Recent Fun Facts

1) I turned 22 last Thursday.

This past year being 21 was probably the most difficult year of my life, academically, spiritually, and emotionally. Makes me both terrified and AMPED for 22!!! I am grateful for this beautiful life. Thank you to everyone who wished me a happy birthday through text, Facebook, Instagram comment, in person, or over the phone!

2) I have needed someone to roll me home after dinner this whole weekend. Figuratively, that is. But it would have been nice hilarious to have someone actually do that for me.

My family and I went to Montreal this past weekend for my friend Monica’s graduation from McGill University, and we went all out with the food. Poutine, hand-pulled noodles, Montreal bagels, excessively expensive sushi… It was delightful and indulgent to say the least. But the main star of the show was this gal!! We are so proud of her.

Rachel also took me out in Boston the night before my birthday to a place called Alden and Harlow, where we got the “Secret Burger” (a food bucket list item of ours!), among other delicious fare. The Secret Burger has a crispy freaking CHEESE DISK under the top bun. Good g r i e f.

3) I tried three weeks of a delivery meal service (the ones where the company sends you all the ingredients + recipe instructions and you make it yourself). One week of Hello Fresh for a free trial from my brother’s girlfriend, Elaine. One week of Hello Fresh that I paid for because I forgot to cancel the subscription after the free trial (*rolls eyes at self*). One week of Plated for a free trial from my friend Christie.

I typically would not buy these meal services for myself because your girl cannot afford that, but it was a blast getting to try it! It was fun exploring new recipes and using cooking techniques that I never would have tried on my own. It’s even more fun cooking and sharing the meals with another person. I recommend trying it at least once (i.e. asking a friend who subscribes for a free code hehe).

There was not a recipe from either company that I didn’t like! It’s great that each recipe also takes less than an hour to cook. “Hangry” prevention is key.

4) I have not been sleeping enough despite having no work to do since finals ended. I am craving routine again. Work starts next week!

5) I have not done a workout more than 45 minutes in the past year it seems. That will need to change as my friend Ben and I are doing another Spartan Race in August, except this time it’s a Spartan Super (10-ish miles) instead of a Spartan Sprint (5 miles), which is what we did last year, and even that wiped me out. HAHA oh my word, I have zero endurance right now.

6) I peed while on the Tappan Zee Bridge.

…Because I was on a coach bus that had a bathroom on it 🙂 Did I freak you out??

7) I kind of want to do another vlog like this one (“half a week in the life”) from last year. That was so fun to make! A little bit of an unnecessary time sucker, but hey, #summer.

8) My talented friend John (← check out his portfolio!) took some fun graduation photos for me and my friends. These people make me so happy.

9) I am newly obsessed with Sean Lew and Kaycee Rice, two incredibly talented nugget dancers who know more about life at the age of 15/16 than I do.

Hits my soul pretty deep and makes me want to be a better person, to be honest.

10) I made a friend over the age of 80 yesterday, and she made me cry with her sweet and beautiful words of faith, hope, and love. What a gift.

Shimmying in Charlotte + Recent Eats

On top of my titles as selfie queen, peanut butter lover, and daughter of God, add saxophone enthusiast.

Not because I can play the saxophone by any stretch of the imagination, but because I went to the MOST FUN jazz sax concert in Charlotte, NC this weekend with my dear friend Lauren and her awesome parents.

Going to NC for 24 hours for a saxophone concert is one of the most random things I’ve ever done, but that’s what I love about the whole thing. There’s a saxophonist named Gerald Albright who Lauren and I talk about all the time, even though we only really knew one of his songs (“Slam Dunk” – highly recommend if you want a good time).

Lauren’s parents had an extra ticket and very generously invited me down to hang out with them and watch the concert. And BOY did we have a blast!

Gerald was ridiculously amazing, even more so than I was expecting. The other saxophone star above was Kirk Whalum, who solo’d in Whitney Houston’s song, “I Will Always Love You” (casual..maybe you’ve heard it) and played for her for almost ten years. WILD.

There was also some dancing and soul trains involved during the concert, and we were all loving it. Even if Lauren and I were likely the only ones under the age of 35 there. We shimmied our way through the concert (and the whole weekend, honestly).

