less inhaled on many days.

I had big plans to get a lot Brideshead Revisited reading done for book club, but I got through thirteen pages before I gave myself permission to take a nap in the library’s armchair.

Before going to the library, though, I tried being that person to read on the stationary bike at the gym, but doing that kinda nauseated me. That + gym music = entirely ineffective reading.

I was awoken by an announcement that the library was closing in an hour. Thankfully, my friend Ben welcomed me to hang out with him before dinner, because I was groggy and without anything to do (what a nice problem to have).

Lauren, Nico, Ben and I went to Shawarma King for dinner. I got the vegetarian combo plate, which had falafel, hummus, babaganoush (omg so good), stuffed grape leaves, tabbouleh, cucumber tomato salad, rice, and pita. HOT DANG. I finished 85% of it.

Then we went to Athan’s Bakery for dessert! I got their pistachio gelato, which was the most sub-par gelato I’ve ever had, but it was still a delicious frozen treat.

We finished the night watching the original Grease movie. It’s the best bad movie of all time.

Saturday

Ben planned out this fun workout for us:

4 rounds:

  • run around baseball field
  • 15 triangle pushups (slightly inclined)
  • 2 flexed arm hang holds, any grip (15 seconds each or until failure ← definitely only held it for 5 seconds at some points)
  • 25 Roman chair leg lifts
  • 15 inverted rows
  • 10 step up hops each leg

Topped it off with 10 minutes of core work.

I packed a snacky lunch to eat between the workout and a meeting with my spiritual director (basically someone who teaches me how to better give God permission to speak to me through prayer and to work in my life — the most important permission I could ever give).

I gave myself permission to actually think about the taste of this snack (I guess people call it “mindful eating”), and it was 10x more satisfying than any other time I’ve eaten carrots and hummus/crackers and cheese.

I rushed through the popcorn and KIND bar, but they were still tasty.

I also gave myself permission to buy water from Starbucks for $0.27 because all the places where I usually fill up my water bottle on campus were closed.

This was less about permission and more about a fundamental need for water. I am endlessly grateful for constant, easy access to clean drinking water.

After spiritual direction, I video chatted with my uncle, aunt and cousins for two hours. We had a beautiful conversation. Ugh, I love them. I got to spend most of the two hours outdoors before I had to charge my phone.

The only downside was standing up and realizing that the bench I was sitting on gave me splinters all over my backside.

I picked up some groceries afterwards and gave myself permission to take an Uber back home instead of walking or taking the bus (the fact that an Uber was only $2.20 at the time was also a big factor).

Back at home, I showered, warmed up some leftovers for dinner, and spent time with Christie’s boyfriend’s dog, Koga. I got a taste of the neediness that most dog owners talk about. It’s annoying in the most adorable way.

Sunday

I gave myself permission to SLEEP. IN. I slept until 9:40! I promised I’d make French toast for all of us in the morning though, so I quickly got to work on that.

I planned on running to the park ~4 miles away to meet my friends for a picnic in the afternoon, but my hip/quads/knee (!?) have been hurting these past few days, and running was a solid no-go yesterday. So I gave myself permission to pass on the picnic, walk home and do yoga instead.

The pain? Google says it could be some muscle tightness. Could be a labral tear. Hopefully not the latter.

I forget what I did for the rest of the day, but in the evening I walked to campus for Mass, and my friend Evan kindly drove me home afterwards (God bless gentlemanly friends).

Finals Week: Brought To You in Part By Bread

Ohhhhh we’re halfway there.

WHO-OA bread is everywhe-ere.

I’m halfway through finals week, but since I don’t have any exams until Thursday (plus a research paper due tomorrow), I’m feel like I’m on study autopilot. Like, “meh, time to stuff more information into my brain today.” I’m not as overwhelmed as I’ve been in past finals weeks, which is great, but it’s a little weird too.

