WIAW: The Big Green Salad

Hello!

We’re back to a house of three since my cousins left yesterday. That will become a house of two in just 12 days when I leave for Boston. !!!!!

But for now, I’m just embracing the time I have with my family and friends, as well as a big fridge and kitchen in which I can make whatever I want. I’m wondering if my roommate will be okay with me keeping overnight oats in our micro-fridge (microwave + fridge). She might want to abandon me and file a complaint if I don’t warn her of what it is exactly.

Anyway, here’s what I’ve been eating at home this past week!

Big Greek yogurt mess with chia, cinnamon, nutmeg, sliced banana, leftover waffles, and almond butter

Other than this breakfast, I’ve been having the usual: overnight oats, more peach oatmeal smoothies, and cookie dough cereal. Nothin’ new to see!

My snacks have been on the sweeter side this week. Amanda’s recipes have been my kryptonite evidently…

I’ve found that the quickest way for me to get my veggie intake for lunch or dinner is with a big, simple salad. I put double the serving size of greens into a giant bowl and toss it with olive oil, freshly cracked black pepper, and honey. My family calls it the “Alison salad”, but I call it being too lazy to be creative.

Salad + rice and curry with shrimp, bamboo shoots, and mushrooms

Apparently, I like my salads on the left, so that’s where it shall be forever and always.

I’ve had some meals without the “Alison salad” too:

Onion and garlic English muffin-bagel with avocado, smoked salmon, and pepper

That last meal was my favorite. Avocado + smoked salmon go together like peanut butter + jelly. The fancy English muffin made it THAT much better also. Do you think I’ll be the most popular person on my dorm floor if I make this for everyone? It’ll be my ice breaker!

As for desserts, I’ve been having lots of peanut butter cookie banana chia pudding and coconut banana bread with a glass o’ milk. Gahhhhh.

My orientation student leader told us she met people by offering them trail mix. Sounds like my kinda party.

  1. Uhm yes, I’d be your best friend if you hand me an english muffin topped with the amazing combo that is smoked salmon and avo. If you put it on a butter croissant: I’ll be your lifelong pal. Seriously, do that though.
    Your panini’s have me hypnotized woman!
    Oh and hands down, my favorite method of consuming greens is through Amanda’s chocolate mousse smoothie 😀 .

  2. I’ve been slacking on the veggies -big time- lately. In fact, I think the only ones I had yesterday were baby carrots 😆 I used to be so good about getting in a tonne of veggies, but to be honest… my stomach is kind of liking this more moderate approach so I think I’ll stick to it for the time being. And you know what they say… the way to [anyone’s] heart is through their stomach 😀

  3. I feel like my summer is flying by, but hearing that you’re going to school in 12 days makes me realize that it’s probably happening way faster for you! Didn’t you just graduate?! It’s too bad I’m going to Boston this weekend! Guess I’ll have to wait until Christmas to see ya 😉 Oh and easy veggies are definitely in salad or smoothie form. I always throw in at least 2 cups of spinach!

  5. Food is always the best way to meet people and make friends! Try swatting up on microwave recipes (hello mug cake) – people’s minds will be blown! Ha!

    I love smoked salmon and love avocado – it’s my fav combo in a sushi roll!

    I can’t speak for your future roomie but if you made me anything I would love you forever!😉
    And I do the same thing (usually for lunch) I’ll have a big salad with a sandwich or something on the side (bc a girl can’t live on salads the fo sure) and this way I get my veggies in for the day and can’t enjoy the good stuff ..carbs😜

  7. Alright, so the first pic of that waffle was “black” because it wasn’t done loading and I actually felt my eyes get big when I saw a waffle jammed in the bottom of a jar….with PEANUT BUTTER!!!!!!!! I love that and you – day is made.

    Tuna, brie, spinach panini. I need a break from my usual grinner and think am going to ninja that meal idea next week. If permission is granted 😉

  8. That tuna, brie, spinach panini looks amazing! I need to start getting more creative with my sandwiches! I usually stick to the average grilled cheese or pb&j. However, you have me craving some nice meaty sandwiches! I am totally experiencing those same feelings. I am trying to savor every meal at home right now that comes out of our glorious, big fridge.

  9. ROASTED VEGGIES are the very very best in the entire world! Whole Foods in Boulder, CO made the BEST Brussels Sprouts on the face of the planet!!! I asked them for the recipe and tried to re-create it, but never could! 😦 Olive oil, garlic, lemon juice and salt… OH MAN, I would eat QUARTS and uh…… My roommate (b/c this was in college)… WOULD DIE FROM MY STENCH LMFAO!
