Three more days of classes and then we’re free!…
…To study for finals!!! And then we’ll really be free.
Statistics may or may not be making me constantly angry, but Boston University offers things like puppy therapy to keep us light-hearted and believing that there is still happiness in the world (so melodramatic).
This weekend has thankfully been a fine mix of work and play— essential for sanity, I’d say.
At the gym and on a dinner date with my fellow banana, Christine (yellow on the outside, white on the inside). Get it? 😀
I also went out to my friend’s a cappella concert as well as a partayyyy on Saturday night. There were red Solo cups filled with a clear beverage…

Oh my goodness, the a cappella concert was spectacular! I’m a huge fan of a cappella groups, and this was my first one I attended at Boston University. They made my jaw drop several times during their performance because I was just in awe of their talent! I want moreeeeee.
As for the party, it was a fancy mixer for Catholic students from Boston University, MIT, and Harvard. My friends and I had a blast dressing up for the first time this semester, and we owe all our thanks to my roommate. She literally did our hair in 20 minutes flat, and we all looked ready for the red carpet. Girl doesn’t mess around!
I’m the “mom” of the group apparently. I told my friend to make sure she ate something before leaving the dorm and I carried a huge purse to fit our belongings in it.
The party was crowded but very fun! I was often the awkward person standing in the center of the room looking for people to talk to, but it was all good. Let the people come to YOU, right?
Just kidding, I still had to every-so-subtly slip myself into little circles of people.
In addition to the fun stuff, I did the obligatory homework and studying, and I worked on Saturday. Remember when I made my “bosses” (the lovely couple for whom I work) steak for the first time ever and I thought I ruined everything by overcooking it? Well, they asked me to make steak for them again, so I guess they really did like it? Whatever happened, I think I nailed a medium rare steak this time.
I also made them tuna salad again, and I have the recipe for you fellow tuna salad lovers!
Alison’s Terrific and Tasty Tuna Salad
- 3 5-oz. cans no salt, water-packed white albacore tuna
- ⅓ c. light mayo
- 1 tsp. dijon mustard
- 1 tsp. whole grain mustard
- 1 tbsp. honey
- ¼ tsp. smoked paprika
- 2 tbsp. finely chopped fresh dill
- half a medium onion, diced
- ¼-⅓ c. chopped carrots
- ¼ c. finely diced (reduced-salt) green olives
- freshly cracked black pepper to taste
Flake all the tuna out of the cans into a large bowl. Add the next six ingredients and mix well. Add the rest of the ingredients and mix altogether. Smack the tuna salad on some crackers or toast or just eat it straight up if you fancy that.
When I explained this recipe to my mother, she was totally weirded out. I get that it’s a slightly strange combination of ingredients, but it’s darn tasty! It came together as a result of whatever my bosses had in their fridge/pantry. I don’t even like raw onions or olives usually, but they just work in this tuna salad. Have some breath mints or gum on hand for afterwards though.

Eeeee this tuna salad sounds SO similar to mine 😀 ; the carrots and the dill are musts for me..as are chopped plum tomatoes. And I usually roll with a mashed avocado but I need to give it a try with the mayo and honey(!) . I actually go to town dunking in roasted potato wedges – so good!

Tomatoes?! Now THAT is something new to me! But that’s such a great idea to use avocado in place of mayo AND to dip roasted potatoes in there. Mmm.
That recipe sounds great I will have to give it a try. I usually mix some salsa or mustard into my tuna as well. I noticed you had a the TJ’s dijon mustard in the pic (it is so good isn’t it). I recently tried their new 4 pack of dijon mustard which is the bomb! There are 4 different flavours. The black current one is so good. I highly recommend it if you are a dijon and TJ’s fan 🙂
I used to hate mustard, but I totally dig the zesty flavor it adds to so many foods. That mustard pack from TJ’s sounds awesome! Thanks for recommending it!

Good call on the a cappella groups. I never paid much attention to them – shame on me – until attending a press conference for work recently. Are there any groups you’d recommend listening to online?

Oooooo when I make this tuna salad for myself, I’m definitely adding Sriracha. That is the condiment of the gods.
Girl, don’t even get me started on statistics!! That was my cap stone and somehow I use it in my career at least twice a week. Bleurgh!! I LOVE tuna salad. Especially tuna salad meets meatloaf. Just add an egg or whites and bake, so yum. This weekend I am flying home for my ASU graduation and seeing my family and friends. ❤

Canned tuna is super handy and versatile I find! It’s important to get good quality tuna though. I like Trader Joe’s brand!