Fortunately, there have been pockets of fun amidst the stream of studying. Many of the fun things have involved BREAD (or a variation of it).

Night 1: Last Thursday I stopped by the Admissions Ambassadors (aka campus tour guides) end of the year gala to mingle for a few minutes and eat some hors d’oeuvres. I was severely underdressed since I needed to study and wasn’t planning on staying long, but I just ate the fabulous spinach artichoke feta dip in the corner, took some pics, and ducked out.

Night 2: A few friends and I went to the senior art exhibition by the fine arts students here at BU. I was also underdressed this night because I came from work/studying/walking in the rain all day, but the art was the focus of the night anyway.

Friday morning bagel run with so many friends.

My friend Sarah (the girl who has been getting me to run more recently) has been wanting to have a “bagel run” with people for the longest time, and her dreams finally came true.

First, Sarah and I ran ~2 miles together and then stopped at Bruegger’s Bagels to get 16 bagels + cream cheese for everyone coming to the bagel run. We individually packed them in Ziplocs because we’re the moms of the group.

Then we met up with 15(!) of our friends to run 1.5 miles to a dock by the river to eat bagels!

It was such a fun little event! There’s also an epic playground by the dock, so we obviously had to play there until a dad with his two little kids came, lol.

Free cookie cake from the Google Allo cookie truck.

Basically, if three people downloaded the new Google Allo app and started a group chat on it, this random Google Allo cookie truck gave you a free cookie cake with personalized frosting.

Free dessert sounded good to us, so Zoe, Sarah, and I took a study break to get one. We had them write “Regina Caeli” on it, which means “Queen of Heaven” (aka Mary). Because we’re Catholic and we were coming from the Catholic Center and we like Latin.

Sunday morning French toast with Megan.

It has been one of our goals to make perfect French toast ever since we came back from Ireland, and Sunday was finally the day. I bought some quality brioche from Trader Joe’s + used some of my thick whole wheat bread to make, if we do say so ourselves, excellent French toast. We used this method!

Megan is a purist and drizzled hers with some maple syrup and powdered sugar. She’s also a stacker.

We each had 2.5 slices (so, yes, I ate all of that above) with a glass o’ milk on the side, and it was blissful.

Perfect avocado toast is BACK.

I hadn’t bought avocados for a while since they weren’t on sale, but Target had 4 for $4, so I jumped on that.

Baking peanut butter banana bread / chocolate chip banana bread with PJ and Kelsey.

So I could have been hardcore studying last night, but PJ and Kelsey invited me to join in on some pb banana bread baking… A good study break, right?

It was worth it. And I did get some studying done still because they took on the brunt of cleanup (thanks, friends!). I also winged a random cookie recipe because we had a butter/sugar/egg white mixture that was a mistake for the banana bread recipe, and this is what turned out.

Bread has been fueling studying and lots of moves and grooves.

I worked out with Ben again on Saturday morning and took us through this circuit workout:

2 rounds of each set, 30 sec on, 10 sec off

  • jumping jacks / air squats / mountain climbers / high knees
  • pushup to T / skaters / squat jumps / plank
  • side jump lunges / spiderman kick through right / spiderman kick through left / tuck jumps
  • one legged burpee right / one legged burpee left / ski jumps / tricep dips
  • broad jumps / plank jacks / side plank / burpees

On Sunday, Rachel, Sarah and I went on an easy run…

Two fun things about this past week!

Hole-y Weekend

You know there are donuts and bagels involved in this post.

But first, can we talk about how it is absolutely frigid outside? Two weeks ago, the northeast was blessed with gorgeous weather, and now there’s this.

But thank God for warm sunshine, warm clothes, warm radiators, and warm hearts.

There’s supposed to a blizzard tomorrow, and this is the one time I am praying there is NOT a snow day, because I have a huge lab practical exam for gross anatomy that I would like to get over with ASAP. Please and thank you. The world revolves around me.

