There has been a lot of sugar on the blog recently.
I mean, Monday’s post consisted of cheesecake, cookie dough, and ice cream. Although I have indeed been eating more sugar than I would at home, I’m cool with it because there is still balance. I haven’t shared much of the food I’ve been eating besides my desserts, so that’s exactly what I want to do today!
Since I have accumulated way too many food photos on my phone, I’m just going to share my favorite meals I’ve recently eaten. There have fortunately been many great meals, so I had to be pretty selective!
Favorite Breakfasts
scrambled eggs with ketchup + oatmeal with pb, banana, and honey
egg white and veggie omelet with sriracha + corn muffin + pear
egg and cheese on whole wheat English muffin + my classic cottage cheese concoction (cottage cheese, strawberry yogurt, banana, and pb)
whole wheat apple pancakes with peanut butter + scrambled eggs with sriracha + glass o’ milk (I didn’t eat the apple…it’s still in my fridge)
whole wheat French toast with honey and butter + the classic concoction
Favorite Snacks
Thanks for bringing these, madre 🙂
Wheat Thins with unsweetened/unsalted sunflower seed butter. MMMM.
Honeycrisp apples. Also thanks to madre.
frozen bananas (so much better than non-frozen)
whole wheat oatmeal cookies from my aunt’s care package
Favorite Lunches
vegan sloppy joe + sweet potatoes
baked fish with salsa + potatoes + peas + salad
butternut squash soup with wonton crisps + salad + whole wheat wrap with roast beef, turkey, provolone, veggies, and honey mustard
black bean burger on a whole wheat bun + veggies
Favorite Dinners
beef and veggie pita + sweet potato fries!!! happy day.
chicken parm with whole wheat pasta + steamed squash
turkey meatloaf + mashed potatoes + veggies
The thing that surprises me most about my eats lately is the addition of savory foods to my breakfasts. I used to never eat savory foods for breakfast unless it was absolutely necessary. Sweet breakfasts still have my heart, but I’ve been diggin’ the eggs with spicy sriracha! Gets the blood pumping a little more in the morning. 😉
Also, whenever there is meatloaf in the dining hall, I have to get it. I’m that person that loves loaf o’ meat. The best part is that the meatloaf at our dining halls is usually “Sargent Choice”, which is the healthy seal of approval here at Boston University. I use that to justify my choice to always get it when it’s available.
Not all the food here is squeaky “clean”, but I prefer it that way. I can almost feel my brain (and soul) thanking me for feeding it satisfying, substantial foods. I’m not quite sure how I used to survive on wimpy salads in the past. I do believe times have changed for the better!
I hope you all have a wonderful Wednesday! Eat good for ya food and good to ya food 🙂
