What You Didn’t See

Between the week in the life vlog I posted last week and the Spartan Race on Sunday, I’ve shown a lot of the good and fun things happening around these parts.

Indeed, things have been good and fun, and I am grateful for that. I also like to think that I don’t just show the nice parts of life, but also the turbulence. Nevertheless, there are plenty of emotions and happenings that you didn’t see these past few weeks, so here’s a peek into what you didn’t see…

What you didn’t see before the week in the life vlog was my lack of productivity and my fear that I would not be able to become productive for work and classes. The weeks before starting work as a teaching assistant, I felt like my days would waste away and I would fail at doing simple tasks like reading my book for book club. I was genuinely concerned that I would crumble once I started work and classes.

(I have since reminded myself that having things to do makes me productive. Having nothing to do drains 99.9% of all motivation from me.)

Do any other single people out there find it takes forever to pack meals for the next day? How do parents do this for other humans every day??

What you didn’t see was my failure to keep up with book club and attend any meeting after the first intro meeting. (I still want to finish the book in my own time though!)

What you didn’t see before the Spartan Race was the real concern that my family and friends had for me when I reconsidered racing after my hip injury (← still don’t know what it really was). Some people were in disagreement with me attempting the race, and although I wanted them to trust my judgment, I am grateful and humbled to have people who care for me and keep me in check to make sure I was being a good PT-to-be.

What you didn’t see was the number of times I double-booked phone call dates and night plans in the past two weeks. I guess it was only one time each, but still — two more times than I should have done.

What you didn’t see was me yelling at a driver while I was walking to work yesterday morning. I’m not usually an angry person on the road as a driver or pedestrian, but I was pretty upset that someone making a left turn purposefully accelerated, nearly hit me, and honked at me for walking in front of her, to which I responded, “I have the walk sign!!” because I did indeed have the walk sign.

After steaming and shaking my head in annoyance for a few minutes, I hoped she had a better day after whatever was going on in her morning.

I had overnight oats in me at that point too, which helped.

I share these things because sharing all experiences — even the silly ones and the ones we’re less proud of — brings us together as #humans.

I made my favorite meatloaf (← so easy and tasty, highly recommend) on Tuesday night, and I’m thoroughly enjoying it this week with some quinoa and roasted broccoli.

On Wednesday night, my dear friend Megan treated me to a drink for a belated birthday celebration! It was so great to catch up with this radiant soul.

We got mango margaritas! She called it the classic BU white girl drink, but guatever, I’m on board with fruity drinks. It was my first time having a margarita, and I was a fan. She got a sugar rim and I went with salt.

Today is my last day of work as a gross anatomy TA, and I must say that I will miss it! The other TA I worked with has been amazing, and it was fun teaching the lab section of the course. I’ll get to know most of the students better in these next three years though, because a lot of them are my classmates! Grad schools starts Tuesday eeeeeeep.

Two things that happened this week!

16 Hour Delay

I feel like under-eye circles are the battery display of my body.

I got 7 hours of sleep on Monday night (which is average), but I still felt pretty tired, and I had purple circles under my eyes.

I decided to nap after breakfast, which turned into almost TWO extra hours of sleep (still catching up from last week)! Then my under-eye circles were gone.

Purple circles = battery running low. No circles = fully recharged.

Yesterday I talked all about SEEK in San Antonio, but I didn’t tell you guys the story of how I got home. It all started after one last breakfast with the BU crew at our hotel in San Antonio. A couple of my friends and I then took a Lyft to the San Antonio airport at around 8:30 am.

My first flight was only 30 minutes to Houston, so that was fine. Then came the delays. Thanks to the winter weather that I forgot existed in the northeast, our flight from Houston to New York was delayed 20 minutes… then 50 minutes… then 90 minutes (at this point, I also started to realize that I developed plantar fasciitis in my left foot)… then we boarded. Then it was delayed for another 30 minutes… then we took off, flew, and landed!!…

…in Washington DC. *sad trombone* The runways at LaGuardia airport in NYC were too short and snowy for our plane to safely land, so we were diverted to Dulles Washington airport. There were a couple flights in the same situation as us, so we were stuck on the plane without a gate in DC for a couple hours. I didn’t even care that we weren’t making it to New York that night; my butt just really hurt.

Eventually we made it off the plane, but everyone was in a fit about when the next flight to LaGuardia was and whether we were getting hotel vouchers for the night. ‘Twas a mighty unfortunate situation for clients and employees alike, especially at that ungodly hour of 1 AM.

Some people on my flight had been traveling for over 24 hours from Auckland, New Zealand!! God bless ’em.

We got our generous hotel and meal vouchers for the night and headed to our hotels for the “night”. I bought a caesar salad at the airport and ate it in my large Embassy Suite at 2:30 AM.

I slept for a solid 3.5 hours before I had to wake up again and eat breakfast at the hotel (which was included — so many things to be thankful for).

Our scheduled flight to LaGuardia was at 10am, but once we boarded, we were delayed for another hour (our flight was less than an hour, so we could have already been in NY by then) due to some paperwork that had to be completed for the diversion process. People were just about fuming from their ears.

But we finally landed in NYC at almost noon, only 16 hours after we were originally supposed to land. We were safe and sound, which is all that matters. My whole fam picked me up from the airport, and then we headed to lunch at a Korean restaurant in Flushing called Kun Sohn Korean Noodle House.

We all shared loads of fresh, hot, handmade noodle soups + dumplings + seafood pancake + kimchi. The perfect food to drive out the winter chill. Later that night, I went to an evening Mass and then straight to bed at 6:45pm for my 14 hours of glorious sleep.

On Monday, I ate breakfast, did some cleaning, and then moved and grooved. I worked out once in San Antonio on the one day I was willing to sacrifice sleep and get up at the butt-crack of dawn. I am thankful for that one workout though! It did also make my butt sore for the next three days. I’ve used the word “butt” four times in this post already.

I did Colby’s day two cardio and core workout from her 10 day burn challenge. It was so nice to get the blood pumping, but my body was feeeeeelin’ it after a wonky week of sleep, eats, and travel.

After a quick shower, I met up with two of my best dance friends from high school, Susie and Charli, for lunch. It was so good catching up with those beauties!

After my two hour nap yesterday, I ate a classic lunch.

Then Madre and I went to Bed Bath and Beyond and the nail salon, where I started studying for gross anatomy (the prof says that she “cannot overestimate how incredibly much work this class is”).

Yoga is what my body needed, so I did this great yoga video by Leigha Butler before dinner (Madre was simultaneously doing Pilates right next to me in the basement haha).

Also, I had some of Madre’s pork soup, which was seriously the best soup/pork I’ve ever tasted. I don’t know why, but this was my JAM. She simmered it for hours with pork bones, lemongrass, kefir leaves, and salt. That’s it.

I Feel Like I Should Have Learned This A While Ago

I am currently watching a video for my ethics in healthcare class, and so far I’ve seen a C-section, prostate surgery and throat surgery in the past 15 minutes.

I’m not that faint of heart, but this is making my vision a little blurry.

Good morning! What a way to start this post, eh? Here’s a picture of an appealing breakfast to counteract those thoughts.

I am only a week into this Dublin study abroad program, but I am already wondering: “Why did I ever not want to do this??”

Believe it or not, I really did not want to study abroad for a while. The main reason was FOMO— I didn’t want to miss out on all the fun and friendships back at Boston University. I also didn’t feel a strong tug to study abroad, so I wrote it off as “not for me.”

In the end (obviously), I chose to study abroad in order to challenge myself. To learn about other people. To travel. To get outside of my cushy, mushy comfort zone of friends, family, and familiarity.

My reasons for coming to Dublin are not quite unique, but I know that my experience here is unique. Who will I meet? What will I learn? How will I grow? Will I even gain anything?

I won’t reflect too extensively today, but two things I have learned this week are that:

  • Sharing a kitchen with over 10 people is both an art and a labor of love.
  • Education should be driven by a desire to learn and become a better person, not merely by a desire to “do well.” I always knew this one, but I have only recently realized that I get so nervous for school because I feel pressure to primarily do well. Retain information, apply my knowledge after the course, etc.— all those were secondary thoughts to me. It’s sad, but it’s true.

I feel like I should have learned that latter point such a long time ago. Don’t get me wrong; I’ve always loved learning, but only selectively and usually outside of a classroom setting, where the thought of grades wasn’t oppressing me.

I still break a tiny sweat when I think of learning and writing about something completely out of my comfort zone, but that’s where the growth happens. And, as Fr. Mike Schmitz said, if I am motivated by gratitude (for the gift of learning) rather than fear (of not doing well in the course), then I can be free.

Free to think. Free to question. Free to innovate.

And on the kitchen topic, I actually enjoy the kitchen parties. Minus the dirty dishes and questionable amount of smoke that we produce in the kitchen. I contributed to the smoky room with my Irish grass-fed beef burgers (am I trendy yet!?).

Thursday

On June 9th, 2015, I chopped my hair to shoulder length. On June 16th, 2016, I chopped my hair to chin length. Who knows what June 2017 will bring? #pixiecut?

My hair was shoulder length all year, but it was starting to flip outwards like Betty Rubble from the Flintstone’s, which is not the look that I’m personally going for.

Just like last year, I’ve gotten mixed reactions to my new ‘do, but most people have been in support of the short locks (thanks, friends)! One of my friends from work said I look 10 years old though…

After a long day of work, Pop and I came home to a KILLER dinner made my Madre. She made sushi hand rolls + delicious chicken drumsticks. *jaw drop*

Friday

Dinner was simple and light because I was planning on working out soonish afterwards.

I was totally fine later. Actually, my digestion this week might be the best it’s been in a while! Hmmm.

AFTER I ate dinner and dessert, I worked out at 10 pm in the basement. I needed 5 hours to decompress from work and nourish myself before working out, I guess.

Saturday

A weekend breakfast favorite:

I really wanted to put Greek yogurt on this, but I think having too much dairy still wouldn’t be great for me.

Madre and I went on a couple errands including grocery shopping and clothes shopping. Productivity, I say!

After Mass, Madre wanted to take Pop out to pre-Fathers’ Day dinner, so we went to a place called The Iron Tomato. It’s a casual Italian marketplace, so we each ordered something at different stations and reconvened.

Peanut butter banana soft serve!!! For two people: 3-4 frozen overripe bananas blended with peanut butter in a food processor, topped with granola.

Sunday (Father’s Day!)

My dad just made a good point (as a good father does): I FaceTimed a lot of people from Europe yesterday.

  2. My brother in Spain.
  3. My uncle, who is a priest in Rome.

What a great day already!

After some more FaceTiming and relaxing, we all got started on our late afternoon BBQ! Pop requested that he grill on his special day. Madre and I went shopping and marinaded/skewered everything, and he and Madre split the grilling job. Teamwork!

We ate everything in lettuce wraps, Asian style — with Thai basil, cilantro, fresh backyard mint, cherry tomatoes, bean sprouts, and Madre’s fantastic peanut sauce. None of us could choose a favorite meat that we cooked (maybe the ribs though).

We cooked way too much food for three people, but hooray for leftovers for work lunches this week!

We ended “dinner” at 5 pm (talk to Europeans, eat like Europeans), after which we chilled out and digested. Pop and I went on a 2 mile walk around the ‘hood in the evening, and the weather was absolutely perfect. Cool and comfortable.

I got started on dessert when we got back home. We had weird peaches that were ripening but not softening. Like, we had them for a week, and they were starting to taste overripe (read: kinda alcoholic), but they were still hard. So I tried this recipe for individual peach crisps to put them to use.

Pop and I had one each, topped with Talenti pistachio gelato. I ate the peach first (it was still hard and weird even after baking) and then ate the gelato. And then went back for a little more gelato.

I just proceeded to do the 7 minute workout with Madre shortly after finishing dessert. Ice cream and squats is not an ideal combo, but I’ll survive.

I might do some late night stretching before turning in. My legs are super tight (I was a bad girl/PT student and didn’t stretch after working out on Saturday).

Happy Fathers’ Day to all fathers out there— of children or of souls! 🙂 You are so loved and appreciated.

20 Things From My Life That I Regret (But Not Entirely)

I just finished a rather colorful bowl of oatmeal this AM.

Sprinkles were welcomed onto my classic bowl of banana chia egg white oats, because I’m turning 20 today! Two decades and no longer a teen. I’d say that I feel closer to fully #adulting, but did I mention that a waitress gave me a kiddie menu in Vermont three weeks ago?

I hope that all my fellow Americans had a lovely Memorial Day! The ‘rents and I took it easy. We attended our local Memorial Day ceremony, Mom and I went shopping, we all napped a bit, and some killer moves went down in honor of the fallen.

In honor of twenty years since emerging from the womb, I decided to make a list of twenty things, because that seems like a socially acceptable way to subtly scream on my blog that I have turned twenty years old.

I have learned plenty of lessons in these past twenty years, but instead of listing the lessons themselves, I am sharing twenty things that I regret doing/happening (but not entirely, because they’ve taught me that I am a foolish human being who constantly needs improvement/they’ve given me the best memories). So I do not necessarily condone all of the following things, but I am appreciative that God allows me to learn from mistakes.

1) Filming a plethora of home videos of my brother and myself dancing to Pokemon songs and Backstreet Boys.

2) Showing said home videos to my friends in high school and college.

3) Having a bowl haircut.

4) Complaining to my parents that I didn’t want to go to Hawaii when I was seven years old because I had no interest in pineapples (they still dragged me along, thankfully).

5) Wanting to have hamstring muscles just like my figure skating friend when I was seven years old (the dawn of body comparison).

6) Waiting until the last minute on one of my elementary school math projects and getting a terrible grade.

7) Crying and getting mad at God because I didn’t get a lead role in my middle school’s musical, Willy Wonka, Jr. I got the part of an orange-faced, green-haired oompa loompa.

8) Any and every time I stomped through the house in an unreasonable rage.

9) Begging my mom to take me to buy Crocs. And Uggs.

10) Not paying attention to directions whenever my parents drove.

11) Not reading Harry Potter (and then the heavens rejoiced that she repented).

12) The whole phase of my life when I started wearing makeup and getting interested in fashion.

13) Not keeping up with stretching after some time off of figure skating. It taught me early on that muscles do not stay flexible forever.

14) Counting calories and finding healthy living blogs that pushed my disordered eating further (but finding healthy living blogs was ultimately fruitful).

15) Discovering my love for nut butter. A blessing and a curse.

16) Attending one high school Halloween party where there was a single handle of vodka, touchy people, and really bad lighting. But it taught me that I was not missing out on anything by not going to those parties.

17) Thinking that I did not want to study abroad because of FOMO (fear of missing out) at Boston. My friends who know what’s logical and good urged me to reconsider, and now I’m going to Dublin this fall!

18) All the times I did not engage in conversation with people because I did not think they were interesting enough or that I was interesting enough.

19) Not trusting in God’s mercy, which has plunged me into my darkest times yet ultimately brought me to my greatest joys after seeking Truth.

20) Not following politics. I need to inform myself more, but I’m also happy that I’m not stressing over the hubbub.

This was a lot more fun to write than I was expecting. And embarrassing!