Before leaving home in New York on Friday morning, I made French toast for Madre, Brother Sam, and myself. It was some of the best French toast I’ve ever made! I think the keys were:

  • drying out the bread on a cooling rack overnight
  • adding more milk to the egg mixture (allows the inside of the toast to be more fluffy!)
  • sprinkling cinnamon over the bread after soaking it in the egg mixture, rather than adding cinnamon to the egg mixture (the latter causes clumps of cinnamon to form on the French toast)
  • using medium heat for the skillet
  • using a healthy dose of real butter for the skillet

On Saturday night (after a 1.5-hour nap at 5pm + this Fitness Blender workout) I cooked one of the best meals in my apartment this year. I bought this Korean BBQ marinade from Thrive Market and used it to marinate chicken thighs (soooo much more flavorful and moist than chicken breast—just do it) for a few hours before grilling them.

Besides cooking and working, the rest of my weekend has involved lots of studying for that lab practical. Since I took a 1.5-hour nap on Saturday night, I ended up going to bed at 2am, which was actually 3am thanks to DST. Haha.

Sunday involved a lot of fun shenanigans though! First was my attempt at Crossfit Open Workout 17.1.

The movements and equipment are accessible to me, so I thought I’d just go for it, but I definitely had to scale it. I used a 25-lb. dumbbell instead of a 35, and my gym only had an 18-in. or 24-in. box, so I used the 18-in.

And I still DIED. I had 7 burpee box jump-overs left by the 20 minute time cap. Womp womp. It was a “fun” workout though! Perhaps I will try it again later.

After I was annihilated, I showered and went to lab to study for a bit before meeting with Fiona, Rachel, and Austin for food bucket listing! On our list for the afternoon was Bagelsaurus for a sea salt bagel and Union Square Donuts for the PB&J donut (I gave up pb for Lent, but since it was Sunday, Rachel and I agreed that it would okay for me to have at least a bite of the donut).

Situation: Both places closed at 3pm, we were getting an Uber at around 2pm, and the walk between the two places was 28 minutes. Rachel and I thought we should divide and conquer, but Austin (the marathon runner) and Fiona (the army gal) convinced us that all of us could book it and make it to both places (because one of our rules for food bucket listing is that we go with each other to the actual store and buy the food together). Friends motivating friends for love of food.

I’m glad they pushed us, because we made it!

Sadly, Union Square Donuts did not have the PB&J donut that day, but we decided to still cross it off the bucket list. Instead, we ordered six donuts to split between the four of us (omg so much donut).

Let’s talk about donuts. These were delicious. But since donuts aren’t my dessert of choice (I feel like it’s difficult to get really good flavor into a donut), none of them blew me away. The raspberry basil was probably my favorite though, because the basil packed a surprising punch. We were all super excited for the sea salted bourbon caramel, but it was kinda disappointing. Too much bourbon, not enough caramel. Like I said though, these were all delicious still! Good quality donuts for sure.

We bought the donuts first but ate them after our bagel sandwiches at Bagelsaurus.

I got the “Eggspañola” on a sea salt bagel, which was an over medium egg, pimento aioli, feta cheese, parsley gremolata, and I added avocado.

This was also fantastic! I loved the flavors of the pimento aioli and parsley gremolata + the saltiness of the feta + creaminess of the avocado + richness of the egg. The bagel was really chewy though, so with every bite, everything slid out of the sandwich. ‘Twas a blissfully messy situation.

(I still liked my NY bagel from last week better. I’ve had one NY bagel and now I know everything about bagels.)

Eating bagels and donuts in one afternoon… You could call it a “hole-y” Sunday (creds to all my friends for coming up with great donut/bagel puns).

We did also go to Mass at night, making it a truly holy Sunday 🙂

Universal Studios + Killer Brunch

And when I say “killer,” I mean this brunch could actually shorten your lifespan.

