Day in the Life {Work Day}

Time for my/our favorite type of post!!

Here is what my last 24+ hours looked like:

6:40 AM – Alarm goes off. Feelin’ pretty alright with waking up right away (praaaaaise), but I slowly roll out of bed.

6:45 AM – Bathroom, brush teeth, put in contacts.

6:50 AM – Say a quick prayer and change into workout clothes.

7:00 AM – Grab my breakfast and lunch from the fridge. Make sure I packed everything for work.

7:07 AM – Out the door.

7:15 AM – Mass.

7:45 AM – Go back to my car to eat breakfast in the church parking lot. I ate a big hunk of banana bread baked oatmeal (that I baked on the weekend) with classic peanut butter on top. Listen to music and read blogs on my phone with the windows rolled down to enjoy the crisp morning air.

Plus a couple pieces of pork jerky since I was still hungry.

I love jerky, but it’s SO SALTY.

8:10 AM – Drive over to work.

8:30 AM – Arrive at work. Sit in the parking lot for a little bit to answer blog comments, check emails, and figure out what I want to do at the gym.

9:00 AM – Get to the employee gym, put up my hair, and start warming up.

9:10 AM – Move and groove! (Take my time in between sets. I just have fun playing with all the equipment when I’m down in the dungeon gym by myself.)

3 sets of each:

  • 10 squat cleans (55#)
  • 5 burpee box jumps
  • 15 front rack step ups (45#)
  • 20 med ball jump lunge slams
  • 10 deadlifts (115#)
  • 20 squat jumps
  • 20 hanging leg ab raises
  • 15 overhead tricep extensions (25-30#)

10:05 AM – Sweaty and wiped. Streeeetch.

10:20 AM – Wipe off the sweat from the face (and pits), comb the hair, put on makeup, and change into work clothes. Eat an oat and honey KIND bar in the meantime.

10:40 AM – Walk over to work.

10:48 AM – Clock in and get the day started.

12:15 PM – Lunch break (I know, it’s like I just started working and now I’m off again)! Walk over to the cafeteria and eat outside.

1:10 PM – Head over to work at pool therapy.

4:10 PM – Walk back over to the PT gym. Eat some mixed nuts.

6:40 PM – Finish work. Got to leave a little bit early tonight! (Good thing— I was exhausted.)

7:00 PM – Arrive back home. Raid the fridge for food. Eat some cold roasted broccoli and zucchini as I warm up dinner.

7:35 PM – Make some golden milk! I’ve been seeing this “fad” on the blog world recently, but I am so down for making this a “thing.”

7:45 PM – Make my lunch for the next day while my golden milk is cooling.

7:55 PM – Sip on my golden milk while checking Instagram.

8:05 PM – Warm up and eat a banana muffin + peanut butter.

8:20 PM – Say hi to Pop who just came home and chat with my him and Madre for a few minutes. Also eat a dried fig.

8:30 PM – FaceTime with my dear friend from college, Casey!

9:50 PM – Shower and get ready for bed (definitely get distracted in there somewhere).

11:00 PM – Remember that I have a hair cut today. Look up hair cuts on Pinterest.

11:30 PM – Pray.

11:40 PM – Hit the hay.

7:40 AM – Alarm goes off. Wake up, bathroom, all that.

7:55 AM – Head downstairs to make breakfast. Eat while reading my devotional.

Weekend Confessions V

#1: I woke up past 10 AM on both Saturday and Sunday.

I blame Daliza for getting me on the night owl schedule.

#2: My hair is starting to grow past my shoulders, giving me an unintended retro look.

Thank God for hair dryers and straighteners.

#3: I’m still going strong with red, white, and blue food.

#4: I bought way too many tickets at Festa Italiana on Friday, so I had to keep buying food to use them up.

I thought the tickets could be used for the carnival games as well, but it turns out that they could only be spent on food. Not that I’m complaining.

#5: Sauce and cheese and bread were all over my face as I ate my meatball sub.

#6: Before Friday, I couldn’t remember the last time I ate a soft pretzel.

I’m glad I changed that. Soft pretzels are doughy heaven.

#7: We played at my neighborhood playground at midnight.

Hoodlums, I know.

#8: I’ve eaten this dinner almost every night this past week.

Pesto pasta with grilled Italian chicken breast with melted mozzarella and tomato slices on top. Festa for the taste buds!

#9: I tried this baked avocado egg for lunch on Saturday, and I don’t know how I feel about it.

It seems like an awesome idea in principle, but it tasted…interesting.

It was slightly bitter (probably due to the avocado rind), and the baked egg also reminded me of the taste and texture of a Chinese egg tart. It was weird.

#10: I toss my salads in my baking mixing bowl and eat it straight out of there.

#11: I watched two animated movies on Saturday night.

Minions at the theater and then The Book of Life at Daliza’s house afterwards.

WE LOVED MINIONS. I’ve never watched the Despicable Me movies, but after seeing Minions, I definitely want to! It’s good that Minions was a prequel 🙂

#12: We sat in handicap seats at the theater.

We walked in a little late, so those were the best ones available. Don’t worry, we definitely would have gotten up if someone needed the seats.

#13: The men’s final was the only Wimbledon match I watched.

I never knew when the matches were being televised throughout the tournament, but I’m glad I caught the last great match between Djokovic and Federer. I like both of them, but I was secretly rooting for Federer. Djokovic totally killed it though!

#14: Seeing how flexible Djokovic is makes me really want to stretch more.

The announcers called him, “Gumby-like.” I’m inspired.

#15: I cooked with panko bread crumbs for the first time ever last night.

Baked chicken fingers, baby! I added cayenne and paprika to the bread crumbs for a little uppercut of flavor.

Airboat Tour Adventure + Shoulder Burn Circuit Workout

I held an alligator yesterday!

He’s 4.5 years old and his name is Sergio. The man said to hold his tail firmly, but apparently my grip on Sergio’s torso was a little too much, because then the man said, “If you hold him too tightly there, he’ll pass out and then you’ll have to give him mouth to mouth.”

I opted to just give Sergio pretend kisses. I miss him.

Where did I hold this alligator, you might ask? Wild Willy’s Airboat Tours! We had never been on an airboat before, so my mom and uncle found this company with stellar reviews on Yelp. It was truly an amazing experience! They took us on a laid-back yet informative tour through Lake Tohopekaliga to view the wildlife, which was abundant.

Ugh, it was such a beautiful day. I was totally awestruck by the beauty of nature as we sped through the waters on the airboat. I kinda wanted to cry tears of joy, but luckily, the wind blasting in my face kept my eyes dry and my embarrassment to a minimum.

If you’re ever in the St. Cloud, FL area, definitely check out Wild Willy’s Airboat Tours. We all give it five stars, two thumbs up, and three cheers!

Preceding our afternoon adventure, we had a slow start to the morning. I slept in and did my moves before breakfast, which is a rarity for me! I almost always need to eat something before I feel like a functioning human in the morning. I guess all that sushi the night before stuck pretty well.

I missed you, burpees! This was a quick yet heart-pounding workout that made my shoulders burn. Those inchworm pushups are deceptively difficult after double unders!

[Super late] breakfast was an ol’ classic: Gina’s cookie dough cereal made with sunflower seed butter and a whole sliced banana. It will never stop being delicious.

I also ate some random snacks with my fingers including pineapple, broccoli, and mango. I’m like a wild animal hunting for food or something, what the heck?

Before leaving for the airboat tours, I made myself a sandwich with a two-egg scramble with a boatload [ 😀 ] of spinach and feta cheese. I ate it at around 3PM in the car on our way to the airboats.

Part two of lunch came after the airboat tours when we decided to try some of their gator bites, aka gator nuggets, served with sweet & sour sauce and a creamy southwestern sauce. They tasted just like chicken nuggets except more chewy and a little less flavorful.

The gator bites combo came with an ice cream “samich” that I happily ate. I will forever love these things, which are essentially jumbo ice cream Oreos.

A late lunch called for a late dinner at 9PM again. Last night we dined at a local Latin/Caribbean restaurant, and everything was tasty!

Plus a few bites of my mom’s seafood mofongo (think Latin version of stuffing— made with fried green plantains, pork cracklings, and garlic)

‘Twas a lovely and relaxing day indeed! Today I need to do work, which includes tour guide studying, blogging, letter-writing, bathroom cleaning, reading, and grocery shopping (there are no more bananas in our house and that makes me sad).

WIAW: Vacation Day in the Life

Hello!

How are you all? No one ever answers that when it’s at the beginning of the blog post, right? But I really do want to know how you’re all doing, and I hope you’re doing well!

I replaced What I Ate Wednesday last week with a favorites vlog done with Daliza. I’m joining Jenn‘s party again this week because I want to show you guys the epic dinner we had last night! I swooned about 15 times.

There were biscuits. CHEESE BISCUITS.

I’ll also throw in all the things we did yesterday for a little day in the life— vacation style!

8:45 AM— Awaken from slumber. Brush teeth and wash face.

9 AM— Go downstairs to make Gina’s cookie dough cereal for everyone. My cousin, aunt, and uncle loved it!

9:30 AM— Read blogs, answer comments, take care of college scheduling.

11 AM— Pray, do a couple rounds of 20 air squats, 20 pushups, and 20 sit-ups (for the 100’s challenge!).

11:30 AM— Stretch and 8 minute core tabata with the fit family!

12:15 PM— Lunch of leftovers. I failed to take a photo, but I had a salad with Chinese takeout leftovers on top, some fried rice, some leftover chips and salsa, and some perfectly ripe mango.

1 PM— More blog reading and dish washing.

2:30 PM— Make a quick grocery run to Publix with Amy.

3:15 PM— Eat a snack and make smoothies for the others.

3:30 PM— A couple more rounds for the 100’s challenge and reading.

4 PM— Power nap.

4:30 PM— Cousin walks in and wakes me up in time for me to shower and get ready for dinner.

6 PM— Arrive at Hemingway’s Restaurant in the Hyatt at Disney. We were celebrating my uncle’s and aunt’s wedding anniversary + my uncle’s birthday!

6:20-ish PM— Order and EAT! But first, we had the complimentary cheese biscuits and holyyyyyyyyy cow.

I miss them already. The butter on the side is a joke because these were so fluffy, flaky, buttery, and cheesy on their own. Oh mah goodness.

Three of the four adults ordered the prix fixe, which came with appetizer, entree, and dessert. We all shared bites of each other’s dishes too.

10 out o’ 10. This was one of the best meals I’ve had on this vacation! It was the cheese biscuits. It really was.

7:30 PM— Color. It’s a soothing activity.

8 PM— Roll Walk out into the garden and pool area of the Hyatt resort. It’s gorgeous!

8:30 PM— Make a quick drive over to Disney’s Boardwalk. Walk/digest/take pictures/limp because I wore super flat flip flops.

10 PM— Head home.

10:45 PM— Make my family and myself some overnight oats! I hope they like them, despite how scary they look in the morning. It’s what’s on the inside that counts 😀

11:30 PM— Start typing up this post while listening to Tori Kelly music.

12:30 AM— Get ready for bed and do the last set of exercises to complete the 100’s!

That, my friends, is the slow and laid-back lifestyle at the moment. College is going to be a blast when all this turns upside down and inside out!! o.o

WIAW: A Poem

Every Wednesday there’s this fun party

Some people call it WIAW (wee-aw), because it’s “What I Ate Wednesday,”

But since I’m such a huge a rebel, I’m showing what I ate on Monday.

Just like Maria, we’ll start from the very beginning, a very good place to start.

Cookie dough cereal with bananas and sunflower seed butter; adding blueberries was also quite smart.

I believe I also had half a nectarine,

But the photo is nowhere to be seen.

My midday meal happened late in the afternoon,

Since I woke up super late and a normal lunchtime would be too soon.

So after some yoga and chores, I ate a delicious meal,

With simple ingredients, supah fresh, and supah real.

{Except the ketchup I added to the eggs afterwards.}

A monster spring mix salad, in a bowl the size of my head,

And a toasty wheat roll with avocado and perfect scrambled eggs.

Since I always need cheese in life, I also had some brie

Atop my favorite crackers, Wheat Thins, slightly sweet and so crispy.

I had quite a few— too many to count

Later on, the same thing happened with these peanuts

I had three times this amount.

I took a walk and visited Daliza

Because I always like to see her (say that in a British accent so it rhymes with Daliza).

Despite a late lunch and lots of snacking,

I was hungry for dinner pretty early, and my food’s flavor was not lacking.

I had leftover pasta salad with extra parmesan cheese

Plus a couple ravioli Mom cooked up, which made me quite pleased.

I used to be afraid of all these carbohydrates. I thought it would make me fat in my sleep.

How foolish that conception was, for without pasta today, I would weep.

Some veggies were thrown in there for nutrients and fun

After going on a lovely evening walk with mom and dad,

I was ready for a sweet treat that’s tasty and rad

It was peanut butter banana soft serve, cool and creamy.

It’s incredibly easy to make, and it always tastes so dreamy.

I ate it with a side of Greek yogurt, because would you expect anything else?

It added a lovely tanginess, plus some extra protein for myself.

Since I’m basically nocturnal and I stay up pretty late,

I needed a little something to satisfy and satiate.

Of course, I turned to a trusty ol’ classic that never fails me:

Dried figs and Greek yogurt, the best snack that ever could be.

Fun fact: I won a national pro-life poetry contest in 8th grade (those skills were not reflected here today…), so I got to go to Washington D.C. to be honored for it. I met Dr. Alveda King, who is Martin Luther King Jr.’s niece!