The best part of the weekend was just spending time with Lauren and her parents. They are the most beautiful family. They also know to take a couple Boston girls to Chick-Fil-A immediately upon arrival in NC.

A milestone, you could say. It was perfect.

Lauren’s mom also brewed some delicious iced tea at home that we sipped as we chatted in their living room. I rather enjoy the simple things in life.

Before the concert on Saturday night, we went to dinner at The King’s Kitchen, which I would describe as an upscale Southern restaurant. The food was utterly delicious, AND the proceeds go towards feeding the hungry and towards life skills development programs.

I got the pot roast, which came with three sides and either corn bread or a biscuit. I went with mac and cheese, green beans, collards, and a biscuit (you know I love corn bread, but when the waiter suggests the biscuit, you go for the biscuit – a good move).

The show was about three hours long, so afterwards, we made one last pit stop at Amelie’s French Bakery for near-midnight dessert. We split a lavender lemon cake, chocolate ganache cake, vanilla eclair, and raspberry lemon tart between the four of us.

I think the raspberry lemon tart got the best vote all around!

On Sunday morning, I made them avocado egg toast because it is a) a joy for me to cook breakfast for people; b) necessary for every person to try avocado egg toast. I had peanut butter honey toast because they bought natural peanut butter for me *happy crying eyes*.

After breakfast, we headed to Mass and then had a light lunch at Chopt, ” the creative salad company.”

I already miss Lauren and her parents!! Thank you all so much again for your hospitality, generosity and love ♥︎ It was such a fun weekend.

My friends and I have still been using up our Groupon classes at The Ring. I will be so sad when it’s over. I LOVE BOXING.

I cooked fava beans for the first time ever a couple weeks ago. They remind me of edamame!

My girl Elayne invited me to go to spin class with her at the HandleBar a couple weeks ago (I’m so behind with this recap), and as always with spin, the class kicked my butt! But the instructor was awesome and so fun.

Two Fridays ago, my friends Justin and Kevin and I went to eat at Pho Countryside as our pre-exam studying treat. It keeps us going.

Kevin and I shared apple pie flavor with granola, but I am convinced they actually made us pineapple flavor. It was great regardless.

Some more of my beloved Asian friends invited me to join them for Kimbap on a different day. It’s basically like extra large sushi rolls with lots of yum stuff like bulgogi meat, seasoned veggies, egg, and spam if ya fancy. It was so tasty. I have such generous people in my life, my goodness!!

I think I followed up that smoothie with these scrambled eggs shortly after. Just cuz I was extra hungry. I forget how delicious simple scrambled eggs with ketchup is!

I had whole wheat three cheese tortellini with sun-dried tomato pesto for a couple nights. This night I decided to put the leftovers over some greens.

I’ve still been eating a lot of sandwiches for lunch just about every day!

So I was at Target one day and needed to buy more bread for my sandwich lifestyle. I usually get the Harvest Wheat loaf for $1.99 at Trader Joe’s, so I tried to find an equivalent at Target.

This one looked fine enough. When I got home, I decided to look at the ingredients (since the TJ’s one has a short and sweet list and I wanted to compare). I found…

My first instinct was, “Aw man. I wish I could return this. HFCS is gross.” But then I thought, “Will I die? No. This is food. This is fine. It is bread. I will enjoy this bread and be grateful for it.” Do I want to buy this bread every week? Nah. But my life will not be a spiraling pit of doom if I have this bread for lunch every day for a couple weeks.

Last Sunday we went to Toscanini’s for ice cream Sunday! This is my favorite ice cream place in Boston. Listen to these flavors: thin mint (amazing) + matcha cookies ‘n’ cream cheesecake (yes, that’s one flavor and yes, it was delicious).

On Friday night, a bunch of us celebrated our girl Zoe’s 21st birthday! She was abroad this summer and visited Boston to celebrate with us this weekend. WOOHOO!

The top three things from your weekend!

I Ate a Whole Humble Pie This Week!

Not just a slice. Like, God pie’d me in the face with the whole humble pie.

I’ve been home for only five days, and I feel like I have learned many humbling lessons. Let’s just say: If you ask God to humble you and teach you how to love others more deeply, He WILL. Not always in the way you expect/prefer, but He will.

Without boring you too much with all lessons I learned, I will share just one slice of this humble pie, which is my hip pain that I’ve been complaining about this past week. After consulting two physical therapists, we have concluded that it is very likely that I have a labral tear, which means I will not be able to run the Spartan Race in two weeks. I’m kinda crushed, but I am thankful for loving friends and family and the ability to still walk and move.

Time to get reacquainted with lots of yoga and Pilates!

Humble pie isn’t the only thing I ate at home (thankfully). There have been two birthday celebrations and much-needed family/friend time!

Thursday

Back in Boston, my day started with green banana silver dollar pancakes. Because I had time…

…or so I thought. Until I left way too late for the bus station FOR NO GOOD REASON AT ALL and ended up having to run for the bus. I felt like such a dummy for leaving so late and almost missing my bus. I am often late to things, but this really woke me up. #humbled.

Thanks be to God, I juuuuuuuust made the bus and arrived to New York that night. My family welcomed me back with a belated birthday dinner at my favorite Japanese restaurant!

Friday

I started the day with Lori and Michelle’s great 18 minute plank workout, followed by a hearty breakfast.

Saturday

Breakfast was small because there was a giant feast ahead!

Moves and grooves of the day included 45 minutes of YouTube yoga before we all got dressed up and headed to the Big Apple for Pop’s grand 50th birthday celebration! He wanted to go all out for his half-century on this planet, so we started with an uber fancy late lunch at Jean-Georges, a Michelin Star restaurant located in Columbus Circle. Ooooooooo la laaaaa.

After we took some photos outside, we stepped into the restaurant for our 2:15pm reservation.

Pop wanted to do the spring tasting menu, which the waiter requested the whole table do. The birthday boy had spoken, so we went with the fixed spring tasting menu. It did not disappoint!

Bread basket: I went with a slice of the Swedish rye (smeared with butter), which was very textured and flavorful!

Amuse bouche: sesame-crusted asparagus with yuzu sabayon + beet-cured salmon sashimi with chili pepper over sunflower seeds and yogurt + warm herbal tea. Everything on the plate was delicious on its own, and the herbal tea was more like broth, but very good!

Course one: softly poached organic egg, caviar, whipped yogurt, herbs + buttered brioche stick for stirring and dipping. This was my favorite dish of the whole meal! That buttered bread stick with the soft egg and perfectly salty caviar — so unique and incredible.

Course two: Madai sashimi, pastel radishes, nasturtium vinaigrette. This was very zesty and similar to ceviche. Refreshing and pretty to look at!

Course three: warm green asparagus, sautéed sorel mushrooms, sherry vinaigrette. These were some of the best vegetables ever. Those mushrooms were so flavorful and meaty!

Course four: slowly cooked bass, crunchy oat tuile, herbal lime dressing. Melt-in-your-mouth fish with great tangy dressing and some sort of pea puree. The crunchy oat tuile was so fun too!

Course five: rack of lamb crusted with herbs, fresh chickpea puree, carrots, and aleppo pepper sauce. The best lamb I’ve ever eaten. The aleppo pepper sauce went so well with the meat, and everything on the plate just WORKED.

Course six: strawberry gelée, frozen basil and vanilla morsels, crunchy tapioca pearls, strawberries. Insanely interesting. It was like the most sophisticated version of strawberry jello with dip ‘n’ dots you could ever imagine. I wouldn’t choose this dessert myself, but it was fun to eat and pretty tasty!

Bonus dessert part two: homemade vanilla bean marshmallows, orange liqueur jelly, lemon curd-filled chocolates, basil chocolates, sesame caramels, chocolate liqueur-filled chocolate balls. They cut the marshmallows table side, which was the coolest. And all the chocolates minus the orange jellies were so interesting in a good way!

Utterly STUFFED. The food at Jean-Georges was ridiculously creative and well done, and the service was top-notch. Thank you, Madre and Pop, for letting us join in on this spectacular food experience!

 …and then walked over to Mass at St. Paul the Apostle Church, which is beautiful.

Following Mass, we had another appointment at Minskoff Theater for the Broadway musical, The Lion King! We had heard rave reviews about it basically since we moved to New York, and this weekend was finally our time to see it.

The show is really unlike any other Broadway musical I’ve ever watched. The characters are pulled off with ingenious costumes, humor and fantastic visual effects. And the singing and dancing is marvelous!

Highly recommend 🙂 Such a heartwarming classic brought to life in an imaginative way.

Ben and I had a (literal) midnight snack at home and then we all hit the hay. What a wonderful day.

Sunday

Pop’s official 50th birthday! I slept in and then started on lunch for the fam. I needed a little snack though, so I ate some leftover salmon on a bed of spinach to hold me over.

I grilled up some pancakes, roasted chicken drumsticks, and made Pop a chopped salad. Madre fried some plantains and helped me clean up a lot. What a team.

After digesting, I laid low before doing a strength workout in the basement:

4 rounds:

  • 20 bentover rows (15# KBs)
  • 20 thrusters (36#)
  • 20 weighted setups (15#)
  • 20 donkey kicks each leg

(Walking and running hurt, but squats don’t hurt at all.)

Later that night, I met my high school dance friend, Susie, in the city for dinner! We met up at Cava, which is basically a Mediterranean version of Chipotle, except much better IMO. They give you so many toppings!!

Susie recommended their juices, so we both got the strawberry mint lime. We tasted a bunch of them before deciding, and they were all so good!

RIGHT!? So much goodness! The company was the best part of the night though. It was so great catching up with Susie!

Monday

First thing in the morning, I dropped off Ben at the train station and then headed to the hospital I worked at last summer for one of my physical therapist friends to do a quick evaluation of my hip. She (along with my PT aunt) said that I probably have a labral tear. *sigh*

I went back home for breakfast and a nap. I have been SO tired this week at home.

The rest of my day involved Mass, some computer work and organization for school, and this Blogilates workout. I still want to move my joints and keep my muscles strong, but workouts are definitely very low impact and careful now.

At night, my high school friends Sam and Michael came over to hang out, which was so fun! We ordered pizza, and Madre (being the hospitable gem she is) fried up some egg rolls and TWO different kinds of pork.

A Single Lady’s Birthday

I had a wonderful single lady’s birthday yesterday! Not just in the sense that I don’t have a boyfriend, but 99% of my day was spent with just me, myself and I. But thanks to Facebook, email and FaceTime, I felt surrounded by my loved ones all day ♥︎

(I’m trying to type this post, but I’m so mesmerized by the above gif. THAT SYNCHRONIZATION.)

After breakfast and blogging yesterday, I answered some emails and messages and FaceTimed Madre before working out in the teeny exercise room in the apartment building. I did another strength-based, low-impact, 16-minute workout to be kind to my hip/thigh/knee. 4 rounds, 30 seconds work, 10 seconds rest:

I ate a multipart lunch after the workout. It included carrots and hummus, avocado egg toast, grapes, and popcorn. The bliss of an almost empty fridge (seriously, I am a big fan of all these foods).

There’s no way I’d rather eat this avocado egg toast than by myself. My face becomes a Jackson Pollock canvas for dripping egg yolk and bright red sriracha.

I then took a bus downtown to the St. Francis Chapel in the Prudential Center for confession, Mass, and prayer. I may have been by myself all day, but with God, we are never alone 🙂 I did also see three friends at Mass!

Carrot cake was on my mind all day, because as fun as it is to be able to drink legally now, there’s nothing like celebrating a birthday with good ol’ cake. I 100% searched “best carrot cake in Boston” earlier in the day to find that Flour Bakery had stellar reviews for their carrot cake. Luckily, it was only a 15 minute walk from the Prudential Center!

It wasn’t the cheapest piece of carrot cake ever, but it looked so cute and delicious. And it was the last piece left. And the internet said it was exceptional carrot cake. And it was my birthday.

Bag o’ cake in hand, I walked/bussed back home to find Christie waiting for me with half a dozen Georgetown Cupcakes! How sweet (no pun intended)!

Before digging into the plethora of cake, I had some necessary tasks to complete: shower, laundry, real dinner. Then it was time to EAT CAKE. Christie basically had a tasting party of all the flavors.

The carrot cake from Flour is amazing. It was my favorite cake of the night. It has raisins and walnuts (how I like it), it’s moist (not sorry) and dense, and the cream cheese frosting is perfect. I’d say it’s comparable to Lloyd’s carrot cake from NYC!

Reviews from top left:

  • Peanut Butter Fudge: YUM. Not an overwhelming flavor of either chocolate or peanut butter. Perfectly balanced and delicious. Second favorite.
  • “Vanilla Butterfly Surprise”: Perhaps intended for five-year-olds OR named by a five-year-old. Very tasty but we could not figure out for the life of us what exactly the flavor was. Vanilla funfetti but distinctly toasty. Brown butter? Sugar cookie? Toasted marshmallow? Popcorn? Fifth favorite.
  • Earl Grey: Earl grey flavor is definitely present but also light and pleasant. Third favorite of the night.
  • Raspberry Swirl Cheesecake: Raspberry cheesecake with cream cheese frosting on top. I’d be happy with just the cheesecake, but all of it together was wonderful. Fourth favorite.
  • “Purple Rose”: Just a vanilla cupcake, but well-executed. Sixth favorite, but it was still a great cupcake.

Now we have about 50% of everything left for snacking 🙂 Thank you so much again for this delicious treat, Christie!

An overall lovely day. Everyone’s birthday wishes also made my heart so full.

I’m going back to New York today for a week! It’ll be good to be home with the fam and to see some old friends!

Firsts

Today I’m celebrating 21 years of life, legal consumption of alcohol in the United States, aaaaand the Visitation of the Blessed Virgin Mary!

Besides my first legal drink in the US though, this weekend has been filled with many firsts.

First time…

…listening to Harry Styles’ new album. I love his song, “Sweet Creature”!

…being seriously concerned that I could need hip surgery. When I was walking in pain yesterday, I thought I could very well have a labral tear (which would be pretty bad), but the more I moved, the more I ruled that out. I’m going to guess that I just strained some inner thigh muscles, but I’ll report back after a few more days of rest.

…doing a workout in my summer apartment. I made it low impact for my legs + for the downstairs neighbors.

I am a big fan of White Mountain Creamery now. Not a fan that it’s filled with Boston College pride (Boston University’s arch nemesis), but that can be overlooked when it comes to friggin’ good ice cream.

…watching John Mulaney standup comedy and Zootopia. I really liked both!

…showering in the gym. I’ve been going to the campus gym for three years now, and I’ve never showered in the locker rooms. Since I live kinda far from campus now, I can’t just go home and shower in a snap, so I packed a huge duffel bag to carry around all day and finally showered at the gym.

this has nothing to do with my gym shower, but this is what I ate yesterday morning — Kylie’s banana pudding for breakfast

…handling cadavers. For our first gross anatomy teaching assistant meeting yesterday, we had to take care of the cadavers a little bit, and it was quite an adventure! Fluids. Fluids everywhere.

…eating tapas in Boston. For my birthday celebration, my friends joined me at Barcelona (the restaurant, not the Spanish city) for tapas and sangria. The tapas were ON POINT. Perfect for sharing with a big group!

My favorites were the beef empanadas, croquetas (fried balls of ham and melty cheese WOW), and spiced spinach and chickpeas.

…drinking [almost] legally! Ben apparently told the waitress to bring me a celebratory drink at midnight, but she brought it at 11pm without carding me, soooo I just drank it before my official birthday. Thus, turning 21 at midnight was rather anticlimactic, but it was still fun!

I drank ~1/3 of the sparkling wine. Me: “Alcohol makes me too full. I’d rather just have room for more tapas.”

…drinking white sangria. We ordered a pitcher for the table after we finished our tapas, and holy smokes this was the best alcoholic beverage I’ve ever consumed (I’ve drunk legally in Canada and Ireland before)! I don’t love alcohol in most forms, but this was delicious. The hint of pineapple perhaps?

…taking a shot of brandy. Ben, Casey, Lauren and I had a short, low-key after party at Ben’s place, during which we grooved, ate cookie dough and each took one brandy shot before going home.

Immediately after, I said, “HATE THAT.”

I’m happy to report that I remember absolutely everything that happened last night. Thank you so much to my friends who came out late on a Tuesday night to celebrate with me! ♥︎

…making a smoothie in a Ninja blender. This morning (read: a couple hours ago at 11 am), I blended an overnight oat smoothie in Christie’s huge Ninja blender. What a powerful machine!
