I’m typing this on Tuesday night, so I have no idea how well I’m going to sleep (or how well I did sleep, since it’s now Wednesday), but THANK YOU all for your warm, supportive comments on my insomnia post yesterday. I will forever be grateful for such kind and relatable friends (yes, you!). 🙂
I’m so over thinking about sleep, so let’s move on to more fun things, like food! I’m joining Jenn’s WIAW party per usual. Go check out her page to see more delicious eats! Today I’m showing you what I ate on Sunday— a quasi rest day. I’ll also squeeze in details of what I actually did in between my noshing:
Breakfast
Big bowl o’ Greek yogurt, banana slices, and pepita sunseed butter
~Teach Sunday school~
~Come home, type, and publish my Spill It Sunday post~
Lunch
Brown rice, coconut oil pan-roasted Brussels sprouts, sautéed beef and tomatoes
~Procrastinate by watching celebrity interviews online (Paul Walker and Catching Fire stuff…)~
~Homework~
Snack
Korean pear slices
~Finish homework~
~Probably some more music-listening procrastination in there~
~Do a couple rounds of a circuit workout before Mom and Dad come home with take-out from our favorite Thai place~
Dinner
Brown rice, ginger chicken
I also had some green curry chicken and drunken noodles
~Converse with the family~
Dessert
Green tea ice cream!
~Do other things and *try* to go to sleep~

I missed your post from yesterday (will have to check it out), but I see you mentioned insomnia. This is going to sound ridiculous but try singing your favorite childhood lullaby, or even counting down 100 sheeps lol

The green tea ice cream is super delicious. My aunt actually brought it over for us on Thanksgiving and the brand is maeda-en. I think it’s a Japanese brand, but you can find green tea ice cream at basically any Asian grocery store!
And the pepita sunseed butter is from a great online company: http://www.naturallynutty.com I definitely recommend their nut butters!
Faahhhhhhhhhh (Mulan) out. Those are some epic eats. I love the lunch- beef is so underestimated on the blog world but I love it 😉
Lately I have been obsessed with pancakes….okay well not obsessed but when trying to recreate a recipe, you end up with alot of duds = pancakes. All. the. time.
Ugh I love pancakes. I’ve had my fair share of weird-looking pancakes, but I eat them all anyway 🙂
I should eat more red meat! It definitely isn’t that common in the blog world.