Monday

Our week started off on a delicious but entirely unhealthy note at Hash House A Go Go for an early brunch. Ben found this place on the internet, intrigued by the epic portions and ridiculous dishes.

I ordered the mushroom, artichoke, sundried tomato, spinach hash, which came with two eggs and a biscuit the size of a baby’s head. And some melons for good measure!

I ate all the eggs and veggies and a lot of the potatoes before having a whole piece of Madre’s banana pecan French toast.

And then several bites of this heart-stopper that Ben ordered:

SAGE. FRIED. CHICKEN. EGGS. BENEDICT.

I stop breathing just fathoming it, but it was darn tasty. Mashed potatoes, two huge biscuits, a large fried chicken breast (hey, healthy breast meat!), maybe four scrambled eggs, a tarp covering of cheese, and a special hollandaise that flowed like a river over it all.

Ben did a pretty good job with it! He nixed the thick layer of cheese + all the hollandaise on top of the cheese + a lot of the potatoes + I helped him with a lot of his biscuit (which was amaaaazing with the sauce), but he still crushed that beast.

We didn’t eat real food again until 10 pm that night.

After that brunch of a lifetime, Madre and Pop dropped Ben and me off at Universal Studios for the day! I’ve been several times in the past, but my main motivation for going this time was Harry Potter World, since I’m actually a fan now 🙂

Of course, everything was decked out for the holidays.

The weather was beautiful except for one spot of light rain during the day. Also, the lines were surprisingly quite short for most of the rides! I don’t think we waited for more than 40 minutes for any ride, which is almost unheard of for Universal at this time of year. Using the “single riders” lane for some of the rides also made things more efficient for us.

To Diagon Alley! (throwback to when I was here two years ago but didn’t know what any of it meant!)

“Lunch” for Ben and me was Butterbeer and ice cream from Florean Fortescue’s. I got the salted caramel blondie + apple crumble flavors in a cone, and they were both fabulous.

We made it to almost every single ride and show in the park, so we felt quite accomplished by the end of the day!

After the “Macy’s Holiday Parade”, we phoned home (E.T. phone homeeeeee) and asked our parents to pick us up. It was so much fun to hang out with Ben all day and experience the excitement of being an HP fan in HP World!

Madre had some delicious dinner waiting for us at home at around 10:30pm, which involved ALL the fresh veggies (thank the Lord).

I stayed up late blogging, but I knew that I could sleep in a bit yesterday.

Tuesday

The sound of the maintenance guy in the house + lawn mowers + the sunshine all woke me up at around 9am, but I indulged in some lazy bed time with my phone. I actually don’t love doing that, but sometimes it just happens.

I did an 8 minute ab workout because I was feeling it and then headed downstairs to eat my favorite breakfast.

I worked on some job applications in the morning early afternoon (with a five minute workout in there as a work break) before Pop and I walked over to the driving range to hit some balls. (← Is that the phrase? Because I feel like it’s not.)

Now, I don’t play golf. I don’t have hand-eye coordination. But when Pop invited me to the driving range (“It doesn’t hurt to know how to swing a club!”), I agreed. I’m glad I went, but MAN was I horrendous.

I sort of decently hit 3/35 balls. The other 32 either went ten feet in front of me or went somewhere with a piece of sod flying after it.

Then I showered, lunched, massaged, and got massaged. Rough life we have here.

The rest of the day involved some job searching, emails, attempting to work out (and not really feeling it), talking with the family, and eating dinner.

I learned that I do not want to eat a decadent brunch and ice cream for my body’s fuel, but I don’t regret my food choices. It was all a good ~experience~.

HELLO, AMERICA!

It’s like I never even left this side of the pond. I’ve gone right back to eating sushi, driving, and using toilet paper that comes in roll form.

No, but seriously, my brain is still processing the fact that I studied abroad in Ireland for the past 3.5 months. It was a whirlwind, a challenge, and a blast. I’ll save the reflections for another post and just focus on the transition from Europe back to America in this post.

