Good morning!
I hope you all had a good-spirited April Fools’ Day! Nothing much happened around here. The only thing some people (including myself) did in school was turn on our cell phone alarms for 2:23 PM, and then we left them in our lockers to make a commotion right before school ended. Apparently it caused a little bit of concern, since I guess it is alarming (literally) when all the lockers seem to come to life. It wasn’t anything groundbreaking though. After all, we’ve gotta save some juice for senior prank 😉
With the lack of posts all last week, I have not shown my recent eats! What a shame since I obviously love posting food pictures (*cough* Instagram). So naturally, I’m joining this week’s WIAW party to share what fueled me through my moves and grooves during Benefit Week!

In absolutely no particular order, here are some of the things I’ve been eating:
Breakfasts
Overnight oats in a mug
Overnight oats in a peanut butter jar. GAHHH. (Perfect for transporting to early morning AP Calc review.)
Overnight oats in an almond butter jar. Also taken to early AP Calc review. I’m sure people were judging, but guatever.
Gina’s cookie dough cereal with bananas and strawberries
Banana bread English muffin with nut butter, banana slices + glass o’ milk (haven’t had one of those in a while!)
Strawberry banana oats with a heavenly puddle of peanut butter.
Amanda’s oatmeal cookie dough smoothie (with spinach for green powahhh) + Greek yogurt for spoon dipping
Friday’s nut butter-less breakfast: Greek yogurt, strawberries, banana, chia, hemp, cinnamon, nutmeg, honey
Lunches
Whole wheat wrap with avocado, spinach, soft boiled egg, feta, and salsa added later. SO GOOD. I had another variation of this for dinner one night with two eggs and spicy brown mustard instead of salsa. I highly recommend this combo!
Crab cakes on Benefit day!
Chicken, cheese, spinach, spicy brown mustard sandwich on some weird-looking, but delicious, purple fruit/seed bread
Naked Juice samples at school!
Snacks
Cute cookies and goodies from the “Eloise at the Plaza”-themed dressing room
A crapton of white cheddar popcorn and animal crackers from our circus dressing room
I brought a Greek yogurt mess to dance almost every day last week. Included strawberries, banana slices, and nut butter.
Green tea frappuccino from Starbucks on Benefit day (Thanks to Susie and others for picking up 15 orders!)
I tried it! Carrots and almond butter— pretty darn tasty!
Greek yogurt with banana and pineapple. Loving the summery produce!
I’ve also been having lots of dried figs and Greek yogurt per usual. 😉
Dinners
Farro, spinach, grilled chicken
Multigrain pasta, spinach, soft-boiled egg
Grilled chicken, spinach, feta + avocado toast
Farro, spinach, ground turkey, avocado, sriracha
The best tomatoes I’ve ever eaten. Just wash ’em and eat. So fresh and flavorful!
Dinner with the family (Ben was home for a day!) on Sunday! Ben got Sambal chicken and seafood. The other three of us shared a huge Sushi for Two platter. We also had some spring rolls as appetizer. Mmmmm.
How’s THAT for a recent eats recap?! It’s a good thing I just ate dinner, because otherwise, I would be hangry right about now. 😉

Dude for being an absolutely busy bee, you’ve made a tonne of faceplant worthy meals..except those oats in a jar. We’d end up with a circular shape on our foreheads.
Wraps…everything. Ironically, they become too stuffed to eat with a hand. Guateva. Guatemala.
I would face plant those overnight oats if I could though. Confessions of a large-headed overnight oats lover.
Word to overstuffing. It’s a good thing I was eating my wrap by myself, because being civilized with a fork and knife isn’t any fun.
As there is a lot of good food! I am ready to eat all this… But I will need time 😀
Overnight oats are a must have every week in our house. Plus Avocado and Nut Butter make everything better (same with cheese) so I could pretty much eat everything on here haha
Those foods are definitely repeated regularly here too. So easy, nutritious, and tasty!
I’ve been off overnight oats in a jar for so long..but now you’ve sparked a craving! I think its the good layer of nut butter at the bottom..that’s my principal too 🙂 .
Avo and feta! I must do that soon! And girl..chicken on fruit bread!? That’s a tad exotic. One step closer to having applesauce muffins with your chicken right 😀 .

Ah wrap options are endless; favorites: cheese+ scrambled eggs+salsa, chicken+avo+chilli sauce, cheese+jam+scrambled eggs :p
Nut butter on the bottom is the only way to have OOs! And the bread wasn’t too sweet or anything. It just happened to have dried fruits in it! But yes…maybe the applesauce-chicken combo will follow soon 😉
I have yet to try the cheese, jam, scrambled eggs combo! I must do that!

Lately I’ve been eating broccoli and cauliflower like there’s no tomorrow!! And last night my mom made a cauliflower side dish with breadcrumbs that was amazing!
And I love me some wraps! Turkey, veggies, mustard, cheese, eggs, etc …I don’t discriminate on the inards😉

Ohh girl I’ve definitely missed you and your amazing eats! Even though it’s been way too long since I’ve had lunch and I’m kind of getting the munchies… Definitely time for a snack — a yogurt mess sounds all sorts of fab.
And I’m going to have to go ahead and say roasted kabocha is my veggie of choice. Been too long since I’ve had one and I’ve missed it!
I have yet to try kabocha STILL! I need to get on that, but now it’s spring and they’re out of season, darn it.
I’ve really got to stop reading your blogs in the morning when I am half awake and haven’t had a proper cup (or 2) of coffee. I get all goo-goo eyed at your food, my stomach grumbles, I am too sleepy to form words, so I end up coming back hours later to tell you to, SHARE YOUR FOOD WITH MEEEE. Or come to ASU or U of A and be my roomie so we can go all Top Chef in the kitchen. Yes? Yes.
But I won’t blame you for not picking ASU of U of A, considering they weren’t my university choices. I just got stuck with AZ when my mom decided to move after I graduated HS. I was originally destined for University of Washington. Anyways- totally off topic.
I truly tried to pick 1 or 2 of your meals to rant about, but girl….I want them all. Especially that sandwich. Sweet & savory madness right there.

You are too funny, Ashley! YES to going all Top Chef with you. Even though you would totally win, because I’m good at assembling food, but actually cooking can be a little shaky for me sometimes 😉

Gahhh I want everything! OOIAJ are my FAVE. That purple bread looks amazing. So jealous of your school having Naked juice samples. I love adding an egg to my pasta! Haha too many random thoughts!
The Naked juice sampling was a fun little treat. They were giving out T-shirts, pens, and lip balms too! It’s because there is a PepsiCo building right next to our school, and they’re trying to lure us students into some healthier choices…it seems to have worked 😉
