Behind the Scenes #18: Honey Mustard Dill Yogurt Sauce with Smoked Salmon

I’ve missed you!

I apologize for being MIA for the past couple of days, but I want to thank you all for your pep talks and congrats for my commitment to Boston University! I’m glad today’s Thursday because I get to play catch up in a random fashion though Amanda‘s ingenious Thinking Out Loud linkup 🙂

Thinking-Out-Loud

1. Colorful spring fruit is making me so happy. My mom made little containers of fruit salad yesterday— what an adorable woman. The fruit salad includes strawberries, raspberries, blueberries, kiwis, and pineapple. I ♥ the bounty of summer!

2. I am somehow able to almost finish a jar of nut butter right before every early morning AP Calc review session, and it’s absolutely perfect because that means I get to take overnight oats on the go. I no longer give a single dang if anyone judges me for carrying a jar of nut butter to school. Actually, I never cared.

3. I’ve been a little overzealous in trying to find a roommate for college. I’ve met a few friends through the BU Facebook page already, but I found one girl that I clicked with right away. We excitedly agreed to room together…but then I turned into the #1 A-Hole of the Year. I realized that I’m in a special program that requires me to live in a specific dorm hall, but my newfound roommate wouldn’t be able to live in that dorm hall with me. Yeah, I forgot to mention that minor detail.

I sorta wanted to punch myself in the face because I felt so bad, but we’re gonna try to work something out. Starting off this whole college thing with a BANG, Alison.

4. This dinner last night:

Smoked salmon on a whole wheat English muffin with honey mustard yogurt dill sauce + black grapes + broccoli

When I don’t have ripe avocados or cream cheese on hand, I love having this sauce with my smoked salmon:

Honey Mustard Dill Yogurt Sauce

  • 3 tbsp. Greek yogurt
  • 1 tbsp. spicy brown mustard
  • 1-2 tsp. honey
  • ½ tsp. dried dill

Mix it all up and dollop it on your toast and smoked salmon! Top it with a generous amount of cracked black pepper if you so fancy. I definitely fancied the black pepper.

4. Today we had a half day of school! I actually just got back from having lunch with my friends Je’lyn, her sister Jade, Jeannine, Veronica, and Sam. We went to a snazzy cafe/bakery/market called Iron Tomato, and I got a loaded monster salad.

It had mixed greens, chickpea salad, grilled veggies, artichokes, beets, grilled chicken, goat cheese, and honey mustard dressing.

Whenever there’s a salad bar, I go cuh-razy, which can sometimes defeat the purpose of a light meal, but guatever. And then I obviously had to get gelato, because you need to balance out all the veggies. 😉

5. It’s a beautiful day today, so I think I’m gonna skip the gym and do some exercise outside instead!

6. I started listening to the radio in the car again since Lent ended, and I did not miss any good music. Royals and Team by Lorde are still playing, Kesha and Pitbull are still yelling Timber, and Let Her Go by Passenger still annoys me.

7. You wanna know something ironic? I got a t-shirt or sweater from EVERY one of my top colleges except Boston University. Of course. If they don’t send me one in the mail, I’ll order one online. I wonder if they have anything as fantastic as those Maryland leggings.

8. Speaking of BU again, I have an astonishingly similar college decision story as my brother, Ben, when he was choosing his college three years ago. You see, he was in between Johns Hopkins (in Baltimore, Maryland) and Northeastern (in Boston, Massachusetts). He was 90% sure he was going to Johns Hopkins in MD and only 10% was left for Northeastern, so he initially did not think he had to visit Northeastern. But then our wise mother took him to visit it anyway “just in case.” Sound familiar?? After the visit, his probabilities of going to either JH or Northeastern changed to 50/50, and lo and behold, he ended up at Northeastern in BOSTON.

I promise I didn’t choose BU just to follow his story. God just thought it would be funny if things worked out that way 😉

  1. Can we still be friends if I admit that I’m not a huge fan of salmon? Like… at all? I don’t like fish in general. Eep! I know. I tried… I really did. But the smell just throws me off. I’m down with gelato, though 😀 As for salads, mine HAVE to have avocado and grilled chicken. Must, must, must. Also, some feta cheese doesn’t hurt either. Aaaand I can’t wait until more fresh fruit starts going on sale here. Melon belly here I come!

  2. Gosh I just love all your posts! And I always find myself 100%postive we could be bffs (that’s sounds really creepy but you get me right?!💁)
    Not a fan of smoked salmon😖
    But I’m like you and go a little crazy making salads! Love beans and deli meats lots of veggies and sometimes cheese! And I love having some sort of chewy bread along with it to soak up all the dressing or sauce. Carbs😍 lol

    And I’m loving JTs new one “it’s not a bad thing” geeze no smoked salmon AND JT that’s like a double whammy against me 🙈🙈🙈 lol

      Oh yes, I kinda wish I got some crunchy chip toppings, but I didn’t realize those were available until after my salad was made. 😦
      I love that song too! One of the few songs that I actually like to listen to on the radio.

  3. overnight oats = the besttt! maybe i just like them because it’s yet another excuse to eat copious amounts of nut butter 😉

    and CONGRATS on BU!! such an amazing school && i know you’ll love it there! doing a happy dance for ya ❤ and don't worry about the roomie situation, it'll all work out- even if you end up with someone random! one of my roomies ended up becoming one of my best friends here.

    my current favorite song is wild card by hunter hayes. that boy will always manage to sing his way to my heart, haha.

    That SUCKS about the roomie situation but at the same time….sometimes people come across way different online than in person. I learnt the hard way lol!

    Lorde needs to get off my radio. OVER-PLAYED.

      • Lorde just cancelled all her shows until November because she’s been ordered to rest until then by doctors and her parents :s so no new songs for awhile! Even as a proud New Zealander (living in australia) I have to agree she is way over played. She even sent an email to all the radio stations in nz saying they should stop haha. Ps- new fan if yours and I loove your writing style. I look forward to reading your blog every day! I was reading back in your posts about your delayed puberty. If it’s not to personal- have you had an luck there? What would be the next step and when would doctors advise you take it? Ignore those questions if they’re too much 🙂

I’ve been following all the healthy food items you are having and am hoping your mom will fix something for me to try while she is visiting. I have a few tubs of Greek Yogurt in the Fridge….but that’all.

  6. I am still mourning the loss of summer fruits – as we move into winter it’s going to be all apples and bananas around here! (although you can never go wrong with bananas (; ) I have never gotten into the whole oats in a jar thing but you make me want to try it! I will report back how it goes! And I make a yogurt dressing so similar to yours all the time! I use a mix of greek yogurt, dijon mustard and honey – but I think it would be great with dill so I will have to try that.

  7. Awh bummer! It will be sad if the girl you hit off with so well can’t be your roomie..but I’m sure you’ll end up in a happy situation nonetheless 🙂 .
    Salmon is delish; one of my favorites and would be a staple if it didn’t cost me an arm and leg 😉 !
    I swear I’m off overnight oats for now..until I see yours! I’ve been throwing stove-top cooked oats or mashed butternut squash into my “not quite finished” nut butter jars.

    Rock the nut butter jar, girl, rock it!! I used to be self-conscious about stuff like that, but now my friends are completely used to it. They’re learning, haha!!

  11. Smoked Salmon is my favourite too…..I can live on it and with cream cheese and bagel, I can go for months! To pick your favourite items from a good salad bar is a dream.