My peers and I celebrated what felt like the end of an era during our last days in Dublin. Megan and I were basically obligated to go to one last brunch:

The Lovely Food Co.1 was the first brunch place we ate at in Dublin, so we chose it as our last brunch destination to bring it full circle. ‘Twas a fabulous decision because this was the best brunch we had in Ireland. She ordered the eggs benedict, and I ordered the eggs royale (same thing except with smoked salmon instead of ham).

The crusty bread was unconventional, but it totally worked. For brunch dessert, we split an order of their brioche French toast, since that’s what Megan ordered her first time there, and she could not stop thinking about since.

For good reason!! This little guy was perfectly crispy on the outside and soft on the inside. Served with cream, berry compote, and classic maple syrup. #dead.

We may or may not have bought two desserts from the bakery to take away.

After walking around city centre to look for books for our plane ride (I ended up buying the fourth HP book because I needed to return the one I had to the library, but I still had 200+ pages left), we had a late farewell lunch with all the students and program directors at Il Corvo Italian restaurant.

I had the lasagna with a side of veggies and happily finished it all. I also almost cried after one of the program director’s farewell speeches. All good things here!

Later that night, a few of us walked back to city centre for some gelato and store-perusing.

Megan and I also watched Fantastic Beasts and Where to Find Them while eating our sneaked-in dinners in the back of the theatre.

And then, of course, we had to join the rest of our friends for one last night out on the town!

I wish I could say I was cool and went pub-hopping that night, but I went home after the first bar and called it a night.

Saturday morning called for a quick workout and the last scramble to pack our whole lives into our suitcases (“It’s TWO POUNDS over 50!!!”). Eventually, we made it through the airport and onto the plane. My last meal in Ireland was this sandwich with veggies, relish, and an absurdly thick slice of cheese.

Followed by a pretty tasty airplane dinner a few hours later. They served us turkey and stuffing meals with pasta and veggies, soda bread and Kerrygold butter (♥︎), and raspberry white chocolate mousse. What luxury!

“milk in a stick”

Purchasing Harry Potter and the Goblet of Fire for the plane ride was one of the wiser decisions I’ve made in my life. It occupied me for the almost the whole 7 hours! (It also blew my MIND.) I was also very surprised that I never napped or even got up to pee during the entire flight.

When we arrived in New York, my family greeted me at the airport, and I almost cried again. I was so happy to see them. Also, one of the first things my brother told me after I hugged him was that they bought me Lloyd’s carrot cake. I appreciate how well they know me.

Even though it was past midnight Dublin time, it was only 7:30 pm when I met up with them and they hadn’t eaten dinner yet. By then, I was pretty hungry for a midnight snack/dinner too, so they took me to eat some delicious sushi, since I had not eaten any in Europe (I had trust issues).

Also, Madre bought me a portable massage table for Christmas (upon my request, since I’ve been learning how to give good massages in Dublin), so Pop broke it in for me as I gave him a massage that night. The gift that keeps on giving, I say!

Regarding jetlag, I’m actually pretty adjusted already! I persevered and stayed up until 11:30pm NY time (4:30am Dublin time) and woke up at 9 am yesterday.

I was feeling ready to move and groove in the morning, but I had limited time before Mass, so I did 100 burpees for time. I tied my previous PR (6:12), but not without my heart feeling like it would explode. Holy smokes, I had not done a “sprint” like that in a while.

This dinner last night was nothing out of the ordinary except that I cooked the eggs on a gas stove (instead of electric like in our Dublin dorms, which I didn’t realize until now takes 10x longer to heat up) and that I topped it with SRIRACHA. Oh, how I missed thee.

Today I’m headed up to a very special city for a couple days 🙂 More to come!

I have so much to say and reflect upon in regards to my study abroad experience in Ireland, but for now, I’ll say:
